Oh, man, that one sounds DELICIOUS Dottie! Must try that one day. I think both your ideas sound doable and tasty, too. Bet some artichoke hearts chopped up in it would be delightful, too.

The recipes are great here. I want to browse some more later. I am not yet fully on JUDDD but I am contemplating it and have the book, plus I am a long-time calorie cycling person. A favorite recipe of mine is a sandwich filling on 100 calorie whole wheat thins but when being very low carb, I just eat it as a salad:
Creamy Tuna Salad 1 small pouch low sodium tuna 2 wedges Laughing Cow Light, any flavor Grape or cherry tomatoes, any other desired veggies Dump the tuna and cheese wedges in bowl and lightly mix, chop veggies and mix in, chill. Makes two servings, approximately 75 calories each excluding vegetables.

this is a VLC and lots of bang for your buck DD shake.
I have recently found that netrition sells Pea Powder Protein (NOW). one scoop is 130 calories and 28 grams of protein. I am making a shake mixing one sleeve 4C orange powder (like crystal lite but splenda), 1/2 tsp glu powder and 1/2 scoop PPP (65 calories and 14 g protein). Mid morning shake that carries me through for hours--very filling, high protein--only 65 calories. |

This might be posted already. It's from jandjsmom. Here's the original recipe:
Almost Like a Chocolate Milkshake 1/2 cup or so of unsweetened coconut milk 1/4 cup lowfat Daisy cottage cheese (don't say yuck....can't taste it, only makes it super thick!) 2 t. Hershey's Special Dark Cocoa 2 t. instant espresso 2 packets truvia 2 t. SF vanilla Torani lots of ice Blend in Magic Bullet or blender ~~~~~ I made it a little different to suit my taste. I used it yesterday on my DD and today for an UD I added a whole egg and some cream to it. Here's what I used: Silk Unsweetened Vanilla Almond Milk Instant Coffee granules (only 1 tsp.) SF DaVinci Cookie Dough syrup A couple more sweetener packets - I have such a sweet tooth! It's thick and creamy, just like a milkshake! ETA - When I added this recipe to MasterCook using Silk milk and the brand of cottage cheese I use, it came to 88 calories.

Hi soon. No Q in my name--it is an "O"
I am using the Pea Protein because it has such a high protein to calorie ration. for 65 calories, I can get 14 g protein. Yes--made from peas! Sometimes I use whey protein too. |

Jello-Yogurt Desert
JELLO-YOGURT DESSERT
1 c. low fat plain yogurt 1 c. boiling water 1 (3 oz.) pkg. sugar free Jello Combine all in blender until smooth. Refrigerate until firm. Serves 4. I like to divide this up in small containers before it sets up. Then I can just grab one as wanted. It comes to 46.9 calories per serving. 4.4 carbs Light and refreshing. Just to note: the sugar free Jello package isn't actually 3 ounces. It's more like 1-point-something ounces because the sugar substitute is very light. I am noting this for new cooks who would be looking for a 3-ounce package and wondering why they couldn't find it. You want the four-serving package.

Delicious Taco Meat
I sauteed a package of 99% fat free ground turkey in some chicken broth mixed with whole foods taco spice and a little pepper sauce. Once it was well cooked and seasoned and most of the liquid had absorbed, I poured in about 1/4 cup more chicken broth and sprinkled the whole thing with 1/2 tsp Glucomannan powder. You would never know it is 99% fat free. The meat is juicy and flavourful and the Glu makes it all hang together as if it had fat in it. Try it!! Ouis Edit: I just made one of my psyllium tortillas --this time with southwestern eggwhites--the taco meat and a Tbs of salsa--YUM Last edited by ouizoid; 07-21-2012 at 11:26 AM.. |

I decided to count the muffin as 23 calories...found that psyllium (which I haven't used before) is 16 calories per Tbsp. and almond milk, I get 6.6...other ingredients, I don't count in other recipes, so I won't count here either. There, I feel better now!

