Low Calorie Pizza (tweaked from Ginny's LC Kitchen Pizza Recipe)
![]() This is about the size of a personal pan pizza. It's so good. Coming in at 136 calories, I find that I prefer to use a whole egg for an additional 54 calories. Raw Green Bell Peppers, 4 strips 4 (or topping of choice) Aldi's - Happy Farms - Light Garlic and Herb Cheese Wedge, 25 (used this as sauce) Aldi's - Reggano 100% Real Parmesan Grated Cheese, 2 Tbsp., 40 Generic – Large Egg White, 16 Vitamin Shoppe - Ml Psyllium Husks Powder, 1 teaspoon, 15 Bragg - Premium Nutritional Yeast Seasoning, 1 teaspoon, 6 Bob's Red Mill - Ground Flax Meal, 1 Tbsp, 30 1 Tablespoon of chicken broth or water TOTAL: 136 Mix dry ingredients, and then add wet ingredients. Cook like a pancake in a pan, and add sauce and toppings.

That pizza looks great! I would have to buy a lot of ingredients though. Are psyllium husks and nutritional yeast expensive? I do have some flax meal. I think I'd like mushroom and onions as toppings.

If you have a Kroger close by they are not too expensive about 7 for the nutritional yeast flakes and about 10 for the husks powder, and you use such small amounts it lasts for a long time. It's totally worth it!
Oh and the crust freezes well! I make them ahead of time and then just add toppings. |

Good idea, on freezing. I do not have a Kroger's. Ours closed down years ago. Possibly could find it at Walmart, or another grocer...will look this weekend.

Thanks Soon!!! You are so sweet! I get that perfect circle because I use the circle pan of my GT Xpress Redi-set-go pan. I got it for Christmas and use it almost daily. But I doubled the recipe for my husband and it worked in a pan like a pancake.

Memorykeeper-Love your pizza crust idea! I don't like using almond flour, and it's in so many recipes on here. But I do love me some flax!
I will replace the egg white with some chia gel, as I am vegan. I love that it has such good and healthy ingredients in it....thanks! |

Dark Chocolate Mocha Mini Cupcakes
20 calories each mini cupcake This is another recipe I tweaked (a lot) from Ginny's 2 minute donut recipe. Dry Ingredients: 2 tablespoons parmesan cheese 1 tablespoon dark cocoa powder 1 Tablespoon of Sweetener (I use xylitol) 1 teaspoon of instant coffee 1/4 teaspoon baking powder Wet Ingredients 1 teaspoon sugar free/calorie free syrup or water 1 large egg Mix dry ingredients, mix together with the wet ingredients. I cooked mine in my GT xpress redi-set-go muffin pans, but you can make it in mini muffin tin. Bake 7-9 minutes. Entire Recipe: 122 calories I tried making it with just egg white, but they fell sort of flat. These are really good! Makes 6 mini cupcakes. Yes, parm is the "breading." It sounds kind of yucky, but TRUST me, it's delicious! Try it and you'll be surprised.
You could do half a recipe and make it a MIM in the microwave. I would cook for about a minute. |

![]() I added "frosting" to the cupcakes for an additional 8 calories. These mini cupcakes are 28 calories. Frosting recipe: 2 Aldi brand low calorie cheese wedges, 1 tablespoon of unsweetened almond milk, 2 drops liquid sucralose, 2 drops of vanilla extract. Soon, I lost a few pounds on Atkins, but most of the weight on Rx hcg. I didn't want to go that extreme again because my hair had gotten really thin from extreme dieting (it did it before when I did Weight Watchers).
DD Typical Menu: B: Two 16 ounce cups of coffee with liquid splenda and one tablespoon of half and half in each cup. L: 2 cups of salad with my own dressing (2 Tablespoons of Apple Cider Vinegar, 1 teaspoon of lemon juice and 3 drops of liquid splenda) with my Low Cal/Low Carb pizza D: 8 ounces of cabbage sauteed in the pan with pan spray and seasoning, along with a protein like Swai Fish filets, chicken breast, or whole egg. Up Days: 1900 calories of higher fat/very low carb foods. I'm doing JUDDD in conjunction with my Atkins. I start Phase 2 tomorrow so I will be adding berries and nuts/nut flours. Sooo excited! |
