It's Saturday! What are you eating today?

Looks like with all the discussion about the daily vs. weekly thread, no one ever started today's daily. May this be the last one.

Today is a DD for me...
B: None
L: 2 FF hot dogs, 1 slice lite bread w/ lt miracle whip and NSA ketchup (142)
D: 4 small meatballs w/ 1/4 cup sauce, small salad w/ FF Vidalia onion dressing(235)
S: not sure...maybe a 100-cal yogurt or 100-cal oatmeal

That would bring me to 477 for the day. We'll see how things go....

UD for me and the start of new calories. I have 1,800 to "spend" so let's see what happens!

B...Oatmeal with tsp honey and 2 whole walnuts, sprinkle of brown sugar sub and cinnamon, tea w/half and half..........219 cals

L...Auntie Annie's Pretzel, no butter (could think of a better way to spend the calories, but I haven't had one of these in forever and it tasted SO good! ) and a mixed salad w/blue cheese, 2 walnuts, and FF poppyseed dressing and croutons.........417 cals (the pretzel was 310 cals, so I won't be doing that again for a bit, but I will do it again, that's for sure! ).

D...Pizza night at my fav dance club! Will have a side salad and not sure how many slices of pizza but I'm not concerned because I get full so fast now that I usually can't eat more than 2 slices of this thin crust pizza. I have 1,166 cals to play and I'm thinking this will be more than enough for dinner!

A DD for me after an unexpected MD yesterday. I'm hungry, but hanging on.

B: Hard boiled egg with truffle salt and coffee (76)
L: 2 DD Muffins (75)
D: The usual stir fried chicken and broccoli (260)
S: Flax meal toast and jam (70)

481 calories and 18 carbs

sounds like a delicious DD! How did you enjoy the DD muffins?
I have one EVERY DD...they are such a treat for me, and so filling!
Did you do any recipe tweeking?

I think mine did not turn out as well as the ones everybody seems to be enjoying so much. I didn't have any glucomannan and I don't own a microwave (so I doubled the recipe, added protein powder as Linda did for her doughnuts) and baked them. Mine have a distinct bitter taste-- as if I added too much baking powder. Not sure if I'm actually tasting the baking powder or if it's the addition of protein powder, or what. All I know is that compared to the flax meal muffins I make these just tasted plain bad. Sadly, the flax muffins have too many calories for a DD.

I am determined to figure out a DD muffin I can really enjoy, though. I was thinking I could work on tweaking black bean brownies.

Did you use unflavored Whey PP? If so you would need to add an extract or SF flavoring of some kind. That, I'm sure, will help with the bitter. I find in some things oat fiber makes things a bit "off" tasting. Just my experience!

Linda, I used vanilla protein powder and Torani brown sugar cinnamon syrup. Maybe it was the oat fiber-- I've just started using it and noticed the same bitter taste when I made the bran muffins, too... though the taste there was not as strong. Maybe I just don't like oat fiber? I do hope I can find a way to use it, as it seems to be such a handy way of adding bulk "for free."

I was down to 143 this morning so bring on the refeed

Before workout 1 cup kashi cereal with 4oz 2% milk mixed with half scoop protein and half a banana. 1 piece light 45 cal toast with 1T sf polaner apricot jelly
After workout 1 scoop protein in 8oz 2% milk, the other half of banana and a almond butter and jelly sandwich. 2 slices low cal wheat bread, 2T justins almond butter and 2T strawberry polaner sf jelly
Pumpkin donut from dunkin donuts
While out and about I had a balance peanut bar and an hour later a trail mix bar
Got home about 330 had half cup ff frozen yogurt with half scoop protein and a quarter cup kashi cereal on top
1 piece of low cal whole wheat bread with 1 slice ff turkey
Dinner was a frozen chinese dinner, garlic shrimp, very tasty.
I will have a snack later of either ff frozen yogurt or 2 slices toast with sf jelly

Macros will be on target. About 300 carbs, 2500 cals, 85 g fat and 130 g of protein
Now will scale will start going up for a few days....I don't like that part.

Linda: I had been planning to make a DD muffin today, but ended up not. However, I don't have any oat fiber. I was going to use wheat bran (30 cal/ 1/4 cup). Hope that works out alright when I do try it. How so you tweak it, though? When you take out the cocoa powder and chocolate syrup, what do you sub in? Maybe my brain is just done for the day, but I can't figure what to replace those things with.

I sub coffee powder, diluted in a little hot water, plus ginger and cinnamon spices, for the cocoa. As to the syrup, you could use almond milk, davincis, walden farms spreads,low fat Greek yog or sour cream, or just water!

I know Linda has used spiced apple cider powder instead of the cocoa. I have also used baja bobs drink mixes!

I have never used protein powder in mine, cos I like to keep the cals low!
I have found as long as I keep the balance of dry and wet ingredients roughly the same, you can't go wrong! My fav at the mo is the coffee cinnamon one, with chocolate almond ( just the extract) a close second!
Hope u get a microwave soon... I do think they are best suited to mic cooking!

Thanks, Joedi! Actually, I do have a micro, but it smells kinda hot when I use it and i'm afraid it's a fire waiting to happen. It's still under warranty, but I have to wait til Friday before a repairman can come out to see it (it's installed over my range or I'd take it out to get fixed. I need that darn micro!

Away on vacation this weekend... So I will have to start fresh on Tuesday. I have been pretty good with the LC today. Except for the Chai tea drink I bought... I thought it was plain but it may have had honey in it.

Mom, I posted my tweaks in our recipe thread, go have a look and there are several other ideas in there along with mine. I do use SF spiced cider mix, and I have also used muffin in the bran muffins, which turned out amazing!!! This is one of those muffins that you can tweak to your liking, maybe even making a savory one for a different flavor experience. AND I can't see why you couldn't use the wheat bran, as long as you are accounting for the calories, why not!!
