Please help me with chicken...

I need easy and most importantly quick ways to prepare chicken. I just don't want to mess with a complicated recipe after teaching all day and taking my son to taekwando four nights a week. I'm not using Melba or grissini so no coating the chicken...just a straightforward way of cooking it so it doesn't taste like rubber or shoe leather! (So I may not be the world's greatest cook.) I really want to stick to plan this time and if meals are quick and easy I can do it...otherwise, I give up. Thanks so much! (PS - I tried it on the Foreman grill and didn't like the way it came out.)

I seasoned mine after slicing into bite size chunks, then put it in the toaster oven for about 7 min on 350. Juicy every time! Good luck I hope you find a way to make & like it!

Doxie I have to precook or I don't do well. Sadly I don't care for reheated chicken, so I often eat it cold.
What I do is cook my breasts in a skillet with some 'Better than bullion' and a bit of salt, pepper, garlic and onion powder, Then I store it. I make variety by using dips. But it depends on what dips you like. Franks red hot is good, so is NSA pizza sauce. Also I will toss it in with a big spinach salad with Walden Farms dressing. Lots of people don't like WF, But I like most of them enough to get thru P2.

I am just getting restarted so this is my plan for this week.

Costco makes this pre cooked chicken strips with no added stuff and its very convienient... just grab some strips even dip in mustard and youre done. I think it was foster farms but cant remember

heat oven to 350
put chicken (breasts or thighs, doesn't matter) into an oven safe pan or glass dish (put a bit of oil in it first, spread that around)
spread some mayo on the chicken-- for food safety, scoop with one spoon and spread with another or your hand (don't double-dip from chicken back to mayo jar)
now sprinkle with ground pepper, and lots of grated parmesan

bake for about 30 min or until the chicken is done (cut into one piece in the middle and make sure it's only barely pink or not at all).

let set for maybe 5 minutes out of the oven, and eat.

works with pork chops too

eta: I've done this with frozen chicken, not even defrosting it, and let it cook longer, like an hour.

Yes, I am looking for P2 ways to cook chicken - sorry that I didn't clarify that! But the Parmesan chicken sounds wonderful and I will definitely keep it in mind if/when I get to P3! i don't know why I'm having so much trouble getting motivated! Thank you all for your suggestions...

do you like chicken salad? you could make a salad out of your veggie of choice with some chopped apple, and an vinear based dressing wth ginger and other spices and then add your cold chopped precooked chicken to the salad. I used to do that with precooked shrimp. in the Simeon's recipe only thread I made a few delicious P2 salads with the meat , fruit and veggie that were very flavorful, easy and could be made ahead to marinate in the flavor till meal time.
