best superlow yet

Apple Rhubarb superlow OMM

DRY

2 Tbs protein powder (I used cookie dough flavour) 25
2 Tbs oatbran
1/2 tsp baking powder
1/2 tsp glucomannan powder
1 packet sf applecider 15

Wet

1/3 c eggwhites--30
3 Tbs Caramel davincis or torani's sf syrup


mix dry and wet together and stir well--THEN ADD 2 TBS Stewed Rhubarb (20 cals)--

Nuke whole mixture 2 minutes depending on microwave

95 cals for whole gigantic muffin--

the flavour is fantastic!

do you have powdered eggwhites that you can reconstitute????--or do them with regular eggs and discard the yolk?

no powdered eggs either...how many regular egg whites equal 1/3 cup?

nikki--try it and tell us how it is--I use psyllium all the time and like it

dazy--I think 3 eggwhites = 1/3 cup

Oat bran or Oat fiber? I know you usually use oat fiber.

i'm gonna try one like this:

2 lg egg whites
14g oat fiber (this is a half a serving of 28g, i think it may be 1T, but will know better when i make/weigh it.)
1T coconut flour
1/4 tsp baking powder
1/8 tsp baking soda
pinch salt
1T xylitol
2T torani syrup
vanilla extract

65 cal

hope it isn't too much fiber for my tummy. i would love to come up with a low cal muffin that isn't all fiber, kwim?

this was....ummm....interesting....lol! don't even know if i can describe the texture. definitely not cakey like my other 134 cal muffins. it tastes ok, just kinda flat and dense. i think i will try to work one up with PP.

oh and i didn't use 14g of oat fiber....that would have been 2 T....too much fiber for me so i only used 7g which is 1T.

I am currently munching on a chocolate peanut butter version...
DRY

2 Tbs protein powder (Chocolate) 25
2 Tbs psyllium 2
1/2 tsp baking powder
1/2 tsp PGX (glu powder)
1 packet truvia 0

Wet

1/3 c eggwhites--30
3 Tbs WF maple Syrup
2 TBS WF Peanut butter spread

a whopping 57 calories and craving satisfied...this is an UD for me so I am eating it with some becel...yummy!
