Evil Cookie Thread - just bake and.... EAT!!

Ok - there's cookie recipes ending up all over in different threads and with the holidays coming up, along with UP DAYS, let's pull 'em all together!

I promised a few that I'll post later from home!

(We all still have SOME limits - so please post the nutritional data if available too!)

If someone has one using lemon cake mix and a powdered sugar glaze with lemon, I'd love it. One of my co-workers (way back when) used to bake them and they were so good!

If no one beats me to it I'll plug it in the link I just posted tonight to get the nutritional data.

Just cuz we can HAVE cookies doesn't mean we wanna blow all our hard work eating above our calorie ceilings......

Another good idea. That way we know if we can have one or two or however many cookies Or just one giant one.

Wow. But I think these are extra large cookies anyway. They have a s'more inside and the chocolate chip part is packed all the way around each s'more.

Yep! And, hopefully, some of the other "classics" won't be quite as high! This is good though - even if you're not a baker, by the time we have a handful in where and you have looked them over, you'll have a good base for guessing how many calories are in the ones you're reaching for as the holiday plates arrive!

I sooo want to try these....In the UK, our graham crackers are called digestive biscuits...and are round...so will fit very well into this kind of cookie!

Think I would see if I could add just a few l/c tweeks...to notch down those cals just a little...but thats just me...i cant leave any recipe alone!

I love mint chocolate chip ice cream and I love those Andes creme mints, so I wanna try this recipe. It's from allrecipes.

Chocolate Mint Cookies I

* 3/4 cup butter
* 1 1/2 cups packed brown sugar
* 2 tablespoons water
* 2 cups semisweet chocolate chips
* 2 eggs
* 2 1/2 cups all-purpose flour
* 1 1/4 teaspoons baking soda
* 1/2 teaspoon salt
* 36 chocolate mint wafer candies

Directions

1. In a large pan over low heat, cook butter, sugar and water until butter is melted. Add chocolate chips and stir until partially melted. Remove from heat and continue to stir until chocolate is completely melted. Pour into a large bowl and let stand 10 minutes to cool off slightly.
2. At high speed, beat in eggs, one at a time into chocolate mixture. Reduce speed to low and add dry ingredients, beating until blended. Chill dough about 1 hour.
3. Preheat oven to 350 degrees F (175 degrees C).
4. Roll dough into balls and place on ungreased cookie sheet about 2 inches apart. Bake 8-10 minutes. While cookies are baking unwrap mints and divide each in half. When cookies are brought out of the oven, put 1/2 mint on top of each cookie. Let the mint sit for up to 5 minutes until melted, then spread the mint on top of the cookie. Eat and enjoy!

*I might follow a suggestion on the reviews and just mix Andes mints up in the dough instead of using them as frosting.

Outrageous Chocolate Chip Cookies

Ingredients

* 1/2 cup butter
* 1/2 cup white sugar
* 1/3 cup packed brown sugar
* 1/2 cup peanut butter
* 1/2 teaspoon vanilla extract
* 1 egg
* 1 cup all-purpose flour
* 1 teaspoon baking soda
* 1/4 teaspoon salt
* 1/2 cup rolled oats
* 1 cup semisweet chocolate chips

Directions

1. Preheat oven to 350 degrees F (175 degrees C).
2. In a medium bowl, cream together the butter, white sugar and brown sugar until smooth. Stir in the peanut butter, vanilla and egg until well blended. Combine the flour, baking soda and salt; stir into the batter just until moistened. Mix in the oats and chocolate chips until evenly distributed. Drop by tablespoonfuls on to lightly greased cookie sheets.
3. Bake for 10 to 12 minutes in the preheated oven, until the edges start to brown. Cool on cookie sheets for about 5 minutes before transferring to wire racks to cool completely.

OK, I can see some tweaks going on with this recipe that will bring it down in calories some and also bring the size of the cookie down.

Well, most of us could have 1 cookie for a DD........but THAT WOULD BE IT!!

Duncan Hines Lemon Supreme Cookies


* 1 pkg. Duncan Hines Lemon Supreme cake mix
* 1/3 cup vegetable oil
* 2 eggs
* 1 tbsp. lemon juice

* 1 cup powdered sugar

* 1 tsp. lemon zest

5. Let cookies cool for 1 minute, then top with glaze.

Easy Microwave Fudge

3 cups Milk Chocolate Chips
1 can (14 oz) sweetened condensed milk
1/4 butter

Place chocolate chips, sweetened condensed milk and butter in large microwave safe bowl. Microwave for 3-5 minutes, stiring every 30 seconds until smooth and free of lumps.

Line 8x8 baking dish with over-hanging waxed paper. Spray top of waxed paper with Pam. Pour fudge on top. Refrigerate over night.

Remove from pan WITH the waxed paper using a spatula. Cut in to bite sized pieces.

The below estimate is based on a yield of 40 pieces

Per Piece:
Calories = 171
Carbohydrates = 15 Protein
Protein = 2
Fat = 5

Surprise Meringue Cookies

4 egg whites
1/4 tsp salt
1/4 tsp cream of tartar
2 tsp vanilla
1 1/2 cups sugar
1 - 12oz package of chocolate chiips

Using mixer, beat egg whites, salt, cream of tartar and vanilla on high until soft peaks form (when lifting beaters up you should get a "?" shape).

With beaters running, gradually add sugar, beating until stiff peaks form.

Fold in chocolate chips with a spoon, not the mixture.

Cover cookie sheets with kraft paper or brown paper bags cut to fit.

Place spoonfuls directly onto paper.

Bake for 25 minutes at 300 degrees.

Using spatula (the thinner/sharper the better to get under the cookie!) place on rack to cool.

They're good warm, but I like them after the chips have had a chance to re-harden.

Below numbers based on yield of 36 cookies:

PER COOKIE:
Calories = 83
Carbs = 14
Protein = 0
Fat = 2

Ohhhh boy that's a lot. how in the world did I lose .2 lbs after that one. CRAZY. But I did make smaller ones I just broke the graham cracker in half again and built from there. But I ate the big one. Not doing that again.

This sounds so good! And it reminds me of another yummy "cookie" I used to make at Christmas that involved dipping in melted chocolate....

I used to make these cookies where you take Ritz crackers and make peanut butter sandwiches with them (stick 2 crackers together with some peanut butter). Then you dip each sandwich in melted chocolate and let it set up on wax paper. Wow!!! Talk about easy and good! I also dipped them in white chocolate and even dark chocolate. I even added mint flavoring to the chocolate.

You could probably do this with those mini Ritz bits I think their called - tiny Ritz crackers already put together with peanut butter in them.

Line 8x8 baking dish with over-hanging waxed paper. Spray top of waxed paper with Pam. Pour fudge on top. Refrigerate over night.

Remove from pan WITH the waxed paper using a spatula. Cut in to bite sized pieces.

The below estimate is based on a yield of 40 pieces

Per Piece:
Calories = 171
Carbohydrates = 15 Protein
Protein = 2
Fat = 5
