Cooking ahead: anyone freeze grilled chix?
I always do better when I do food prep and/or cooking ahead. So yesterday I made a LOT of grilled chicken breast on the GF.
Has anyone ever frozen grilled chicken breast, and then defrosted it and eaten it? Wondering if it is ok. I think Sysco, the corporate food provider, does this. Anyone? |

Hi there ellenalesa. I have not grilled chicken and frozen but I have cooked a simple Crock Pot Chicken and then bagged it individually with some of the juices. It can then be thawed and tastes as good and moist as if it was just cooked. I then bag all of the small individually bagged servings in one large gallon size freezer bag. Here's the recipe:
Crockpot Chicken or Beef You can cook several pounds of chicken/beef ahead and freeze for convenience. 2 pounds chicken/beef 1 tsp. garlic powder 1 tsp. onion powder 1 tsp. paprika 1 tsp. salt 1 tsp. pepper Water Place all ingredients in a crockpot and add enough water to cover. Cook for 8-9 hours on low until chicken/beef is very tender. Remove meat from crockpot and shred. Divide into 8 individual servings and place in small containers. Add 1-2 Tbsp. broth to each serving to keep moist. Seal and freeze. Hint: chill beef broth and skim off fat before using. Save remainder of broth for use in other recipes. 8 servings Betty

I cook up the portions then put them into small snack/sandwhich baggies, then each of those baggies into a gallon freezer baggie. I also make large batches of phase 2 soups: taco, chili, celery, green onion, and freeze them in quart freezer baggies flat. Then I pick out the soup and meat I want in it to thaw in the morning.
