Thank you guys letting me know I am not the only one who isn't being as strict with the carbs. It really sounds like most of us are enjoying a bit higher carbs than we were eating prior to JUDDD. It is so nice to have the support and know that there is life beyond VLC. My body has been telling me to eat more variety for a long time and this just gave me the nudge to actually do it.

Great results, Naomi!

I'm careful with carbs for health reasons (avoid sugar and starch to avoid diabetes 2), but I'm more liberal with carbs on JUDDD on UDs in terms of things like hummus, brown rice, or lentils, and I feel fine this way. No cravings when I slightly increase carbs.

Hey all,

Just got done catching up. Congrats to you fantastic "losers"!

I lost a couple more lbs. on Saturday. I'm going to wait for a couple of days to weigh as I had a carbier weekend. Didn't ever overeat, just had more carbs than usual.

Today is a DD for me. Had a shake for breakfast, lc "oatmeal" for lunch and maybe another shake for dinner.

This is the one I made today .... it's the first one I've made so far:

135.5 total calories

1 c. Coconut Juice = 38 cal
1/4 c. nonfat Yogurt = 32.5 cal
1/2 med banana = 55 cal
2 c. Tangy Spinach mix = 10 cal
sweeten to taste with NuNaturals Stevia powder

The coconut juice gave me quite a bit of energy. But you could use any fruit juice. Or you could use more fruit and just add water (ex. 1 c. water and strawberries to taste) instead of juice. I'm going to experiment some more.

In your opinion are those noodles good? Do they still smell after you rinse them? Are they slimy or what? I heard they're clear and see-through. That kind of freaks me out a little. I know they're supposed to have a host of health benefits, but I'm hopelessly old-fashioned when it comes to food. I don't know if I want to try any kinky kind of food. But, they must have some redeeming quality, otherwise people wouldn't buy them.

With all this chatter about shirataki, I thought I'd share this shirataki noodle recipe I found ....

Shirataki Tofu Noodle Ramen

I made it tonight. It was a little too salty for my taste, much like the original ramen. Next time I'll leave out the salt.

Thank you, Clannad. I read the recipe and noted only 40 calories for an 8 oz. pack of noodles. If they taste like Ramen noodles, it sounds like something I can handle. With the spices, soy sauce, salt ,etc. I can see where it might taste too salty. The sweet and sour cabbage that Retro was eating sounded good too. I'll pass that recipe on to my friend who is doing JUDD with me.

LOL they aren't kinky, they are too squigly to stay kinked!

ANYWAY, I used to buy them, I HATE them if you try to make them spaghetti (w/ marinera, alfredo)... but if you make them in asian dishes (with peanut sauce, or in a stir fry) they are pretty good.

Re the Shirataki noodles: I will confine my answers to the non-tofu variety since I am most familiar with those. These include the Miracle Noodles and the noodles from Konjac Foods.

The noodles' taste is neither "good" nor "bad". I don't feel they have any particular taste on their own, but they do carry the taste of the sauce that you add to them.

Do they still smell after you rinse them?

No, they do not continue to smell after a good rinsing.

Are they slimy or what?

They are more chewy than slimy I would say. (The ones with the tofu are less chewy than the ones without, but still chewy.) The texture chewiness is kind of like calamari. Or perhaps like a gummy candy?

I heard they're clear and see-through. That kind of freaks me out a little.

The ones I get from Konjac Foods are more opaque than see-thru. Kind of white-ish. Hey, if you can get past the texture and the pre-rinsed smell, the color sure shouldn't be the deterrent!

Konjac (shirataki) IS an old-fashioned food -- for the Japanese. This is not a frankenfood -- there are no weird chemicals and dyes, etc. This is simply a root derivative, all fiber and non-digestible, therefore few-to-no calories/carbs. Still, I think any health benefit claims are bogus, which is frankly why I don't like the Miracle Noodles site. Yeah, they are mostly fiber, but you can get that elsewhere and some folks believe that fiber supplementation may be overrated anyway. Let's face it -- the reason people buy these noodles, me included, is to increase the bulk/volume of the food they are consuming without adding calories or carbs. Some people claim they are very filling and satisfying. I don't know about that -- I just know they give me some mouth action for very little caloric/carb cost. :blush:

I eat these constantly but I was NOT a pasta lover before low carb/low cal. I doubt that folks thinking of these as a pasta substitute will be pleased. It's best to think of them as a different food entirely, and not as a pasta replacement.

I use shirataki in any kind of broth or sauce where I would like the additional bulk of the noodles: Chicken soup, cabbage soup, cheese sauce, spaghetti sauce, peanut sauce, thai soup, stir fries, etc. I used the orzo rice-sized kind the other day to make a passable mock fried rice.

The thing that freaks me out is that, on HALF of my calculated BMR or less, I maintain... def. don't lose. That's why I am freaked out. BUT I will give it a fair shot before cutting calories.

Today is the day before my b-day and I forgot my gym stuff so I did the logical thing and accepted a lunch invitation :P Then tomorrow my hubby is taking me out to dinner so I am thinking I am doing two moderate days here... I had a protein shake for b-fast this morning because it was going to be a DD.

Weighed in at 288 even today, which is higher than what I weighed in the day after my first down day (which followed a low cal day because I was not hungry), but the lower end of where I have been hanging out the past several weeks (months?). I am hoping next week I will drop below that "average".

Thanks Maryposa for the feedback. A while back I bought something that was supposed to be a low carb noodle. It must have been the rubber band things Leo was talking about, because they went right in the garbage. I really loved Dreamfields while I was doing low carb. But now that I'm off Atkins I eat regular pasta on UD's. But I do want to find something that I can use in soups. The tofu noodles in stirfry might be worth a try.

I used the 'angel hair' shirataki tofu noodles for this and I thought it tasted pretty close to Ramen. The noodles are not exactly the same, but close. The spices in this recipe seemed to make it and the noodles just soak up the flavor. What I do is rinse very, very, very well in hot water. Then nuke them for a minute and half. It takes all the 'fishy' smell right out.

Redeemed, I've not seen shirataki noodles on netrition. I found mine at Whole Foods. But I think others have found them in their local grocery stores near the tofu section.

I have been lurking for a few days myself and love reading these threads. I just did a post on the tweaker thread because I have an idea for a plan I think will work for me.
Thought I would post here about some noodles I found called Pasta Slim. They are a type of shirataki, but have no wierd taste or stuff to rinse. I just run hot water over them to heat them up and drop them in whatever I am making. (especially love them in thai curries and asian stuff). The only ones my store has are like vermicelli. THey are more rubbery in texture than regular pasta, but for 40 calories and 1 net carb a bag (and I usually split a bag with hubby), they are a great on-plan substitute.
Anyway, if I start my plan, I will post more. Good luck and great losing to all of you!

Clannad- OMG I LOVE ramen, epsecially the saltiness. I have GOT to get some of those noodles!

DD today. It's also a day off, but I went and got my nails done, then went and browsed at a consignment shop to kill more time. Everything I tried on was too small or very unflattering... I was just about ready to cry until I found a pair of totally classic black Marc Jacobs slingbacks in my size for $22!!!!

Thought I would post here about some noodles I found called Pasta Slim. They are a type of shirataki, but have no wierd taste or stuff to rinse.
