joedi--it is really tricky working with protein powder. The addition of the glucomannan really helps, as does using very fresh baking powder. Like Beeb said, you have to have enough liquid in there to make it kind of "gooey" and then underbake a bit. I got a really good rise when I made these--and the first batch I made were dry and inedible. The second batch, I undercooked (the tops still looked a little wet) and I let them sit for a bit, and they were really good.

Yes, like Ouiz said underbake a bit. I will say the batter looks like a muffin batter from a box mix. And let it sit for about 5 minutes after you mix it!! That is the key I think, also for a good rise.

If my darn camera was working I would take a picture of these. I made 6 so the muffin will be smaller if you make the recipe's 12. Mine are a very nice sized muffin, like a regular, in the box mix type muffin size.

Thai tom yum...71 cals/serving 4.2 NC just add a protein and voila!
Ingredients
3 cups chicken stock
1 tablespoon tom yum paste
1/2 clove garlic, finely chopped
3 stalks lemon grass, chopped
2 kaffir lime leaves
2 skinless, boneless chicken breast halves - shredded
4 ounces fresh mushrooms, thinly sliced
1 tablespoon fish sauce
1 tablespoon lime juice
1 teaspoon chopped green chile pepper
1 bunch fresh coriander, chopped
1 sprig fresh basil, chopped




Directions
1. In a large saucepan, bring the chicken stock to a boil. Stir in the tom yum paste and garlic, and cook for about 2 minutes. Stir in the lemon grass and kaffir lime leaves. Place the chicken in the saucepan, and cook 5 minutes, or until no longer pink and juices run clear.
2. Mix in the mushrooms. Add the fish sauce, lime juice, and green chile pepper. Continue cooking until well blended. Remove from heat, and serve warm with the coriander and basil.

OH, I love this soup!! Now to go find the ingredients like the kaffir lime leaves and tom yum paste! Any idea where?

do you have an asian market near you?
The kaffir can be subbed with lime rind
the lemon grass with lemon rind plus galangal or with ginger although not quite the same
The tom yum paste with any thai red curry paste.

Made a batch of the bran muffins beeb posted. Delicious, but sadly they just don't agree with me! Every time I have one, my tummy bloats and gurgles and I feel so uncomfortable.
Don't understand it, cos I eat lots of veggie fibres, and oat fiber most days.
I am gutted, as they are delicious, and low cal too!
Back to my staple, ouiz's super low cal DD muffin!

You just don't know until you try something, do you. But it was worth a shot, and now you know to just stick your your oat fiber muffins. Isn't it funny how different things upset different people, while others don't even have the slightest problem. Sorry your tummy didn't react well to that recipe.

OH, Joedi, I'm so sorry those muffins did that to you! It's was probably the wheat bran AND OAT fiber combined! Maybe you can try the recipe with more oat fiber and less bran? I would hate to see you waste ingredients, though.

Stick with the other muffin, you KNOW that's a winner for you!

I was wondering about that! I eat tons of oat fibre in the superlow cal muffin most days, and me and my stomach love them!

Since starting low carb, I have had practically no wheat at all, no bread pasta or anything. The wheat bran in these muffins must have been a shock to my system! Funny thing is, when on low fat, I ate TONS of the stuff (I was a dry cereal addict) with no problems at all!

How weird are our bodies?

They were so nice,though, I kept having another bite "just to be sure"...and was up all last night with a tight, gurgling tummy...I just wished I could unzip my belly and take the damn thing out!

Will try a half batch...with mostly oat fiber..maybe a little almond meal...I want to keep the cals nice and low!

Have you ever had this horrid reaction to other baked delights in past years? Various biscuits and scones and breads and cakes?

I'm thinking more that it wasn't wheat, as such, or gluten, but was the bran, which can really cause some bloat and almost double some folks up when it arrives in the intestines.

Glad that you love your oat fiber muffins so much though.

Same here! Also, are you using a sweetener that you usually don't use in other things? Sometimes we try a sweetener that just throws us right over the edge. If not, try the almond flour or even flax meal if you can tolerate the flax.

