Here is the cheesecake recipe for anyone that wants it. It's awesome!

Low-carb Cheesecake

Take eggs and cream cheese out of fridge. They should be room temp when you start. If you forget, submerge them in a warm water bath. Pre-heat oven to 350.

Crust:
1 1/2c finely chopped nuts or nut flours (I like 3/4 to 1c almond flour and 3/4 to 1/2c other nuts like pecans or walnuts. I didn't like cashews or peanuts--they don’t crisp up enough)
4T melted butter
2T powdered sweetener
(can add 1T dark cocoa powder if appropriate for variation--see below)

Filling:
32oz (4 bars) cream cheese
1 1/3-1 1/2 c powdered sweetener (make sure you mix at least two types. All of one makes a very bitter cheesecake. I like 1/2c each erythritol, xylitol and Splenda
3 eggs (large) or 2 eggs (extra large/jumbo)
3 egg yolks
2t vanilla
2t lemon juice
16 ounces sour cream

Pulse nuts/nut flours together with sweetener in a food processor or chop finely, if using whole nuts. Add melted butter to all nuts/nut flours 1T at a time (can take 2-6T, depending on nuts used). When crust starts to come together in a ball, press into the bottom and up the sides of a 9-10 inch springform pan. Bake at 350 for 10 minutes or until crust starts to brown and is fragrant. Set aside and reduce oven temp to 325.

Start by beating the cream cheese on low until light and fluffy. Add the sugar substitute a little at a time and continue beating until creamy. Add one egg at a time and beat after each egg. When eggs have been mixed into the cream cheese, add vanilla and lemon juice, Add the sour cream last until just blended in (do not overmix at this point). Pour cream cheese mixture into the springform pan. Place on the top or middle rack of oven for one hour and 15 minutes (higher in the oven will make the top more brown). DO NOT OPEN THE OVEN FOR THE FIRST HOUR--this will cause the cheesecake to crack. When time is up, turn off the oven and prop open the oven door. The cheesecake will be a bit wobbly in the middle and a toothpick will not come out clean. This is ok. Leave in oven for one hour. After one hour, remove from oven. Run a knife around the edge of the cheesecake, so if it shrinks while cooling it will not crack at that time either. Let cool to just about room temperature and refrigerate at least overnight but preferably 24 hours to let the cheesecake season (it will be worth the wait--trust me). Serves 16. 319 Calories; 28g Fat (79.6% calories from fat); 9g Protein; 7g Carbohydrate; 1g Dietary Fiber


Variations:
This cheesecake is fabulous just plain or with a berry topping (and whipped cream of course!) BUT if you'd like a flavored cheesecake, swirl the following into the cheesecake batter after it is in the pan but before baking (put ingredient on top and swirl into batter with a butter knife)…

Berry Swirl Cheesecake – puree enough raspberries and strawberries together to make about ¾ - 1c puree. Swirl into batter.
Caramel Swirl Cheesecake – Omit lemon juice from cheesecake batter. Swirl in enough sugar-free caramel ice cream topping to make it pretty.
Chocolate Swirl Cheesecake – Omit lemon juice from cheesecake batter. Swirl in enough sugar-free fudge or chocolate ice cream topping to make it pretty (if using a very thick topping, mix a little of the topping with 1/2c cheesecake batter then swirl in).
Chocolate Mint Swirl Cheesecake – Omit lemon juice from cheesecake batter. Crush 3 or 4 sugar-free peppermints and mix with sugar-free chocolate ice cream topping. Swirl into batter.
Peanut Butter Cheesecake – Omit lemon juice from cheesecake batter. Mix 1/2c cheesecake batter with 1/2c peanut butter. Swirl into batter.
Turtle Cheesecake – Omit lemon juice from cheesecake batter. Mix 1/2c chopped peanuts with 1/2c sugar-free chocolate ice cream topping drop on top of batter. Criss-cross with sugar-free caramel topping. Swirl into batter.
Key Lime Cheesecake – Replace lemon juice with key lime or lime juice. Grate 3-4T of key lime or lime zest. Swirl into batter.
Mandarin Orange Cheesecake – Mostly drain a small can of no sugar mandarin oranges (leave a little juice). Grate the zest of one orange and combine with orange pulp. Swirl into batter.
White Chocolate Berry Cheesecake – Melt 1/2c of sugar-free white chocolate chips. Mix with 1/2c berry puree and a little cheesecake batter (mixture will be lumpy). Swirl into batter.
Lemon Cheesecake – Increase lemon juice to 3T. Grate 3-4T lemon zest and swirl into batter.
Pumpkin Cheesecake – Combine 1/2c of cheesecake batter with 1c pumpkin puree. Swirl into batter.

