Cornish hens!!! That's what hubby is making...how have I forgotten these yummy little chicks?
Veggie medley, yummy yumm!
Having only one glass of wine, since I have to go to work tomorrow (ugh)
Here's hoping for more losses for you P2 ladies!!!

I can't wait for P4...I miss my nightly glass of wine with wheat toast points with brie, fig paste and walnuts! I limit to just two pieces, but it's so rich it's all I need!

Sounds delicious! Do you make your own fig paste, or do you buy it? I've never heard of that, but I love fresh figs! It's so GOURMET!

Shelby those wings would kill me, and I think I like it "hot" but when you listed all those peppers my eyes turned read and my nose started running at the thought!!!! I would love your BBQ sauce recipe please (once you were able to recreate it).....

Marie, here's hoping it's a STICK! I've been thinking all day what if I'm up tomorrow? I've already told everyone, I even posted on facebook. So I will just be embarrassed if that happens. Oh well, it is what it is!

I buy the fig paste at whole foods, it's in a little jar next to the cheese counter
It's fabulous with Brie and walnuts or almonds... We throw in cranberries too...

SHELBY - WOW! I got hot wings Friday night and was about to bust after eating 7! That's usually my limit! They were amazing but yea no longer a WING QUEEN here...

Sunny - Happy Anniversary! DH & I is Feb 10th! I think we are going to make it a Anni/VDay trip to Carrabba's one night next week.

WELL we partied last night for StepMom's birthday. I had a 32oz marg & a 12oz marg. That was it, I didn't drink back at the house afterwards. We played a drinking game "I've Never" and I drank water! LOL I DID partake in the cookie cake though and it was amazing! This morning my tummy was killing me. I guess all the sugar and the jalapenos I had on my taco salad at lunch Friday! UGH!!! At least I'm cleaned out now! Their scale showed me at 190.5 but I doubt very seriously that's what mine will read. So tomorrow we shall see. Today back on track 100% so we will see at 6am! Good evening ladies! Go GIANTS!

Who posted fried almonds? Well I did my version of a packet of truvia, 2 tablespoon butter, cinnamon and sprinkle of sea salt, fried in a skillet, was to die for!!! Hubby ate half and didn't realize I made them with truvia until I told him!!!! I have a gas stove so they cooked fast in about two minutes...yummyyyyyyy!!!!

Someone in the fat fast thread talked about them. How did you do yours? Mine didn't turn out very well...What was your almond/butter ratio? Plus I think I overcooked mine because I had them on way longer than 2 mins!

Also tell me more about the wheat toast/brie/fig spread combo? Do I have that right? That sounds right up my alley!

Oh yea!!! I was wondering where I saw it!

Well I just took a cast iron skillet, added 1 tbs and 1/2 of butter, added a truvia packet, three shakes of cinnamon, handful (about 1/2 cup) almonds and a sprinkle of sea salt, sauteed on medium low (I have a gas stove) for two minutes and taaadaaaaa!!!!!! Yummy fried almonds!!!!

Hubby hated artificial sweetners and he said to me "I'd have them again"...this coming from a former chef

I'll be making these again tomorrow

As for the brie fig spread....you get a round brie wheel, cut it in half, spread fig paste on bottom layer, add crushed walnuts and cranberries, then add top brie layer back on. Let sit for a day in fridge, take out next day for 30 min before cutting into it, cut a wedge, add to toasted wheat points...it is AMAZING!!!!!!!!!!!!!!!!!!!!!!! With a glass of wine of course! I prefer a Spanish red wine with it

You lucky, lucky gal! Your hubby is a chef?? I would die. I love to cook but would love it if the BF would take the reins once (besides grilling).
Thanks for the brie idea too, I LOVE cheese... Costco one time had goat cheese that was rolled in blueberries, let me tell you that was probably one of the best things I have ever eaten. Thanks for all the info! I will try the fried almonds again, I think I had WAAAYYY too much cinnamon and I cooked them way,way tooo long. They were still edible but nothing to go crazy over.
I am starting P2 again tomorrow so all of these yummy ideas are going to have to wait!