No, I have NEVER had this reaction before...I used to live on dry cereal..(mini wheatabix!) and scoffed cereal bars etc.
I think you may be right about the bran....I have had no bran muffins today...but DID put a sprinkle of Scandinavian Fiber sprinkles on my breakfast...10 mins later...tummy discomfort!
Wonder if I can build up a tolerance...diving face first into a batch of bran muffins probably wasn't the right way to go about it!

Bulgur Wheat/Kale/Chopped Veggie Salad

I made this today and I'm letting the flavors "meld and settle" to have for my side dish for tonight's dinner. It smells and from the little taste I took, even more !! Add a bit of protein like chicken and you will have a great DD meal!! This dish up PACKED with vitamins and minerals and the Bulgar wheat is a "healthy carb"!

Ingredients:

1.5 oz Kale, washed, center rib discarded, shredded and then "kneaded" with 1 tsp of salt to soften up the Kale.
1/4 cup Bulgur Wheat, cooked and cooled. (I used Hodgeson's Mill)
1/4 cup chopped onion
1/4 cup chopped pepper
1/4 cup chopped yellow squash
1/4 cup chopped cucumber
1/4 cup chopped red tomato
2 cloves garlic, chopped
1 tsp chopped ginger
3 TBS Fat Free Dressing of Choice (I used Maple Grove Farms FF Caesar for 15 cals for the 3 TBS)
2 tsp grated Parmesan cheese (optional)

MIx all ingredients together in a bowl, making sure to mix well. Refrigerate to let flavors mixed, after an hour or so and then enjoy!

Makes 2 servings

I mix everything in a onion soup crock, but any large mug would do. Microwave about 2 1/2 minutes or until it's not wet in the middle anymore. Serve warm or let chill in fridge. I also made a "frosting" using 1 TBS FF cream cheese, softened a bit in microwave, and mixed with a bit of vanilla DaVinci's SF syrup (or use any flavor you like) 15 Cals. Split the chilled muffin and put this frosting in the middle! YUMMY!!

Total for this muffin with frosting: 63 Cals using 1 tsp cinnamon and 60 Cals using 1/2 tsp cinnamon.

Total for this muffin without frosting: 48 Cals using 1 tsp cinnamon and 45 Cals using 1/2 tsp cinnamon.
OMG.......I took this recipe, doubled the ingredients (except for the Spiced Cider Mix, still used only 1 package), added 1 scoop of Whey Protein Powder, put it in my large donut pan and baked them at 350 degrees for about 12 minutes. This made 5 donuts!!

They came out tasting like Apple Cider Donuts and are only.......36 calories and 1g carb per serving!!

Argh! I was all excited about making th LF/LC Bran Muffins this evening and started measuring out ingredients... only to discover I don't have wheat bran! IU could have sworn I did! I am going to make them with almond flour and save them for UDs, I guess.

Chinese Spicy Green Beans

These taste just like the ones I have gotten from PF Changs or my favorite Chinese place. I added more chili peppers because I love hot things! Great for a DD or as a double serving on an UD!

1 pound fresh green beans
3 to 4 cloves garlic
1 teaspoon dried crushed red chili peppers or Rooster Sauce which is chili pepper sauce
1/3 cup water
2 Hoisin sauce (or a 2 teaspoon honey)
1 teapsoon white vinegar
1 teaspoon sesame oil
1/2 teaspoon salt
Cooking Spray

Preparation:
Wash and break off the stringy tips of the green beans and discard. Break each green bean in half. Crush, peel and finely chop the garlic.

To Cook:
Spray frying pan with cooking spray, add garlic and red chili peppers for a few seconds. Add green beans. Cook and stir for 1 minute. Add water, hoisin sauce, vinegar, sesame oil and salt. Reduce heat to low. Continue to pan fry until hot and beans are still a little crispy but tender.

Makes 4 servings

I love spicy foods, they seem more satisfying somehow...and 3-4 cloves garlic...definately my type of dish!

Will need to get myself some hoisin sauce, and sesame oil..plus some Kale for your last recipe!