Lara I'm sooo sorry about the Candida. I really hope you feel better soon. Don't cheat. It's not worth it!

Shelby that is it! Isla Mujeres! So jealous of you. I hope to go there one day, it looks so awesome!

I haven't been diving in Mexico. Before I got certified we used to snorkel at Xel-Ha which is really neat have you been there? I don't know that you can dive there (it's mostly shallow) but it's cool. I hope to go to Isla Mujeres one of these days!

I hope the weather and diving is awesome!!!

I knew I could do a low carb pumpkin dish and had every plan to this week but then things got thrown off with my unexpected trip. I should not have given into the temptation but It is what it is.

Well i got on the scale today. .4 over my window!

Not good but not too terrible all things considered. I'm sure a truly clean eating day today will get me back in for tomorrows weigh in so I'm not going to worry.

Lara, so sorry about the candida. UGH! If you are having a pudding craving, have you ever made yourself a whipping cream mousse? That usually does it for me when I am having a craving. Put a cup of whipping cream in a small food processor or blender. Add a dash of vanilla, 1-2t cocoa powder, and some sweetener of choice. Blend until thick--usually no more than 30 seconds, scraping the sides as necessary. Sometimes I add a few strawberries for strawberry chocolate mousse in the middle. Try it. I doubt you'll be disappointed. And hey, if you can have coffee with cream on cd's, why not just...cream?
I didn't cheat, but the egg day went out the window... It was either that or cry at my desk silently.
I had sf chocolate covered almonds from See's and no gain at all. I will totally try the mouse and your cheesecake... is it really good cause I'm really picky and I've made like 2 cakes one cream cheese one chocolate made with black beans and tossed them onto the trash after one bite. They did look good tho, lol. I cant wait to have something sweet again.

I'm sts today woohoo. This has been the best p3 so far as far as maintaining within a week. I guess I'm really paying closer attention to every detail.

I think Julie And Dawn will be starting P3 in a few days though!

Congrats on Sts!! Glad P3 is going well for you! I'm really happy right now bc I am maintaining- I don't feel deprived and I'm really comfortable with my current weight! Yay!

I ate pretty clean yesterday although not perfect. But I'm back in my window! Under by .4! I'll likely be over a little tomorrow bc I'm going to Busch Gardens tonight with friends for "hallo- scream" and will probably have a few drinks! Going to try and keep my eating in check though bc I don't need to gain 4lbs like I did last Sat night at the game!

If I have to CD I'm going to try an egg day though!

I don't even like scary stuff or haunted houses so jeopardizing my diet for tonight is so not worth it but all my closest friends are going (w/o kids) which is so rare so I want to go.... Hope I dont hate it - hate horror stuff!

Hi Cocoa! When will you be joining us?

Julie I have to go out to Whole Foods soon. It's the only place I have seen the. Plain voskos!

I'm up .6 over my window today but I'm not too worried and I'm sure I'll get back down with a good clean eating day.

I wasn't perfect last night but made decent choices all things considered. For dinner I had a chicken salad and strawberries. Shared some pumpkin cheesecake with a friend but only a few bites. I drank but not TOO much. Two glasses of red wine and one beer. They had these vodka lemonade drinks and this sangria thAt I would have normally chosen but I didn't due to high sugar content. I don't think I need a CD and hopefully tomorrow I'll be back down...

Reddy-sounds like you're in control and making good choices!! WTG!!! I'm sure after a clean day you'll be back down!!

