I make a Kale, Carrot and Cauliflower soup
8 carrots cut 1 large head of cauliflower 10 kale leaves I season it with hot sauce and different seasonings to taste-I usually use cayenne pepper and mexican blend seasonings but have added curry and that was also good I boil the carrots and cauliflower together for about an hour than add in the kale throw it all in my Vitamix add some water and it makes 10 one cup servings for only 47 Calories Total Fat: 0.7 g Cholesterol: 0.0 mg Sodium: 45.2 mg Carbs: 9.3 g Fiber: 4.6 g Protein: 2.8 g I can eat this for lunch and than have it as a snack and add it to a 200 calorie dinner and feel totally satisfied-I began making this while I was doing the PINK method which is low calorie but does not give you the bliss of the up days that JUDDD does |

Ice Lollies!!
Was finding it difficult to find low cal ice lollies - DH suggested, I make my own!! Diet coke lollies! - don't overfill, it expands in the freezer Chocolate Coffee Milk - some low cal chocolate powder mine is 8.6 cals for 2 teaspoons, I used 3, spoon of coffee (I don't count the cals), sweetener - mixed into a paste with hot water. Top up to 150ml with hot water - then 100ml of skinny milk (Almond would work too) - mix and pour into ice lolly moulds! (though I've seen a way to do it with muffin trays too!) Cals for my mix: 40.9 = 10.25 cals per lolly!!!!!! I can think of all sorts of different low cal ideas!

Ever just need something light but sweet on DD's?
This is an old recipe that I just tweaked down a little to make it more DD acceptable Strawberry "shortcuts" 1 sheet Low-fat Graham Crackers (4 sections) 6 tbsp Cool Whip Light 1/2 cup Frozen Strawberries (only 4-5 berries actually but I couldn't find a lower calorie count than this) 2 packet No Calorie Sweetener (I used the kroger brand of Ideal) In 2 small (1/2 cup) ramikens or bowls, layer: 1/2 of 1/2 graham cracker sheet (1 cracker out of the 4 in a sheet), followed by 1T cool whip, then 1 sliced strawberry, then sprinkle 1/2 the packet of sweetener on top. Repeat layering, press down slightly to spread the cool whip well, then top with 1T cool whip. Refrigerate at least an hour (covered) to soften the cracker. Makes 2 individual "shortcuts" @ 44cals; 8g carbs; 2g fiber per serving. *Each ramiken has 1/2 of a cracker, 2-3 berries, 3T cool whip light and 1pkt sweetener.

I have successfully made noodles from glucomannan powder.
2 cups cold water 1/4 t pickling lime 1 T glucomannan powder Mix the lime in the water. Slowly whisk the gluc into the water and lime a little at a time. I sprinkle the powder then whisk. I used a 60 ml syringe to squirt the mixture into rapidly boiling salted water. You need to let the gluc set up pretty thick before trying to cook it or will just dissolve in the water. Not sure if it was worth my time, but it will be useful if I run out of the regular ones. ![]()

OMG I just spent the last 2 hours reading all the great recipes on this thread. Used up a lot of ink and paper printing many out. Thanks, gang. I'm toying with the idea of trying JUDDD to get my last 25# off. Down Days are going to be a real challenge for me until I get the hang of this. Shifting gears away from full-fat products I'm allowed on Atkins will be a REAL mindset adjustment!!

That part did not bother me so much, and maybe because I only use them in recipes. And I don't touch those on DD's. I do LOVE the cole slaw recipes, very filling.

Well, I've already started drinking my coffee black. I'll ditch the cream except maybe a little on UP days, like you say, Tilly, in recipes, diluted with a little more water than the 50:50 I cut it now. Going back to using PAM for sauteing and greasing pans will seem odd. Haven't used that since I did WW 15 years ago or more.

I have been making Egg Muggs for breakfast
1 whole egg, 1/4 cup egg whites, 2 teaspoons lowfat milk-I use almond milk, seasonings microwave for a minute take out stir and return to microwave for another minute 100 calories you can also add some low fat cheese to it-1 tsp and 1 piece of ham for another 40 calories or use salsa to make it have a different flavor, if you do add these do it after the egg has cooked for one minute and you have stirred it than return it to the microwave for another minute. Maybe this is a well-known diet trick, but the other day it occured to me that I could use V8 as a salad dressing!
This, I hope, is going to make DDs a lot easier--up til now I have been foregoing salads because I like them to *swim* in dressing, and I find most low-cal dressings to be too sweet/yucky/expensive. Anyway, the V8 (actually, I bought Mott's Garden Blend because it was on sale & is lower-calorie) is very flavorful by itself, but I thickened it up with some chia seeds & nutritional yeast. If you don't have yeast, some Parmesan would be yummy! It's good on cottage cheese, too.
