![]() Started out by sauteeing 2 oz red and orange peppers Heated up one each Green Giant Single serve Broc and Cheese and Cauli and cheese. Then added to the pan and turned heat low to "marinate" the flavors. Add your fav shirataki noodles. I seasoned with salt, pepper and garlic. Dinner for about 95 calories! |

Cucumber Salad
![]() I measured it out this time to put a recipe together for this thread. Usually I slice all my cucumbers and onion (sometimes some tomato to flavor the "dressing") and layer and salt them as I go, and splash vinegar as I go... however, I came up with this recipe after measuring and tasting the next day. 2lbs cucumber- I half peel mine. slice somewhat thin 108 calories (approx 4 cukes) 2 oz Thin Sliced Red Onion 22 calories 1 cup Rice Vinegar (Must be the Sugar Free one!! I made the mistake of NOT getting Sugar free- 25 cal/T!!) The Sugar Free is Calorie FREE!! 1 tsp salt 1/2 tsp garlic powder (can use fresh garlic) Couple shakes of Onion powder- optional 1/4 tsp Dill Weed Pinch or 2 or Crushed Red Pepper (the kind for pizza topping) OPTIONAL Whole recipe 130 Calories!!! I don't count spices I mix all the dressing ingredients in the bottom of my Tupperware then add the cukes and onions. At this time I will stir all the ingredients together, then put the lid on and try to hold the tupperware in different positions to cover all the vegetables. Stir in a few hours if you think about it! I try to make this the night of an UD and it is ready for a DD!! I recently started adding the Red Pepper and I think that paired with the vinegar helps with suppressing hunger on DD's. Plus this dish is very Light and refreshing!! ![]()

Vegetable Stew
![]() My first time cooking eggplant! YUM!! ![]() 1.5 lb eggplant 165 26oz Zuchinni 115 3 med-large sliced lengthwise then sliced in half moons 2 green peppers 45 chopped 1 smaller onion 45 chopped 2 cans Hunt's diced tomatoes 210 2 small cans tomato sauce 105 3 garlic cloves 15 1 tsp each chicken and beef flavoring 10 1/2 T Oil (not needed) 50 italian seasoning blend to taste salt to taste red pepper-pinch black pepper to taste I chopped the eggplant in chunks then let soak for a few hours in a mix of water, lemon juice and salt. Dry well after soaking Sauteed the veggies in batches in a dutch oven with olive oil spray and let BROWN- this is where all the flavor is!!! (however if you want to skip browning and just throw everything in the pot and cook it will work) After sauteing all the veggies I put them all back in the pot and added the tomatoes and tomato sauce. Cook on low for about 45 minutes. Season to taste. I only added a little of the italian seasoning most of the flavor came from the veggies!! This recipe made approx 10 cups. Each cup is 71 calories without the oil!! Could easily add a cup or 2 of water and bring the calories down. This is VERY filling!! Enjoy! |

I don't do JUDDD, however, I try to keep my calories as well as carbs low, so I have been looking at the DD threads, and I have quite a few recipes that are low cal. A lot of them involve shiratake noodles, but I see yall are lacking in food porn, so mind if I post?

My, you're really getting into the shirataki noodles and rice. Some good looking dishes there. I've eaten the noodles before but am out. I've got an order in for some right now and can't wait for them to come in. They'll be nice on DOWN days. May try the rice one day, too. Thanks for sharing your ideas and pics.

One of my new Favs!
I take 2 cups baby spinach and a teaspoon of olive oil and make it into a paste ![]() Take 1 serving of Shirataki noodles and add them and just let soak. ![]() This is alittle under 100 calories .... ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Add some steam beans and a few ounces of meat... ![]() This whole meal is 272 Calories and 15.2 Carbs |

Wow, I never thought of something like that Babykinz. In your carb count, are you counting the carbs for the shiratake? I just count them as 0 everything so I was wondering.

I believe u could cut out some of the yolks, but you wouldnt want to cut out all of them. Ill have to try this again soon with less yolk, and maybe less polyd, less calories without!
