The last recipe with the peppers and tomato sauce I weighed out and came up with 95 calories. So pretty much right on! I made it for lunch today with a tweak. Added a couple T of water and a tsp of chicken bouillion and let it cook down with the peppers and sauce. Then added the noodles and some gluc powder to make it in to a sauce. SUPER delicious! Full for 100 calories!!
Might make it again today!!! Oh yeah, a little less chili paste this time ![]() |

Pancakes
I am still going to work on this recipe. I think it could be lower in calories. I ate them today for an UD and even the BF agreed that next time I make them he will eat breakfast with me!! He's not a fan usually of low carb cooking!
Thank you everyone here for exposing me to new products that are both low cal and low carb! These pancakes are a treat! ![]() Here is the recipe 1/3 cup Carbquik 90 2T Oat Fiber 1T Flax 30 1/4 tsp gluc powder 1/2 t B. Powder 1/2 t salt - give or take I eyeballed! 1T Psyllium Wet ingredients 1 large egg- 71 3T egg whites 25 1/4 cup Sf syrup- I used DaVinci Dulce de Leche (smells like pancakes to me!) 1/2 cup almond/coconut milk 23 I get a total of around 240 and this made 6 smaller pancakes! Could have been thinned a little with water I think to make 6 decent sized ones. 3 pancakes 120 calories!!! perfect for a DD with some Walden Farms syrup! I am looking for ways to cut the calories even more... maybe sub out some wheat bran for the flax and only use egg whites. Maybe cut out the almond milk for water. Or eat 4 on an UD for 160 calories and save 2 for a DD for 80 calories! Either way these are SUPER filling!! If I have made any mistakes counting the calories please let me know. Still pretty new to this! By the way I get at most 4 carbs for the entire recipe! Very low carb friendly too!!!

DD Salmon Casserole

I used... 4oz Salmon (the kind in the packets) 140 1 can mushrooms 40 1 can green beans 70 1/4 cup (4T) cream of Chicken and Mushroom Soup 50 Mix the soup with the salmon and 1T of water, then add mushrooms and green beans. Microwave. Makes 2 portions- each with 150 Calories and 6 carbs |

This might gross some people out, but this is an idea of the weird food combos I like sometimes for snacking.
![]() This is 2 Wasa lite crackers, some cream cheese, an ounce of colby-jack, some pickle, hot sauce, and a little fresh-ground black pepper. Approx. 215 calories. I couldn't wait, had to take a bite before I got a picture of it, lol. There's the blandness of the crackers, the cool creaminess of the cheeses, the sourness of the pickle, the heat from the sauce. I like. ![]()

Started JUDDD 10/12/11 after LC. MAINTENANCE since 11/12/11, & have lost more weight. I shake things up all the time with my version of Pirate Jenny's MUDDD, my "Fast 5" & other IF. ...low-moderate fat....and eating "healthy" foods 75+% of the time which lets me have real life and indulgences too |

Pretty good stuff! I like the Wasa Crackers with 1/2 a LC or WW cheese and 1 oz smoked whitefish! YUM! I usually end up having to share with my cats- but no one else wants any!

My husband is like that. The smell of cucumbers is a migraine trigger for him. But he loves pickles.
I love eating at the local pay-by-the-ounce salad and hot bar near my workplace because I can eat all the cucumbers I want and it's completely off my breath by the time I get home in the evening. |

This is the answer to a newbie JUDDD member's prayer!! Had a DD today, had an Atkins shake, had some dry cereal in a sandwich bag (which wasn't bad, but not much substance), and plan to enjoy my hibachi stirfry tonight, but mark my words, I'm getting me some cabbage heads from the grocery store tonight!! I seen this post yesterday and today when I went grocery shopping. I got shrimp and cabbage for the one dish and got cucumbers, cream cheese and bacon for the other. I am so happy I found this thread! New idea's are always great!

I never thought to look there!!! I know I was just a little ticked off shopping tonight, because most things the shelves were bare. I really hate that! It means I have to make another trip to get what wasnt there in the first place!

I just looked at the Walmart website and found they do list the Laughing Cow Cheese and say that it's in stock. There are several different flavors so they should have something!
