Cabbage, laughing cow cheese and chicken

I know I read this somewhere last night. I just wanted to say thank you to whoever posted it. I heated up coleslaw and added in the cheese and chicken..Easy peesy!! It was really good.

So thanks whoever posted this!! It will be a staple DD. Lol I liked it so much I may have on my UD too!

jandjsmom 12-08-2011 04:55 PM

I know that I put it in one of my "what are you eating today" posts!! I love it too! I also use steak-umms instead of chicken when I want beef.
Also, if I have calories and carbs to spare, I heat up a Joseph's pita until soft and pile the mixture on top and kinda fold it and eat it "taco style" DELISH!!!!

JKat 12-09-2011 04:09 AM

:shake: Thank you so much for sharing!!

melissaconatser 12-09-2011 06:19 AM

Gotta buy me some cabbage or slaw mix. I used to eat crack slaw quite often on LC, and really liked it. This would be perfect for me on a DD. Thanks for sharing!

janetsbreeze 12-09-2011 09:26 AM

This sounds wonderful - will need to try it!

MintQ8 12-09-2011 01:45 PM

How do you keep your coleslaw LowCal? I love making mine luxuirious - so I'ld love someone's good LowCal recipe.

Thanks!

Dottie 12-09-2011 04:52 PM

I'm putting that on my dd menu for tomorrow, may add a diced tomato, too :)

julietcc 12-14-2011 09:21 PM

I bought a bag of coleslaw mix but how do you heat it up? With water or oil? Then do you add the chicken and the laughing cow? I started searching threads but gave up :stars: Thanks.

Mommie22boys 12-15-2011 04:11 AM

I made this the last couple of days. The first time, I used 3 small slices (80 cal) of heat and eat bacon...I put them in the pan and warmed them, then I cut them into pieces and added the raw slaw. It cooked just fine in the little grease that was in the pan. Yesterday, I cooked a steak-umm first, then added the raw slaw to cook...I ended up adding about a Tbls of water to it and putting the lid on to help steam/wilt it more. I add the cheese after the cabbage is nice and cooked. I also ended up adding a Tbls of h&h yesterday to make more of a sauce out of the cheese. Pretty tasty stuff, and depending on how many cals you have left, you can make a pretty big bowl of it. :)

JKat 12-15-2011 06:08 AM

I just spray the pan with pam then through in the cabbage and heat it till its soft but not mushy. Then I add in the chicken and laughing cow cheese and mix it. Yummy. I have eaten it with just the cabbage and cheese without any chicken and its really yummuy too.

I had this for lunch today and it was really good! Much more satisfying than the eggbeaters omelet I had for lunch on my last DD. I didn't use coleslaw (too many calories) but angel-hair cabbage, 1/2 cup petite diced tomatoes, 2 oz shredded chicken, and 1 wedge roasted red pepper LC cheese. It was tasty!

ouizoid 12-15-2011 03:48 PM

I've done this for a long time--I use a bag of angel hair cabbage heated in a little chicken broth til well wilted. add 3 buffalo wing flavoured chicken meatballs (trader joes) cut in half, 2 wedges laughing cow blue cheese--mash cheese into broth til well melted, stir together til hot. Remove and top with some buffalo wing hot sauce. Blue cheese buffalo low cal yumminess. about 250 cals total

JKat 12-15-2011 04:18 PM

What is angel hair cabbage??

It's pre-cut cabbage sold in the part of the grocery store that sells bagged salad mixes. It's been very finely sliced, sort of like angel hair pasta.

Great suggestion ouizoid! I wish we had a Trader Joes nearby.

I think I'm going to try it with salsa and jalapeno peppers next.

