I bought cabbage - now what?
I've read you can rice it, steam it, make it into eggrolls but can we start at the basics, PLEASE!
I have a head of cabbage. Do I slice it? Do I just throw the whole head in a pot of water? How do you rice a cabbage? What can I make with this huge, green, firm, vegetable? Please someone out here, HELP ME. I am in a cabbage fog! |

Here is my favorite phase 2 cabbage salad. To slice it, cut it in half, take out the core then slice it really thin. If yo have a food processor then just put in your thin slicing blade and let it slice it all up for you! :-)
Cabbage Salad Recipe 6 TBSP Apple Cider Vinegar 6 TBSP water ( in ph 3& 4 use olive oil) stevia to taste 1/2 tsp dry mustard 1/2 tsp caraway seed (optional) 1/8-1/2 tsp pepper to taste 1. Thinly slice your cabbage and put in a bowl. 2. Mix the dressing ingredients with a whisk. 3. Pour dressing over the cabbage and toss well. Refrigerate for 1 hour, toss again and serve. Toss before serving. The longer you refrigerate it the better it tastes. Toss often for the best taste. Variations: This dressing is fabulous on cucumbers. Check out my "skillet meals" in the HCG SHort Form stickie at the top of the forum. I eat one of these almost every night on P2. Cabbage is just one of the fun veegie that I use but it's definitely one of the most filling and my personal favorite.

I like cabbage, so I am fine with just cutting of a 3.5 oz size wedge and eating it raw, but it can be kind of spicy. I also like to steam it for about 5-10 minutes, so that it is still firm and not soggy. I'll steam about 3 servings at one time then put in ziploc baggies in the fridge.
You can slice it up and use it in place of lettuce in salad, or I use it to make lettuce wraps with ground beef or diced, seasoned chicken. Just pull off a leaf and make a taco shell shape and put your meat portion in it. |

I cannot stand raw cabbage, unless I am on P3 or beyond. Has to have creamy dressing on it like in a cole slaw. Otherwise cook it please!!! Chop it fine and cook it on the stovetop. I mostly stirfry and on P2, I use either water or chicken broth. I add my favorite seasonings (onion powder, garlic powder and a bit of salt) and then eat about 10 or 15 mins. later. Very yummy. I am thinking that the ricing you are talking about is for cauliflower--cabbage is too tough a veggie to rice. But I could be wrong. I love using cabbage on P2 because you can have a lot and it really fills you up!
