The P2 AND P3 thread! :)

HEY!!!!!!!!

So I think it will help us keep track of each other if we all post here. It will also help remind me what I did on P3.

Here is the link to the old P3 that had what we ate. I think we need to continue posting what we eat here too whether in P2 or P3. I think it will help others and for us to keep track too

I feel your next round will be better. It will be Spring! Time for renewal!

I'm trying to be positive, work is so stressful I had an anxiety attack a bit ago, thanks for xanax and a supportive hubby. The life of a high school counselor is insanely stressful especially when you work for a Title 1 (AKA high poverty) school. Everything is triple time more work and you work with so many outside angencies to provide the appropriate services for the students and families. Plus the documentation is more than say a school in a higher income area.
I'm actively looking for another job and keep praying. I know God put me here for a reason and I need to put my trust in him, but days like today after getting 5 emails from the Prinicpal on a SUNDAY sent me over the edge. I never take anxiety meds, but I took a xanax because I swore I was going to have a full fledged panic attack, my hands were shaking etc. I NEVER get that way, it scared me...I'm usually the calm and collected person, but like my husband said, I'm only human and even superman has his weakness

Feeling much better, and trying to enjoy the rest of my Sunday and NOT reading school e-mails, which is hard since they go directly to my phone!

Ok my vent is over lol....I miss my wine, that's my de-stresser! One glass when feeling anxious is all I need.

I can't imagine what it's like for you! I'm sure you're trying to save the world, but let's go for one student at a time not the entire student body!!!

Our school system has now added counceling services to the IEP! No more just as needed, no this is a mandated time and service amount for our already over-worked counselor. I'm sorry because some of these kids need help beyond the realm of a school counselor.

I pray you find a less stressful job because messing with your health is bad. I know God is using you there to help those kids, but He also says He won't give more than we can handle...

I have a feeling I'll find something, if not then for next year. But I just have to prioritize. I'm logging all I do so if I'm asked why x and y didn't get done I can show my log.
Elementary and high school counselor have the Most demanding jobs IMHO. Middle school doesn't have as much accountability falling in the counselor. I'm like a one man show because I service the ESOL population. Triple times more work!

Btw did you keep your cream with coffee? I have a recipe for buffalo chicken dip that's easy peasy and P3 friendly. Have to find it and post!

Can't wait for P3!!!!

I thought I'd posted something on here but maybe it went awry...

You guys might consider thinking up a cute name for yourselves and posting a new thread if you want to stay in touch. A lot of groups that start rounds together do that very thing. You've probably seen the "Red Hots" thread here. Anyway--just a thought since "the P2 and P3 thread" might be a little confusing to some.

Oh and feel free to tell me to MYOB...

Sunny - Wow, yes the lower poverty level I can imagine is very stressful and demanding esp since those a lot of the parents aren't as concerned b/c they may be concerned w/ other things, yet a lot of them are concerned. I live in what I feel is a lower class area. I grew up here in the city I live in and it's def not what it used to be. I have 2 younger boy cousins who go to Elementary & Middle school and my Uncle died so all they have is Mother who is a crack addcit and a naive Grandma. I try to help them as much as I can but there's so much trouble to get into when you don't have a structured/moral upbringing. I just cannot imagine what the faculty goes thru! Hats off to teachers, couselors and all others at the schools! You too Jeanette!!!

THanks Natasha...anywhere you work is hard with students. I actually was looking at a job as a virtual spanish teacher, I get paid more and can work from home. The job is demanding, but what I have now is demanding as it is. I used to be a Spanish teacher so I am certified.

I should have a burger for dinner...I just don't do well with losses if I have beef twice in the day. Make some for lunch tomorrow!

What's your P3 menu for day one going to be?

Sunny - My burger was ground turkey w/ grill seasonings! The job working at home, getting paid more sounds GREAT! I work at home 2 days a week and love it!

My Menu for Tuesday at work will be:

Breakfast - 3 scrambled eggs & 2 sausage patties from work cafe...I'll bring my own cheese from home
Lunch - Thinking about running to this local deli they have salads that are wonderful! I'll get the one w/ diced hb egg, avocados, bacon, tomatoes w/ ranch!
Snack - Apple microwaved w/ some sf syrup & a few pecans
Dinner - Probably make a taco salad w/ the leftover turkey taco meat I have. It will be so nice to have sour cream, salsa, taco sauce, jalapenos, cheese on my salad!