Yup he was a chef, trained and worked at a frou frou restaurant for years before he had a career change. It amazing, but at the same tIme the reason I weighed 178 pounds at 5 ft!
He's now learning to adapt with me but alas, that's why p2 is SO PAINFUL AND AGONIZING for me!!!! The man can take anything and make it amazing...sigh'

Good morning all! Just as I was afraid I had a bump up this morning of 2.0 pounds. I tried not to stress but I knew my chili last night was too salty (I accidently cooked the broth out of it and it was 2 cups of broth) and I added Night Time Cold meds twice, these allergies are killing me. I did not in any way cheat though. Trying to be as salt-free as possible today! I am not going to let it get my celebration of yesterday...

I have a recipe I adapted for the "glazed nuts" and wow, it's really good. I used pecans, but you could easily use almonds:

Ingredients:
1 pound of pecans
1 cup of sweetner (I use Xylitol)
1 egg white
1 T water
1/2 t cinnamon
3/4 t salt
2 one gallon ziplock bags

Directions:
Preheat oven to 250. Mix sweetner, cinnamon, salt in one bag. Whisk water and egg white til frothy and pour into other bag. Put pecans in the egg bag and shake well to coat evenly. pour into "sugar" bag and shaek well. Place pecans in a single layer on cookie sheet and bake for 60 minutes, stirring every 15 minutes.

YUM!

I unfortunately had disrupted sleep, drank too much water before bed time and woke up at 3:00...couldn't fall back asleep, ugh!
Hopefully I can go to bed earlier tonight? So no surprise I'm super sleepy.

Weigh in at 145.8...still within range. I'm sure I'll have to do a CD soon lol...I'm eating a lot and a lot of coconut oil and butter

I'm pretty excited to be the same weight as yesterday given the stress I was under and also a little disturbed sleep and a big drop the day before.

I'm sorry you're up - it'll come right back off! I want to try that nut recipe in P3+ as I always have to wait to add nuts until I'm stable or I pay for it!

I made myself an on-protocol treat yesterday. I had eggs for one of my proteins, so I had one hardboiled egg with a melba with coffee for part of it, and then I made myself a small bit of "ice cream" with the remaining 3 eggwhites we're allowed. Into the Vitamix (but I think any powerful blender could do this) was the equivalent of 3 eggwhites out of the carton, 1 1/2 tsp Hershey's cocoa powder (the baking kind, no sugar) some stevia, a little cinnamon, and 6 frozen hard strawberries. VERY YUMMY for a treat. It tasted a little like chocolate/strawberry gelato.

I made Sunny's mug cake for my daughter this morning, and she loved it! My daughter doesn't like dark chocolate (I know the horror...) So, I changed the recipe a little to regular cocoa instead of the special dark, and added 2 T of HWC to make it milk chocolate. She said it was awesome, and very rich.

Milk Chocolate Mug Cake (based on recipe from Private Diva)
2 T Hershey's Cocoa
1 T of coconut flour
1 T Xylitol or your sweetener (do not recommend splenda)
1 packet of stevia (or different sweetener-I like to mix them up)
1/4 t of baking powder
1/4 t of baking soda
1/4 t of xantham gum (optional-I use this with coconut flour)
sprinkle of salt
Mix dry ingredients well.
1 egg
2 T Heavy Whipping Cream
1/2 t. vanilla
Add remaining ingredients. Spray mug, and add cake mix.
Cook in microwave for 1 minute, 10 seconds (depending on microwave).
Invert onto plate, ENJOY!
You can also cut a thick slice of cream cheese and stick it right into the middle of the batter before you cook it. It mades a yummy cream cheese filling when you are done. Ok so I love cream cheese!!

I'm done with this round, that's it, thanks, I can't do p2 anymore! today is my last dosing day, so this morning, I'm taking 205.5 and running! two days of lousy stinking VLCD without pellets, then...P3!!!

I'm dreaming of mug cakes. heh.

hey natasha, apparently You Gotta Eat Here got picked up for national distribution, so hopefully you'll see it soon! I love it! you should check out clips on youtube. the host is HILARIOUS and isn't a cook, so he doesn't try to guess ingredients or say the recipe himself, he just eats, acts hilarious, does what the chefs tells him, and if something's really REALLY good, buckles at the knees. dropped an F bomb over how good something was (it was bleeped), which cracked me right up. especially since I'm kind of a potty mouth when not at work or on LCF.

