DD - what to do with Zucchinis/Courgettes

Hi everyone,

tomorrow is a DD and I want to be prepared. Got quite a bit of boiled Zucchinis/Courgettes but I`m not sure what to do with them which won`t require too may calories..any suggestions?

I bet they'd be good raw with laughing cow cheese.

Already boiled, I'd say just add whatever spice you like and enjoy. Be sure to check spice calories though. I was shocked at how quickly they can add up.

You could also pan fry some shirataki noodles, add a little low cal pasta sauce and add in your zuc's. That actually sounds pretty yummy.

The possibilities are endless.

'dry fry' them - add some spices - yummy!

blend them into a soup?

eat them cold, mixed up with a little philly (fat free if you're me), and some spring onions...

If they're boiled, add to some chicken broth and puree for soup. A little parmesan cheese makes it a nice, too

I'm not sure about boiled zucchini but I cut raw ones into fry-shapes, sprinkle salt/seasoning on them, and bake them for 25 mins @ 350 degrees. I love me some zucchini fries!

Unfortunately most of the stuff mentioned above is impossible to find/very expensive in these parts of the world..:/

But emky - def trying those zucchini fries - might even make them today even though its an UD!! I <3 ZUCCHINIS!!!
