Rinsing Ground Beef...
 
Does anyone know how many calories are in ground beef once it has been rinsed and blotted with a paper towel?

I want to make tacos today- it is my UP day, but I still don't want to go over!

I plan on buying 80 or 85% and rinsing- better texture and flavor to me than the REALLY lean ones- even after rinsed!

Anyone have any idea how many calories this would be??

I buy extra lean ground beef that is 140 calories raw for 4 oz. I made pizza burgers tonight, and it tasted like higher fat ground beef to me. I can't tell the difference.

My totally unscientific reasoning and math.
85% lean ground beef @ 240 cals for 4oz means that 15% of the calories are from fat, or 36 calories. Since you're not going to be able to rinse 100% of the fat out, I calculate that you're removing maybe, at most 70% of that 36 calories, or 25 calories.
So by my non-data-backed estimate, your 4oz of 85% ground beef, rinsed, would be 215 calories.

I think it might be by weight after all, because Calorie Count says 85g of 85/15 beef has 13g fat.
13 is 15% of 85.

4 oz of 80% fat ground beef contains 121 calories after you rinse it in hot water and blot it, according to the link above. That's the figure I would use.

Actually, 85% ground beef means 85% by weight is meat and 15% by weight is fat. So for a 4 ounce portion, that would mean 0.6 ounce is lard (ie, beef fat), for 153 calories.

If you could remove ALL the lard by rinsing, your 4 ounce portion of hamburger would weigh 3.4 ounces and have 87 calories left. But since you can't remove it all by rinsing, you end up with 121 calories, more or less. The more you rinse, the fewer calories.

That's very confusing lol. I have some 98% lean ground beef that's 120cals for 4oz. That's the leanest I've ever seen.

I ended up using the lean this time- haven't tried it in a while and wanted to play it safe. Pretty sure I made the world's BEST TACOS tonight. The Ground Beef I bought came labeled at 170calories per 4oz- 90%lean.

Rinsed- so probably less per ounce

I found it strange that the study said rinsing and blotting lean ground beef didn't give the same results!!

Maybe next time I'll get the 85% and rinse and blot:hyst:

2 tacos added up to 680 calories really quickly!! It would be nice to have saved around 80 calories!

Good to know about the ground beef, I'm thinking on my next DD -that 4oz with some tomatoes and spices might be pretty good! And within the calorie requirement.

hrmmm I would assume that an easy step would be to weigh the meat after its cooked, then again after its been rinsed and blotted. This way you see how much weight was lost during rinsing and be able to calculate how much fat made up the beef from the start.

Randalls is Safeway and Albertson's, too. I don't know what other names it goes by.

(1) Set your scale to grams
(2) Pre-rinsing weight - post-rinsing weight = X grams

(3) X grams x 9= calories gone!

(1g fat=9 calories)

I think most of these evaporate (or can evaporate, depending on how well-done one likes the meat), so I would definitely weigh after cooking.

But that still might not be accurate, so maybe take a percentage of the difference, in case some of it is water?

Why worry so much? Rinse it in hot water and count it at 120 calories per 4 ounces. What is hard about that?

Weighing after you rinse and blot won't be perfectly accurate because you won't get all the water blotted off.

Back when I was a lab scientist, we spent a lot of time figuring out the portions of fat, protein, and ash in sacrificed lab animals. We used very expensive equipment and lots of grad students. Even after all that, you could never be entirely precise. Life is just too variable. So don't sweat the exact calorie counts of rinsed beef. You'll never know it exactly, because it depends on the temperature of the water you use, how well you stir the water/fat/beef slurry, how you hold the pan when you drain the water, etc etc. Do your best, and let the rest go.

That's 4 oz of raw beef, so it's the weight before cooking and rinsing. It will be about 3.4 ounces after you rinse (if you managed to dry all the water off, which would be hard to do!)