OMG this was soooo gooood!
DD Apple Pie! (Serves 2 people, 206 calories for 1/2 the recipe) Put 150 grams of peeled diced apple in a bowl with a little cinnamon and sweetener, cover it and microwave it for 3 minutes. Let sit until everything else is ready. Spread 3 laughing cow cinnamon cream cheese wedges over 4 halves of those 100 calorie deli flat circle type rolls. Top them with the apple mixture, warm for 10-20 seconds in the microwave. WOW! ![]() |

I have two Shirataki recipes I would not be able to live without.
First this one, which I got off youtube, but often make little changes: Shirataki Pasta Bake (got this off youtube) Search for "Zero Calorie Pasta??!! Taste Review of Shirataki Noodles And Recipe" and you will find it. 2 7oz bags of shirataki noodles 4 cloves of garlic 4oz of lean ground turkey 1 cup of diced zuccini 1 cup of diced mushrooms 1 to 1 1/4 cup of spaghetti sauce (Hunts "no sugar added," or I use Trader Joe's Organic Tomato Sauce are good) 1 cup of fat free mozzarella cheese a (not a big fan; see my subs below) drizzle of extra virgin olive oil Rinse noodles in colander as long as it takes to remove smell, dry w/ paper towel Preheat oven to 250 Begin cooking turkey in pan (I use non-stick spray, then wipe if off). Add garlic Add zucchini Add 1/2 teaspoon to 1 teaspoon of olive oil (I just use a drizzle) Stir to get oil to coat veggies Add Spaghetti sauce, stir Stir in noodles Put in small meat loaf dish Put cheese on top Bake for about 15 minutes. Serves 3 huge servings (or you can eat half the pan and not feel guilty!) ENTIRE PAN is 410 calories, according to the gal who put it on youtube. I use reduced fat parmesan instead of FF cheese, and 6 oz. turkey instead of 4 (and TJ's tomato sauce above), which raises the calorie count to 497 for the whole pan Can also use 2% mozzarella or leave off cheese altogether. The frozen broccoli/cauliflower/carrot veggies work as a replacement for zucchini, too. I'm going to try this today without putting it in the oven, just sprinkling the reduced fat parmesan on it out of the frying pan. I will post the second recipe as soon as I can. DD Mushroom Pizza Bites
Ingredients 3 oz Mushrooms, Raw (6 white button mushrooms) 2 tbsp 2 % Shredded Mozzarella 2 tbsp Light No Sugar Added Tomato & Basil 6 slices Turkey Pepperoni (I used hormel) 2 tbsp Sliced Black Olives (12 slices, or use 5 medium black olives and slice for the same calories) Directions Pop the stems out of the mushrooms and save for another use. Use a spoon or melon baller (works great!) to clean out the mushroom and make the "well" bigger. In the well place 1tsp sauce followed by 1tsp of the mozzarella*, 2 olive slices then the pepperoni slice. Place in an oven or microwave safe dish. Bake: 400f for approx 8 minutes until mushrooms just start to soften and the filing is bubbly. Microwave: uncovered for 3 minutes. *There are about 6 white button mushrooms in 3oz. *There are 12 slices black olives, optional but included in the nutritional info. Subtract 25 cals if not using. *2% shredded mozzarella is approx 35 cals for 2T. If using parmesan instead, subtract 10 cals and use 1T total of parm, using a pinch on each one instead of a teaspoon. 116 cals; 6.8g fat; 500mg sodium; 6.4g carbs; 1.5g fiber; 9.8g protein for the whole recipe. This made a really filling meal along with a romaine salad with Wishbone salad spritzer (under 30 cals for the salad)

What brand do you find for the no sugar tomato and basil. Recipe sounds lovely. I put the Laughing Cow cheese in mushrooms and bake it. Also tasty. For UD can use the Boursin cheese in the mushrooms.
Thanks for all of the recipes you share. |