Wednesday I'll be working at home so thinking a big omelete w/ bacon. I'm baking all the bacon in the oven for the first time! I'm getting up an hour earlier than ususal so I can cook and eat before logging on! Then tuna salad for lunch. When I get off I'm making a batch of Sheri's Creamy Southwestern Taco Soup. It's handy to have to take for lunch. I'm thinking Friday at lunch about making a pizza. I found a couple of new recipes I want to make for P3:

Pizza Crust:
2 eggs
1 8oz package cream cheese or Neufchatel cheese, brought to room temperature
1 cup parmesan cheese - shredded or grated
Preheat oven to 350.

In a large mixing bowl, combine the eggs, cream cheese and parmesan and mix well with a fork or spatula. Don't panic if the mix looks very wet and runny, it will firm up as it bakes. Coat the 9x13" baking pan with the cooking spray, then spread the mixture to cover the bottom of the pan. Place pan on a rack in the middle of oven and bake for 30 minutes, or until crust is firm and lightly browned. They say it holds up so I'm going to try it!

CHEESY BROCCOLI CASSEROLE
14-16 ounce package frozen broccoli florets
4 ounces cream cheese, softened
4 ounces cheddar cheese, shredded
4 green onions, chopped
Salt and pepper, to taste
3 pieces bacon, chopped and fried until crisp
Cook the broccoli 4-5 minutes or just until tender-crisp; drain very well. Put in a greased 2-quart casserole. Mix in the cream cheese, cheddar, green onion, salt, pepper and bacon. Bake at 350ş for 20-30 minutes, until bubbly.

Broccoli and Italian Sausage Egg Muffins

1 pound Italian Sausage (sweet, mild, hot variety depending on your preference)
1 cup broccoli florets
8 large eggs
1/4 cup milk (or half and half depending on how you're feeling that day)
1/2 tbsp vegetable oil
1/2 tsp baking powder
salt & pepper to taste
Freshly grated Parmesan Cheese as needed

1. Preheat oven to 375 F.
2. In a large saute pan, over medium high heat, brown Italian Sausage for about 5 minutes, or until the sausage is no longer pink. Remove from heat and stir in broccoli.
3. Whisk together eggs, milk, oil and baking powder. Season with salt and pepper.
4. Lightly spray a 12 muffin pan with oil. Spoon out the sausage and broccoli mixture evenly.
5. Ladle the egg mixture over sausage and broccoli.
6. Sprinkle with Parmesan cheese.
7. Bake for 15-20 minutes.

Found this one think I like it better than the one above. But will also add the crumbled bacon & green onions to this one and use the chicken/shroom soup b/c it's lower in carbs.

CREAMY CHICKEN & BROCCOLI CASSEROLE
3 chicken breasts, cooked & shredded
2 cans of cream of chicken soup
1 cup of mayo
1 cup shredded cheddar cheese
1 cup colby & monterrey jack cheese
1 bag frozen broccoli,thawed and chopped
salt & pepper to taste

Mix all ingredients, transfer into a lightly greased 2 qt. casserole dish & heat oven to 375. Bake 30 mins or until bubbly/golden brown.

I made the pizza in my last P3 - it was excellent. All these wonderful recipes have my mouth watering for P3 next week.

I made the P2 chili today and added a twist (for me at least) - I used two cans of tomatoes - one with basil and something else added - it was great and smelled awesome. I am not very adventuresome with my food - so I was afraid I'd add the basil tomatoes and hate them.

I love Cleo's pizza! My friend is doing low carb (with my help) and she's lost 21 pounds in 6 weeks. She has between 60-100 carbs a day. I made blueberry oopsies for her. I can't wait to have those myself next Sunday! I have blueberry stains on my fingertips....ha ha ha!

The basil tomatoes sound delicious! I may have to try that tomorrow!

Natasha, you're killing me with those recipes, but excited too!

I LOVE basil mostly in italian dishes. I buy a Ms Dash blend thats "Tomato Basil Garlic" I think and it has oregano, rosemary, basil, parsley, sweet chili pepper, bay, marjoram and who knows what else. I love to use it in my spaghetti sauces and pizza sauces!

Jeanette - Give me the blueberry oopsie recipe. I might try that!!

But I can't complain at how I can eat like a healthy individual with complex carbs on P4...I hope this round is the same!

