P2 Asparagus

How do you all prepare your asparagus in p2? I'm so tired of steaming it!

Roasted with lemon juice. Lay asparagus spears in a baking dish or a jelly roll pan. Squeeze a wedge of lemon over the top. Sprinkle with salt & pepper. Roast at 375-400 for 20 mins or until desired doneness. Sometimes I would "cheat" a little and microwave the spears for 1 minute first to get them partially cooked. Yum.

Shelby, that does sound good! I just simmer them in either chicken or beef stock depending on what protein I'm eating and add tons or garlic and some salt.

Shelby I used your recipe and it was good. A nice change. I think I overdid the lemon so ill use less next time!

I do the exact same recipe as Shelby but I skip the oven. My piece of fish takes 3 minutes on the George Forman grill and so I put my asparagus in the microwave, covered for 3 minutes on high. It is a lifesaver when I'm cooking for my family but need to make my food separate. I can handle a 3 minute supper!

I cook it in chicken stock then when it's done I purée it into cream of asparagus soup (without the cream). It's really delicious.

Yup, steam and then puree. I used some cooked onion and garlic to flavour it. If you have good stock, it doesn't need much really.

I usually use ff broth in P2. I would think stock would be a no no?

I use a fat free stock from Campbell's. No difference in nutritional content from all the commercial broths I've seen. It does have dextrose, but low on the list of ingredients. I take my chanceswith 1 carb per serving.

Wow that was really good! So much better than steamed or grilled! It felt hearty and filling and I will definitely be making it again!

I made my asparagus soup today. I make my own broth, sit it in the refrigerator overnight, then in the am when it's cold you can just remove the hard layer of fat on the surface. It's really thick from the gelatin in the chicken bones so it makes excellent flavorful soup and salad dressings.
