The 36 hour refers to the time from which you stop eating on your UD, say, 8pm, until you first starting eating on your next UD...8am two days later. That's where you get the 36 hours of fasting. Even though we are eating in between on our DD, it's still (for JUDDD) considered a fasting day because we keep our calories so low.
The science behind it states that the 36-hour fast is optimum for engaging a specific gene which helps with overall weightloss and wellness (sirt-1). Very very simplified, but there it is. HTH. :)
