Preaching to the choir here. I always say Mother Nature didn't cover the earth with plants and not expect us to eat any. LOLOL

We're big in including veggies and fruits in our diet, but we grew up with that, so just think of that as being an important part of good diet.

Inspiring video. Good for her. It's great that she has been able to heal herself so well.

Good video. But yikes, 9 cups! For my family of 6, that would be 54 cups of veggies every day. I can't wrap my mind around how to make that work (or to make them eat it).

Even if it was just dh and I, it'd be 18 cups. But I will be planting kale in the garden this year.

I was discussing this on another forum last week.

Some question are; Does she need 9 c produce daily or would the elimination of all the other foods get the same result.
In other words, if you change to paleo, which is what she did, would you heal just from eliminating a ton of questionable 'food'.

MS responds to ketogenic diet which does not include that much produce.

I do understand that she set this up in an attempt to get certain nutrients in her diet.

I don't think this would be all that hard, although I doubt I'll ever get to eating that quantity of fruit and veggies daily, lover of them that I am. LOL

But just think of how little three cups of shredded cabbage actually cooks down to once it's all gently simmered or steamed. Not that big of a pile. So that's the middle plate.. of sulfur veggies.

Then think how little three cups of green spinach/kale/beet greens would be, once it had been cooked down. Not that big of a serving at that.

And the same with the other veggies and fruits.

I didn't get that she was suggesting eating nine cups of veggies completely raw, or that you had to do that each meal. Only over the course of a day.

On the last colorful plate of foods, I could easily snack on an apple and an orange, in wedges in the afternoon, eat a cup of raspberries beneath a little heavy cream, and spread another cup of chopped peppers, purple onion, mushrooms, black olives, etc. over my quarter of a fresh baking pizza.

I think it's very doable.. just that many/most of us don't eat that much vegetable matter each day. And I fully admit, I will sub out some of the veggie stuff and trade it off for some of the artisan breads that I'm very fond of! :laugh: She frowns on that. :hyst:

I saw this inspiring video as well. She might need to consume so many veggies because of her unique bodily needs. Glad she found a woe that works for her.

Yes, I do think 9 cups per day is therapeutic--
may not be necessary for someone who is already healthy,
or with less dire health conditions than hers.

My mother used to make a big green salad every lunch and dinner. And those meals usually included some cooked veggies. Some fruit with breakfast and for snacks--sometimes dried fruit, sometimes smoothies--and I bet we did eat close to 9 cups of produce a day...especially when we lived in Costa Rica, where you have to watch out for unbelievably delicious fruit, avocados, coconuts and almonds flinging themselves at your head!!!

Personally I'm not a fan of eating that many veggies any more!!! :laugh:
Even broccoli--just plain, steamed broccoli--makes my blood sugar go up.
I eat veggies & salads anyway, but in smaller portions.
The only way I could/would really do something like this is if I grew my own organic vegetables.

Still, I was very moved by this video, and how she healed herself with a Paleo diet--not just the veggies!

It was an amazing story! And really helps point out the healing properties of food. At least, if it is not ruined by the adulteration done to it in factories. :) Food as medicine is such an interesting area now.

I envy you the delight of growing up in Costa Rica. It sounds like such a beautiful place. I need to go find a nice site or two to look at.

I don't know why I thought raw or minimally cooked...just an assumption, I guess.

I have a neighbor w MS but when I even mention diet change, her face goes blank. AND peop here tend to eat the worst, cheap food.
Obesity is high here, as well as illness.
