You'll get bored very quickly my dear! Expand your horizon. I do chicken, some white fish, extra lean ground beef, bison (which is even leaner than the extra lean beef), steak, the occasional eggs. And once a week you can do cottage cheese. I think the low fat or no fat variety.

Go check out the recipe sicky at the top of the forum. Lots of great ideas there!!I agree w. Mandy. You'll get bored quickly w. just chicken. You'll have to find some other protein sources. Shrimp, fish, eggs? Any of those work for you? I used ground chicken to make lettuce wraps (Braggs aminos, garlic, ginger, Splenda, splash of apple cider vinegar, onion powder) then wrap in a romaine lettuce leaf. a good way to mix up the chicken on protocol.I also made chicken "tacos" by dicing the chicken and cooking it w. some broth and "taco seasoning" - chili pwder, onion pwdr, garlic, cumin etc. Again w. the lettuce wraps. Good luck!

Do you like dijon mustard? My all time favorite P2 dish that I have almost every day is in the thread somewhere: Dijon Chicken and Cabbage. (It was originally a spinach recipe I found online). Basically you cube the chicken, with a bit of salt/pepper/onion powder... start cooking it in non-stick pan... when it's nearly done, you add garlic (and onion if you want), then you had two HUGE handfuls of shredded cabbage, about a quarter cup of chicken broth (can put this in sooner if you want - I am not a cook and am probably doing it wrong), organic dijon mustard (a couple squirts) and about a tablespoon or two of Braggs Liquid Aminos. Stir it around until the cabbage is how you like it. I like it still pretty crispy. Sometimes I add Stevia for more of a honey mustard taste.
So huge, filling and yummy. I've done it with tilapia too. And lean ground beef. Have also replaced the cabbage with asparagus.

There's also a Mexican Cilantro chicken recipe I found in the Tammy Skye HCG cookbook (I forget if it's the first or second one) that I made today... really good. it's going into my rotation.
When I have a chance I'll copy it down in the recipe thread, but the books are available online, or someone may have it. You can do the "fire roasted tomatoes" P2 chili recipe in the recipe thread with cubed chicken as well. |
