WARNING!! Do NOT open if this is a Down Day!!!

As some of you know I am the Asst. Manager at a Supper Club in Wisconsin. The menu items are a collaborative effort of the chefs in the kitchen and the Owner and I. The plated desserts are my pride and joy! I made atleast 6 different cake recipes and about 14 different frosting recipes before deciding on this recipe. Chocolate Cake with a Salted Carmel Frosting. Topped with BACON!!!

Definitely NOT DD material, and not for the weak of heart. I will post the recipe this weekend hopefully- I keep it at work. But I need your HELP!! I know we have a lot of creativity floating around here and I was hoping you could help me come up with the name for this dessert.




Mr. Piggy's Chocolate Cake was the first one DBF came up with... I'm at a loss.

Any ideas... bring 'em on!!

And yes I will share the recipe soon!

Thanks!! When I was putting it together it was a DD!! And I had to count 75 calories just in "taste testing"!!!

It took ALL of my willpower NOT to dig in!!

My favorite chocolate is the Vosges Mo's dark bacon bar-- dark chocolate, bacon, and sea salt. YUM

I opened this thread on a down day. I should be spanked.
I had something like this at the Sweetness Bake Shop & Cafe in Miami Restaurant -
chocolate cake, loaded with bacon, filled with salted caramel, topped with chocolate buttercream, drizzled with salted caramel. Can't wait until you post a recipe!! Can't think of a name right now other than OMG!

So, you know that naming your thread that way is just BEGGING us people on a DD to look at it! I had to! I was compelled!

That being said...it looks great! Nothing I ever make looks that professional...ever...I'm jealous!

I like your name! I think it is cute!

I like my desserts to have names that at least generally describe what it is. I find this especially true in cases where the desserts have peanuts in them, since I am allergic. If you will be putting a description on the menu, then don't worry about this, but lots of places just say the names. Nothing worse than ordering a dessert and having to not eat it...

Anyway, I brought this up because you might have a vegetarian get pissed because they didn't know that it had bacon crumbles on it (and they will like the option of getting it without them).

I can't think of a name though...I'm lame...

Maybe you thought of a name.... "Oh My God! Cake" Reminds me of a cake people used to bring in to work called "Better Than Sex" Cake...and it was...

I'm de-lurking just to comment on this - OMG! That looks tasty! I'm trying to figure out what to make for BF's birthday and I might have to make something like this! He can't do chocolate (headaches) but I might try a white cake with the salted caramel and bacon - I'm sure he'd love it! Yum..

I was hoping that something in the name would elude to what was in it... but on the other hand you can't really call it "chocolate cake with salted caramel frosting and bacon" just doesn't have the right "ring" to it!

We have a dessert tray that is in the front of the restaurant and then brought to each table at the end of the meal. The servers then go on to describe them. Right now we also have NY style cheesecake and Earthquake Cake.

I like the ideas so far! Keep 'em coming!

Ok.. so I stopped in to work today... here we go. And NO idea on the nutritional info...

Ingredients:
3/4 cup chocolate chips (would be better with a chocolate baking bar so it wouldn't be coated then- we don't have this on hand at the restaurant- not sure of the weight)
2 1/4 cup brown sugar
2 1/4 cup white sugar
3 3/4 cup flour
2 1/4 cup unsweetened cocoa
1 T Baking Soda
1 1/4tsp baking powder
1 3/4 tsp table salt
5 large eggs
1 1/8 cup oil
2 1/4 cup buttermilk (well shaken)
1 1/4 tsp vanilla
2 cups hot brewed coffee

Preheat oven to 300
grease pans and cover with parchment, grease parchment (light spray)


Start by chopping your chocolate and pour the 2 cups of hot coffee over to melt, stir till melted, set aside.
In a large bowl sift together both sugars, flour, cocoa, baking powder, baking soda and salt. I mix everything and then put in a metal strainer and "sift" in to another bowl- this helps the brown sugar to be evenly distributed.
IN a mixing bowl beat eggs for 3 minutes until thickened slightly
slowly add oil in a stream while mixing to the eggs, then the well shaken buttermilk, vanilla, and lastly the chocolate mixture.
Add the dry ingredients and mix thoroughly- do NOT over mix!!
divide the batter between 3 pans and bake for about 30-35 minutes (depending on ovens)


Salted Caramel Frosting

1 cup softened butter
4 cups packed brown sugar
2 1/2 tsp table salt
1 cup heavy cream
3/4 tsp vanilla
5 cups powdered sugar
1/2 cup butter cut in 8-10 pieces- softened and not melted

heat 1 cup butter and brown sugar in the pan, add salt
cook over medium heat until you see bubbles, stir and continue for about 1 min
Turn off heat and add vanilla.
Transfer mis to a mixing bowl and gradually add powdered sugar- 1 cup at a time.
when all has been added increase the speed to medium and beat for 5 minutes.
add butter pats one at a time till incorporated and then beat for an additional 2 minutes at the end.

ASSEMBLY
After baking the cake, must be COMPLETELY cool before you start the frosting! Once the frosting is set you will have to frost the cake immediately! The bacon must be ready ahead of time to top the cake or it won't "stick"
I cook the bacon extra crispy and soak as much of the grease out as I can!!

By the way this makes a TALL 10in cake!! 3-Layer!

The recipe will also make 2 9 by 13 cakes...
you could cut the recipe in half!
