Crock Pot Chicken Soup P2

Hey guys, I made this up but it is soooo good and easy! Just dump stir and wait! I like to put it on before work and it's ready for dinner! Oh and it makes plenty to freeze for leftovers!!!
1-2lbs of chicken breast
1 jar of your favorite P2 friendly salsa or fresh
1-2 zucchini chopped
1tbs cumin
1tbs chili seasoning
Salt to taste

Put everything in crockpot, stir, and set on low for 6-8 hours. When it's done stir and the chicken will naturally shred. I added a cup of chicken broth at the end to make it a little more soupy, but that's optional! Enjoy!

Just curious. With all that chicken in there, and I'm guessing it's all drenched in yummy liquid, making the weight unreliable even if you take it out and weigh it, how to figure out the portions? For this reason I've been too OCD to make anything more than double a recipe.

i think if you weight the chicken raw and figure out how many servings you have, once its done split the liquid evenly and then divide the chicken evenly as well. if you eyeball it you should be fairly accurate but you could definitely then weigh the cooked chicken and divide it up according to the original servings for more accuracy. sounds great though!

There is not an abundance of liquid but there is some, mainly chicken though. I weighed my chicken before so I knew how many servings it would make! Hope this helps!!!! Oh and it's even better the next day!

Fresh salsa is the only kind on protocal, I've always used organic that had no added sugars or oil and all veggies were allowed. Tonight in trying fresh salsa to see how it taste!!!! Can't wait!

I have some beautiful zucchini in the fridge, but I don't touch it cuz it's not on protocol. Do most of you eat zucchini? I'm not criticizing, just wondering. Have any of you had problems with it?

I make a similar soup using cabbage instead of zucchini. I also add garlic. Measuring it out is a little difficult. I measure before I make it to determine how many portions I will get then divide the finished pot by that many portions. I'm not sure if its that accurate but it's pretty close.

I would think zucchini would be fine.. I just entered the following into a calorie tracker:

Calories Carbs Fat Protein Fiber
Cucumber - With peel, raw, 0.5 cup slices 8 2 0 0 0
Zucchini, includes skin, raw, 0.5 cup, sliced 9 2 0 1 1

I have eaten a lot of zucchini and it hasn't effected my losses. I've lost 17.1lbs in 16 days, but everybody is different.

A cucumber is a cucumber and a zucchini is a zucchini. They are not the same thing...

Zucchini isn't on the original list but many people DO add it as well as broccoli, cauliflower, and brussels sprouts. Dr. S was pretty specific about what was and wasn't on protocol. Personally I stick to protocol foods. If you want to go rogue and add any or all of the above, it's TOTALLY fine. Just as long as you are aware that you are going outside of protocol.
