help me revamp this recipe please
 
TUNA OR SALMON MUFFINS
2 6-ounce cans tuna or salmon, drained well
2 eggs
1/4 cup celery, chopped fine, 1 ounce
2 tablespoons onion, chopped fine, 1/2 ounce
1/4 cup green pepper, minced, 1 ounce
2 ounces cheddar cheese, shredded
Salt and pepper, to taste
Pinch Old Bay seasoning

Mix all of the ingredients and spoon into 6 well-greased muffin cups. Bake at 350 for 30 minutes until puffed, set and lightly browned around the edges.

Makes 6 servings

I was thinking if I use egg beaters in place of eggs that will cut calories but I dont know how much to use. Also use 2% cheese in place of the regular. This is from Lindas website the orginal has 109 calories per muffin.

Isn't 1/4 cup egg beaters equivalent to 1 egg? You would have to look at the calorie count for you cheese if you use a lower fat cheese. Should be doable.

I thought about that too. But I dont know. I know cabots makes a 50% less fat one too. They dont have the 75% less fat one here.

You could leave out the cheese entirely to save on calories.
Or use a little cheddar popcorn seasoning/powdered cheddar.
Or a tablespoon or two of Parmesan instead.

I would use 1/2 cup egg beaters = 60 calories and just 1 oz = 2 tbs cheese instead of the 2 oz are written. OR use low fat or fat free cheese.

This should help to cut the calories down to make this a good one for DDs.

Tuna in water, 2% cheese but only use 1/2 what it calls for and opt for the sharpest you can find (more flavor for less product), egg whites or substitute. Increasing the veggies will also make them more filling and moister for just a few calories :)
