thanks! but it doesn't specify the % of fat/lean. just extra lean. what i get from my grocer, they say is 88-90% lean. so not sure if those numbers apply to what i use?

i guess what i'm looking for is, is how do the nutritional facts for an ounce of raw ground beef translate to dried? am i asking that in a way that is not totally

You want to get the weight difference between one unit of fresh beef and the same unit of dried beef.

So if you started with 500 grams of 80/20 that is 1100 Cals

That dries down to X grams. Let's assume 250 grams.

That means 1100 Cals per 250 grams. That is 4.4 Cals per gram dried beef.

So you'll have to find out the weight of a known amount of fresh ground beef after drying.

Another example: 90/10 is 880 Cals for 500 grams

If that dries down to 250 grams (I assume. You'll have to weigh it)

That is 880 Cals per 250 grams

So for dried beef we have 3.5 Cals per gram

I hope this helps. I think beef dries down by around 50% of starting weight but I am not 100% sure about that.

They have small jars of dried beef in the grocery store, something we buy at Christmas time here! You may want to look at those jars for the calorie count. It is where you find spam, etc in the store. A small, clear jar that makes a nice juice glass too!
