Where Did I Go Wrong? [Cocoa Crack]

Today was my first day making cocoa crack and I admit I didn't spare a lot of time for it but it turned out okay. I can't say it was as tasty as everyone keeps saying it is (probably because of my own mistakes) but it was okay. Anyways, what I noticed was that the edible parts were the sides of the chocolate. The center was incredibly bitter and didn't even freeze - I had to throw it away after I had the sides. So, my question is, where did I go wrong? Why did the center not taste like the sides? Does anyone know how I can make the perfect crack? I'm open to any suggestions!

p.s. Here's the recipe I used.

3*servings*coconut oil
3*servings*xylitol (I added some raw stevia to this and think that's the reason why the sides turned out a little too sweet)
1*serving*coconut flakes
0.4 tbsp vanilla extract
3 tbsps cocoa powder

1. Melt all ingredients in pan stirring until smooth.
2. Pour on wax paper or in paper cups and put in freezer for 10 minutes or until frozen.
3. Break apart (if poured on wax paper) and store in zip lock bags in the freezer. Enjoy!

What is a "serving"? I think Emel had a recipe on here a while back...let me see if I can find it...

Here ya go (I think this is hers??? if not apologies to Emel AND the OP!). I make this without the coconut and other additives because I like my chocolate kind of plain...

Cocoa “Crack”


¼ c (4T) coconut oil

2T cocoa
2T vanilla protein powder
2t xylitol or erythritol or Splenda to taste
2t vanilla extract
pinch salt
¼ c unsweetened coconut
¼ c finely chopped macadamia nuts, walnuts, pecans



Melt coconut oil in microwave safe container (I use a 2c glass pirex measuring cup). Add powdered sweetener to 1 T of water, cream or liquid sweetener/sugar free syrup and stir until dissolved. Add other ingredients to coconut oil and stir until combined. Pour or spoon into candy molds or in a flat pan with sides and put in freezer until set. The protein powder, coconut flakes, and nuts can all be omitted or changed. You can sub in ¼ c almond or peanut butter, chopped dried fruit, almond flour, different flavors of protein powder, more or less coconut, chopped dark chocolate, etc. You can also experiment with sweeteners to find the best combo and level of sweetness for your tastes. Obviously you can increase the amounts to double or triple the recipe, as well.