I'm coming!! I STS today, so I'll use yesterday as LDW. I'll be officially on P3 Tuesday morning!! Got the fridge stocked w. Voskos and I'll be buying HWC today!! I suspect eggs are a problem for me, which is a big bummer as they're usually one of my first choices in P3. Ideas? Bacon seems to be ok .

I'll be upping the fats today and tomorrow as I transition. I'm really happy!!

Right now it's looking like Friday will be my first day of P3. I was going to make it Saturday, but my parents are coming to visit this weekend and I would feel more comfortable if all my meals on P3D1 WEREN'T from restaurants, kwim?

Aww, that's so sweet! I'm inspiring? LOL! I'm just fighting the fight like everyone else. Thanks sweetie! I'm not sure about the eggs. I like them, but if I add them while I transition and bump up right away I'll . I don't want extra struggles, esp. that first week. I think I'll stick w. my GY for a few days and then see how "stable" I am!! Excited though!

So, I'm trying the ramp up plan. I am afraid of eggs b/c I think they may have stalled or made me gained in my last P3. So, I'll just add some "healthy" fats (cottage cheese today) and see how it goes. I'm coming in about 890cals . I hope I can STS tomorrow . 1 more VLCD, then I'm a bit more free to make choices. Made some chicken salad today, in anticipation. Making a roast beef in the crock pot tomorrow for the family, so leftovers of that will be nice too. I have leftover P2 foods too. I froze some other leftovers too. Should be set up for a while .

Looking forward to maitenance, but I don't want to slack off .

Julie - I added some fat in on my transition to my PI in the form of cream and butter (had bulletproof coffee and coffee with cream) and actually LOST weight, lol! I was stuck around 164, but dropped to 163 one day and 162 the next. And that was with an extra 500 cals of fat.. You'll probably be totally fine!

Makes me think I should just fat fast into P3 now

Ooh, that sounds really encouraging to me!! I would love that (of course!!). Have you FFed on P2 yet? It was really tempting for me w/ my long stall. Keep us posted. I think you're making a good choice, btw., on Friday. I'm hoping to avoid restaurants (aside from a fast food hamburger - managed that fine in P2) for a while myself. But dh and the kids are anxiously waiting for me to eat out again w. them. Ah, social pressure kills my weight loss and likely maintenance plans! But, being a hermit wouldn't be much fun .

Thanks, I figured the one day difference wouldn't be too bad! I have not FF'ed on P2 yet but that may change this week..I swear I'm pretty protocol normally but I've been experimenting lately..guilty as charged

I've been thinking about doing the P3 transition as a FF, like Aubrey did. I know I thought about it a few weeks ago and was really intrigued by her (and other) experiences. But it's soooooo breaking the rules..lol! If I do it I'll let you know how it went..if I survive!!

Reddy-given your rocky start, and my past experiences fighting the top end of my window to stabilize, I would. If you can manage it. I'd do a CD early, drop down lower in the window which will make maintaining easier the next few weeks. That's just my $0.02. I regret not CDing at the top of my window early in my last P3.

Cocoa-I had the same dilema. I liked the "idea" of a successful FF, but I was too scared to try! .

The added fat and cals didn't hurt my day yesterday. I'm down 0.4, to 142.8 this morning!! WOOHOO!! Makes me happy!!

I think I'll try an egg day bc I don't know that I can swig a steak day...

Unless I do a steak day where I eat one for lunch and one for Dinner which I bet will still work.

Egg days are so much nicer than steak days and I dont feel the need to eat everything in sight the next day lol.

I'm thinking about excersizing for the next 3 months to see if it will help me maintain and or loose.... it usually doesnt make me gain but then again I never really stick to the plan of doing it everyday lol. I'm on week 2 p3.....

Yes Julie, you are so inspiring to me. To think of how much you have lost and how far you have come, it shows that it CAN be done and that it's all about changing our ways and being committed which you really have been.

You do it all and make it look easy but I know it was not and that you worked VERY hard to get here! And I'm sooo happy for you that you have gotten to your goal and can now work on Lifelong maintenance as a skinny minnie, strong and fit person!

