Need more calories!

Hi all! It is 7:00pm and I still need 739 calories to reach my goal of 1954 for the day. Does anyone have any suggestions for something that would fill the bill, but keep my carbs very, very low? I've never had this problem before!!!

Hmmm, this sounds like a pleasant problem to have!

If you have cream and cocoa and some type of sweetener, you could make an indulgent hot chocolate? Add a bit of cinnamon and get some blood sugar stabilisation before bed.

Thanks for the suggestions Marla and Metqa. They both sound really good, and I've had nothing sweet today. Metqa, are the cc clouds just butter and cc? How much of each?

Oh Sorry! It's a ... A block of Cream Cheese or 8 oz and 1/2 cup of butter or one stick and 1/2 - 3/4 cup of sweetener to taste. I like to use 1/2 cup splenda and a splash of Caramel Syrup to bring out the flavor. You could just scoop them onto wax paper with a spoon, but I like to put them into a sandwich bag, and pipe them into little round mounds. I put them in the freezer to firm up a bit, but they are good soft or solid.

ETA: it makes 24 clouds of about 1/2 oz each. i use my digital scale with a plate on it to make sure they are about the same. 1/2 oz is actually a very big mound.

With Splenda powder it's 70 calories per cloud, 7g of fat, 1g protein and 0.25g carb

Oh good....some of my favorite ingredients! Can I use Ideal Sweetner, or Stevia? I don't have any Splenda.

Yeah, just use the equivalent to equal at least a half cup of sugar to start. I can't recall if they taste more sweet as they cool or less? I usually don't freeze the whole batch at once so you could chill some and taste it and if it's not sweet enough add more sugar.
At one time I would dip the frozen ones into Cocoa Bark to make a magic shell!

( I've said that about 5 times today, I need to stop talking about clouds! )

Thanks Pami and Metqa. I'm going to make some now. If I can get up to 1500 cals today, I will be happy, since my dd"s are 500 right now, and that will be 2/3 more. I will just have to work on it more, and try to get in 3 meals a day, instead of 2. And I've not snacked at all! Just filled up, and stayed that way....

Coconut oil bark is my fav too.

2Tbsp coconut oil (warm to melt)
1 1/2 tsp cocoa
10 drops of liquid stevia (to taste)

Mix and refrigerate to harden. I just leave it in the soup bowl I mixed it in, then when it's firm, run warm water over the bottom of the bowl to loosen it, and break it in chunks. 2Tbsp coc oil is 234 cals and 0 carbs.

I've also done 1 Tbsp coc oil and 1 Tbsp almond butter plus the cocoa and stevia and that is great too.

Or use SF flavored coffee syrups--I did raspberry with the chocolate, and oh, tdf!

Just made the CC Clouds, and have them in the freezer. I got 28 out of the batch, so figure 129 cals PER CLOUD! Gulp! Does that sound right? How many do you usually get out of a recipe? Maybe I made them too big??? Anyway, I licked the spoon, and they are delish! Thanks for the suggestion. Next time, I'll make some of the bark.

Wait, let me check my math!!

ETA: Okay, I dont' know what sweetener you used, but the calories for just the cream cheese and the butter, if you got 28 clouds from it, should only be 57Kcal per cloud

1605Kcal for 8oz of cream cheese and 1/2cup of butter total,plus any calories in the sweeteners you use, divided by your number of clouds.

I usually get between 24 and 28.

How do you make this? I know how to make clouds; unfortunately I hate them.
I made them one time 10+ years ago, when I started LCing, and have never
forgotten that experience. Passed the recipe on to untold numbers of others,
none of whom were as put off by them as I was. I'm still looking for that little
serving of something that's uber-high in calories that I would eat myself.

Aww, I'm sorry Pami. I found the touch of caramel really takes it up a notch from a butter nugget to a treat!

I've Never done Peanut Butter Bark but it looks like people are just subtituting natural peanut butter for the cocoa powder. I once used that Splenda For Coffee Flavors, Hazelnut packet to make a bark and it was great!

I imagine making PB bark and spreading in a pan and then pouring Cocoa bark over it. Hehehe! Kinda like the Xmas peppermint bark that comes in layers of white and chocolate...

This is basically how I do it, except usually I half it. I sometimes add unsweetened coconut flakes and PNB, depending on what flavor I want. I like it with or without chocolate when I put PNB in it. I always use Davincis SF syrup for the sweetener. I use a tupperware-type container that a cupcake paper fits exactly in and put it in the freezer. With the paper it doesn't stick and I can use the paper as a holder since it can be very oily.

Whoa! you get the davinci's to work without it separating. Must be the coconut flakes help with that, cause I get some awful looking separated bark when I add liquids to it. Haha.

Metqa, thank you for coming to my rescue on the math for the clouds. In my mind I was counting 1600 cals twice. So glad they are not as bad as I thought! I used Ideal sweetner and stevia sweetner mixed. Time to call it a night on the computer, and relax a little before bed....and have some clouds!