Hi Everyone!
So happy to be joining in with the P3 group. Today was my first official P3 day:
breakfast : 2 eggs with a little leftover ground beef made with coconut oil - coffee
lunch: spinach salad with bacon and walnuts
snack: ostrich beef stick with 10 almonds (god I missed my almonds)
dinner: steak with steamed zucchini and cauliflower casserole.

My stomach as been very bloated and grumbling all day. I think adding back in the fats is a shock in the beginning. I find day 1 hard because you look at all these foods that you can eat again and you want it!
I have stupid question: does popcorn count as a starch? I know it has carbs so I will assume I shouldn't eat it on P3?
Oh and my LDW is 139 lbs - now to hold it!

Hey PenPen! Popcorn is off limits in P3 - it's a starch! I have enjoyed it for a about a week in P2 when I went Rogue/Omaha but will have to ditch it for P3! No fun!

Yes no popcorn but I added it in P4

I had awful tummy pain my first day of P3...hoping when I get to P3 in two weeks it won't be agony again!

I also was gassy lol!

I've never had ostrich! I eat buffalo now in my P2 and buffalo steaks but I heard ostrich is fantastic.

What is your meal plan for tomorrow? I forgot my fruit today so I hope I'm not too low in calories! This P2 has been slowwwwww

OOPSIES are a must! It is not hard at all, I can make it practically with one hand tied behind my back now...

Low Carb OOPSIE BREAD
Double Batch Recipe (makes 12)
6 lg eggs
dash salt
1/4 tsp cream of tartar
6 oz cream cheese
1/2 tsp baking powder

Separate the eggs while still cold (yolk is more stable). Let them come to room temperature. I let the cream cheese sit out during this time as well. OPTIONAL - For added ease of whipping your egg whites, I put the glass bowl and the beaters in the freezer during this time.

I whipped the eggs with the salt for about 1 minute, then added cream of tartar and whipped for 3-4 more minutes (soft peaks). Then I take the beaters and in the the separate bowl, I beat the egg yolks, cream cheese, baking powder (and whatever seasonings I may be adding). It kind of looks like cottage cheese. Then I slowly folded the whites into the yolk mixture until most of the whites were incorporated. It wasn't perfectly mixed in but that's not possible without breaking down the whites.

I used two muffin top pans (ordered them online) and they are perfect bun size. Or you can scoop out the mixture onto two baking sheets lined with parchment paper and put in a 300 deg oven for 35 minutes.

I let them cool on the pans though just in case the centers needed that residual heat to finish cooking.

Change Ingredients in the yolks for a variety
Sweet Roll –
Add splenda & cinnamon to the yolk mixture

Savory roll - add sesame seeds, onion powder, garlic powder, etc. to yolk mixture.

If you want to add blueberries:
Add 10 packs of Splenda (or other sweetner) to the yolk mixture. Add 1 tsp of vanilla extract. Drain the blueberries (if using frozen). Add 3/4 cup of blueberries at the very end of the process, right before you put it in the pan to bake.

Use Your Imagination!

You can make them in a variety of sizes and use them for PITA bread, cream puffs, buns, sweet rolls, angel food cake, etc.

Low Carb OOPSIE BREAD - these taste like plain white bread

I will send pictures next batch.

I store them in the perfect size dish from the Dollar Tree. I don't remember the exact size but it's like a 9x13 pan. I layer them as follows: paper towels, 6 oopsies (3 in each row), paper towels, 6 more oopsies, then paper towels. I put it in the fridge.

Well I think I already knew the answer to the popcorn question but...I found some at the health food store that was really low in calories and actually really good. Guess I will have to stick it in my son's lunch this week!
I keep hearing everyone talk about the oopsie rolls but the one time I made them they were nasty. Maybe I will give it another try.

Tomorrow
breakfast: eggs with coconut oil and cheese
lunch: leftover cauliflower casserole with chicken
snack: strawberries
dinner: up to my son, it is his 12th birthday and he gets to pick. Hoping for Duffy's so I can get the Cobb salad.
Also I hear everyone talk about the fage yogurt. When I look at even the 0% they still have sugar. I thought we couldn't do sugar in P3? I do miss eating yogurt, I gave it up months ago.

ME TOO! Especially the cauliflower crust. I just started making the "breadsticks", which I like even better! I brush garlic butter over them, YUM! Can't wait for P3!