Thank you for always being so supportive and encouraging, I have come to rely on you so much here... you are often the voice of reason and encouragement and I really appreciate it!

So the average on this egg day for me has been 1-2 lbs lost,
I usualy have 3 breakfast two lunch and two more for dinner... you may have up to 12 though....I drink coffee with cream splenda is ok diet drinks are okay...
In my omlet I use cream and cheese and salsa...
and lunch is two hard boiled with mayo....

so ya mayo cheese is ok and butter too.

Reddy--yes you can have 10-12 eggs. You should enjoy your egg day! I love doing one. I will remind you that I sometimes get the weight loss the day after doing the egg day. To state it differently, I will get no change on the scale the very next day of the egg day, the day AFTER that egg day weigh in I lose. So if you don't get back down tomorrow, wait til the next day eating a clean P3 for the day. Clean means NO NUTS, NO CHEESE, AND by golly, NO ALCOHOLIC DRINKS!!! Good luck!!! I see you have some company.

I only meant by "rocky start" that you were out of window after your ball game. I tend to gain up to the top of my window right away and then struggle to stay in my whole P3. If that happens for me this time, I will CD early on, even if I'm "in", so that I can stabilize on the lower side. At least that's my plan . I know it wasn't a real gain from regular P3 eating. I just don't want my body to gravitate toward the higher end right away.
Thanks sweetie! I do work at it, but it's been a great journey!! I'm certainly not "done", but I'm really happy to start this chapter in my life!! I wish I'd gotten here when I was your age!! You have the tools to add to your family and get back to your slim self! It's so nice to be free and empowered to live life in control, isn't it?

And, fwiw, I do 2 steaks on most of my steak days . I lost as well on the 2 steak days and I enjoyed them much more!! I don't lose on egg CDs, although they are satisfying and enjoyable. I was really ticked though. I do best on steak and GYCDs. I'm sure I'll see soon enough this P3 .

Lara- at your exercise talk . I gain w. it, but love it. So good for us!! I'll add it more intensely once I'm through vacation and Christmas and still in "range". I'll have my hands full maintaining as it is!!

No Cheese??? Well shoot, I just had an omelette with cheese! And I cooked it with Butter!! I hope I didn't just screw that up!!! I thought you could have some cheese as well as a little bit of Mayo to make egg salad. I didn't realize I was wrong.

So far I've only had a cup of coffee with HNF and then a 3 egg omlette with Cheese and it's now 1:30. I figured Egg salad for dinner and then probably after dinner some more eggs if I'm hungry.

Hopefully I will see the loss tomorrow but I'll take your advice regarding the second day rule and not worry too much.

How are you doing on the scale today? I know you were thinking of calling the round but then you lost and so you're back on. If you stay on, when would you be coming over here?

I totally know what you mean. I was lucky to stabilize last time at the bottom of my window. I was amazed to stay about 1lb BELOW LDW for the last two weeks of P3. This time I'm over but it's very understandable given my "cheats" I'm sure once I have a full week or two of truly clean P3 I'll be ok. And I feel good about it. But I'd like to be IN the window for the sake of long term maintenance.

I hope that I can lose on this egg day. I don't expect much, I was down 4lbs after my steak day but If I can just lose one lb with this that will be just fine. So far egg day isn't bad but I suspect my need for something sweet will hit. I'll just have coffee with cream to satisfy that!

I'm worried I screwed up with the cheese though.

I am glad to know I can do a 2 steak day if I do another CD. That seems so much more palatable.

It really DOES feel good to be in control and feel good about where I'm at. No more stressing how fat I am. I've been getting a lot of compliments too... on FB, and in person and it's very validating!

I'm so glad you're starting P3 soon with us!

I don't know when I will be done with this round. I am on Day #21 this Wednesday. So I can technically be done this week. However I am about 8 or so pounds from goal. If I lose this week, I am going to continue. I am taking it day by day at this point. I was going to quit last week, but then had a whoosh. So I am the smallest I have been in several months. Very happy about that!!!