JKat 12-15-2011 04:28 PM

Oh Michelle so sorry that is what I use too! Its 25calories for 3ozs. I guess I should not call it coleslaw.

jandjsmom 12-15-2011 06:41 PM

I use the angel hair cabbage also and actually found out that it freezes well!! Noticed couple weeks ago that I had some about to expire so I divided it up and froze it. Used it last night and couldn't tell the difference

avecrain 12-18-2011 04:43 PM

i love this! i am eating it right now. i use a quarter of a head of cabbage slices into slivers, cooked in water, 1/4 c. veggie juice, and either the juice from canned chicken or a little "better than bouillon" paste. I use half a costco can of chicken and 1 laughing cow wedge, and i like it with red hot on top! so yummy!

julietcc 12-18-2011 06:43 PM

This stuff is great! I like the texture and taste and everything. On yesterday's DD, I cooked up about 3 cups of "coleslaw mix" with a little water, added a can of costco chicken, and two wedges of laughing cow garlic and herb cheese. I ate half for lunch and nuked the other half for dinner. It's very filling, too. The whole recipe was 320 so 160/meal.

Knittering 12-18-2011 07:20 PM

I think it's my favorite meal right now. :) I was even considering making a batch of it today on an UD!

Tomorrow's variation will be with a serving a Chop Suey veggies (canned, 15 calories per 1/2 cup) and some soy sauce and fish sauce instead of the LC cheese. Maybe some fresh garlic and ginger too

Lol...I did have it for dinner on today's UD! I made mine with some salami instead of chicken, and added a few chopped grape tomatoes on top. Good stuff!!

I made my second ever batch tonight and I never realized how much I like cooked cabbage! I have had it before but not using the coleslaw type. It almost reminds me of eating noodles. Tonight I made it without any chicken because I wanted a really good DD today. I used 3 cups of slaw mix cooked with a bit of water in a pan, and 2 wedges of blue cheese laughing cow. I think I like the garlic and herb better but it was still good. And I'm stuffed! I could eat this stuff every DD. I'm definitely going to try it with different meats. Ham might be good. I have a whole pack in the fridge so I'll try that next.

JKat 12-20-2011 04:10 AM

I have eaten it alot on up days. Its my go to recipe. So versatile

We LOVE cabbage in our family. We often make curried cabbage (UD only) with just cabbage, butter, HWC, and curry powder. It's SO good alone or with chicken.

I just may need to try to experiment and see if I can make a DD version. Hmm. Maybe the LC swiss and a little almond milk instead of the butter and HWC? You have me thinking now!

This dish looks YUMMY! I am planning on starting JUDDD right after Christmas and was wondering how many servings this makes. Is there a recipe posted somehwere? Thanks.

julietcc 12-22-2011 07:14 AM

Lacie, there are so many variations but here is how I make mine. It makes 2 smallish bowls that are 160 calories each. The 3 cups of cabbage mix really shrivel up when cooked! 3 cups of cabbage is only about 40 calories. Laughing cow cheese wedges are 35 calories each (I use two).

Thinking about trying this with crab today. I also got canned chicken, so I'm up in the air.

lacie 12-22-2011 11:04 AM

Thank you, Julie. I am definitely going to make it.

avecrain 12-22-2011 07:02 PM

today, i mixed up cabbage (1/4 head), can of tuna, 1 laughing cow wedge, 1 tbsp fat free cream cheese, and 1 tbsp romano cheese for a tuna casserole-like entree for 298 cals. mmmmm! and realllly filling

JKat 12-23-2011 05:08 AM

I make it differant all the time. Its really one of those dishes for UD and DD. Today was an upday so I used alot of cabbage, laughing cow, shrimp, and canned chinese veggies I found. sauted it till done then add in some soy sauce. Wow was it amazing!!!! tasted like I went to one of those chinese habachis

DD its cabbage and laughing cow plus an oz of any type of meat you have on hand. Its yummy, easy and filling!

mattsmama 12-25-2011 10:46 AM

Oh, man, am I loving this stuff! I got a little bag of salad shrimp, precooked, from the Dollar Tree. (Frozen foods section) I use half the bag for one serving. Easy peasy.
It is so YUMMY! I can't stop raving about it!
It is also a great way to use up little bits of leftover proteins. Saves waste.

Thanks to whoever came up with this. I love it!
