If someone has one using lemon cake mix and a powdered sugar glaze with lemon, I'd love it. One of my co-workers (way back when) used to bake them and they were so good!

Yep! And, hopefully, some of the other "classics" won't be quite as high! This is good though - even if you're not a baker, by the time we have a handful in where and you have looked them over, you'll have a good base for guessing how many calories are in the ones you're reaching for as the holiday plates arrive!

I love mint chocolate chip ice cream and I love those Andes creme mints, so I wanna try this recipe. It's from allrecipes.
Chocolate Mint Cookies I * 3/4 cup butter * 1 1/2 cups packed brown sugar * 2 tablespoons water * 2 cups semisweet chocolate chips * 2 eggs * 2 1/2 cups all-purpose flour * 1 1/4 teaspoons baking soda * 1/2 teaspoon salt * 36 chocolate mint wafer candies Directions 1. In a large pan over low heat, cook butter, sugar and water until butter is melted. Add chocolate chips and stir until partially melted. Remove from heat and continue to stir until chocolate is completely melted. Pour into a large bowl and let stand 10 minutes to cool off slightly. 2. At high speed, beat in eggs, one at a time into chocolate mixture. Reduce speed to low and add dry ingredients, beating until blended. Chill dough about 1 hour. 3. Preheat oven to 350 degrees F (175 degrees C). 4. Roll dough into balls and place on ungreased cookie sheet about 2 inches apart. Bake 8-10 minutes. While cookies are baking unwrap mints and divide each in half. When cookies are brought out of the oven, put 1/2 mint on top of each cookie. Let the mint sit for up to 5 minutes until melted, then spread the mint on top of the cookie. Eat and enjoy! *I might follow a suggestion on the reviews and just mix Andes mints up in the dough instead of using them as frosting. Nutritional Information Servings Per Recipe: 18 Amount Per Serving Calories: 364 * Total Fat: 15.9g * Cholesterol: 44mg * Sodium: 222mg * Total Carbs: 55.6g * Dietary Fiber: 2g * Protein: 3.7g

Preheat oven to 350 degrees F (175 degrees C). 2. In a medium bowl, cream together the butter, white sugar and brown sugar until smooth. Stir in the peanut butter, vanilla and egg until well blended. Combine the flour, baking soda and salt; stir into the batter just until moistened. Mix in the oats and chocolate chips until evenly distributed. Drop by tablespoonfuls on to lightly greased cookie sheets. 3. Bake for 10 to 12 minutes in the preheated oven, until the edges start to brown. Cool on cookie sheets for about 5 minutes before transferring to wire racks to cool completely. Easy Microwave Fudge
3 cups Milk Chocolate Chips 1 can (14 oz) sweetened condensed milk 1/4 butter Place chocolate chips, sweetened condensed milk and butter in large microwave safe bowl. Microwave for 3-5 minutes, stiring every 30 seconds until smooth and free of lumps. Line 8x8 baking dish with over-hanging waxed paper. Spray top of waxed paper with Pam. Pour fudge on top. Refrigerate over night. Remove from pan WITH the waxed paper using a spatula. Cut in to bite sized pieces. The below estimate is based on a yield of 40 pieces Per Piece: Calories = 171 Carbohydrates = 15 Protein Protein = 2 Fat = 5

Surprise Meringue Cookies
4 egg whites 1/4 tsp salt 1/4 tsp cream of tartar 2 tsp vanilla 1 1/2 cups sugar 1 - 12oz package of chocolate chiips Using mixer, beat egg whites, salt, cream of tartar and vanilla on high until soft peaks form (when lifting beaters up you should get a "?" shape). With beaters running, gradually add sugar, beating until stiff peaks form. Fold in chocolate chips with a spoon, not the mixture. Cover cookie sheets with kraft paper or brown paper bags cut to fit. Place spoonfuls directly onto paper. Bake for 25 minutes at 300 degrees. Using spatula (the thinner/sharper the better to get under the cookie!) place on rack to cool. They're good warm, but I like them after the chips have had a chance to re-harden. Below numbers based on yield of 36 cookies: PER COOKIE: Calories = 83 Carbs = 14 Protein = 0 Fat = 2 |

I've got the dough for those Chocolate Mint cookies waiting in my fridge for tomorrow!
I went baking crazy today after I got home from the store. I made all new recipes that I've never had before, all from the allrecipes dot com site. I'm taking them to the Tgiving dinner tomorrow on my side of the family I made New Orleans Chocolate Bourbon Pecan Pie, Jefferson Davis pie (added a bit of bourbon to that too), Boiled Fruit Cake (the name is terrible, but dang this was good and I'm not a fruit cake liker, let alone lover - I used dried fruit instead of the candied stuff and oh, a splash of bourbon in it ) and mixed up the dough for the Chocolate Mint cookies (some bourbon found its way in there, don't ask me how! ) and tomorrow I make Bourbon whipped cream to top the Jefferson Davis pie. Gosh, it's not like I bought a bottle of bourbon and needed to use it in some recipes! *hic!* J/K - I don't like to drink it outside of recipes. |
