Yeah, that comes to 1320. Going to have to come up with another 700 or so calories. Darn.
Okay, had a small sandwich of Italian cold cuts w/olive oil and vinegar on a roll for 500 cals and 1/2 cup of mint chip ice cream for dessert (200 cals).

This up day is over and out, and I am so ready for a dd tomorrow.

As for mac and cheese, my Mother in Law has this old cookbook from the 50's and they had many incarnations of this delicious dish. One was basically tomatoes, cheddar cheese, and cooked pasta - put all in the oven and bake. My mom used to make this skillet mac and cheese to use up leftover steak with velveeta and tomatoes. My sister and I did the same, but used tomato paste. If I made it today, I'd use real cheese, but I love the added tomato flavor and the meat - gives it something!
In our house, my mother used to make a dish she called "Gooey Noodles." Basically, she cooked wagon wheel pasta, drained it of most of the water, then added shredded Colby cheese until it was all melty, then added a small can or two of tomato sauce. Cheap and yummy! I make it at my house now...the two DSs love it served with grilled hots/hams.

That sounds good! I might have to make mac and cheese!