Here we go! Today should go by quickly, I have a training in the afternoon
My tummy did not appreciate dinner last night. It's kinda what I don't like about P3, lots of digestive upset! P4 my tummy calms down with the grains.
Slept well last night, ended my water intake at 8:00 and took a melatonin at 9:30.
Weigh in 145.2

Need to buy more GY, had some for breakfast yesterday and forgot how yummy it was! Also need avocados!!!!!!

Morning Girls! P3D15 and am at 192 so exactly at my 2 lb window! My "sort of egg day" got me .5. So today doing a true EGG CD. UGH! Decided I'd rather do this than to stay at the top of my window and not have any wiggle room. NO MARGARITAS OR OFF PLAN EATING AT ALL this week! I was supposed to go to Zaxby's tomorrow w/ some friends but am going to decline. I have been dying for the fried dill pickles. Also declining Mexican Friday again. I'm looking forward to more WINGS Friday night! I bought what I need to make stuffed mushrooms and the zucchini pizza crust so am excited about that this week as well.

Star - Can't wait to watch the show! I'm sure it will be on one of the Food or Cooking channels. It sounds hilarious! I am also a potty mouth and have to watch myself around my friends' children!

B - 3 scrambled eggs, bacon & sweet n spicy tea
S - 3 hb eggs throughout the day

Hey ladies!

Day 4 of P3 and I am now 2.6 over my LDD - correction day already!

Too much fat - cream cheese muffins and issues with berneice don't mix well!

Today I am fasting all but coffee til supper and will have chicken legs.

Congrats Sunny and Baileysgirl in keeping within your window.

I am envious!!! I want to add GY back in but kind of scared....We will see - maybe by Friday???

Well my egg day did bring me a 2 lb loss but I still need 3 more to get back in LDW or what I want to believe is my LDW. If I can stay between 140 -142 I guess I will be happy....or my body will be. No matter what I do I can't break 140 and keep it.
I am going to eat as clean as possible but maybe up my calories some, maybe I am not eating enough. Old habits die hard when you are trying to lose a few lbs. first thing I want to do is stop eating. Lucky for my body I am a whimp and get hungry!
5 more days and I could move on to P4 but not sure if I will. Adding in those carbs just scares me!

After being at the same weight after a 2-pound drop I am UP this morning .6 *sigh*
It might be a new sugarfree product I tried last night so I am not having that until P3 now.

MSGIRL - I hear ya...This is my 2nd CD of this P3! I have been bad.

PenPen - Are you doing the alternating CD's? That should get you back in your window. Good luck I know it sucks!

I tell you I am SICK of EGGS so I def am not going to be doing anything else in P3 that will get me into CD status. I don't know at this point if I can stomach 3 more eggs tonght! I may just eat my turkey burger w/ mushrooms and be done with it. I only have 6 more days left in P3 which puts me in P4 on Valentines Day! I have even actually thought of finding other things to eat for breakfast than eggs for the rest of the week! I love my omeletes but after doing 2 EGG CD's already they are just not appealing anymore! Just pulled up a word doc w/ recipes and these are a few I didn't have on my doc at home so thinking I may make these within the next week or two.

Morning Pound Cake (for breakfast!!)
1/2 cup (1 stick) butter, softened
1/2 cup cream cheese, softened
3/4 cup (equivalent) sugar of your choice
2 tsp. dark molasses (optional)
4 eggs
1 tsp. vanilla
2 cups almond flour
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. ginger
1/4 tsp. cardamom
1 T. sliced almonds
1. Preheat oven to 350°F. Spray 9X5-inch loaf pan (or two mini loaf pans) with nonstick cooking spray.
2. Beat butter, cream cheese, and sugar substitute in large bowl with electric mixer until well blended.
3. Add eggs, one at a time, beating after each addition. Beat in vanilla.
4. Combine almond flour with salt, baking powder, ginger and cardamom in medium bowl. Gradually add to egg mixture while beating on medium speed.
5. Pour into prepared pan; sprinkle with sliced almonds. Bake 45 to 55 minutes or until toothpick inserted into center comes out clean.

Pound cake in 2 minutes!
a glass bowl or pyrex about the size of a cool whip bowl (perfect size for this cake)
2 tablespoons splenda
1 tablespoon butter, softened
2 tablespoons cream cheese, softened
1 egg
teaspoon baking powder
teaspoon vanilla
half teaspoon lemon extract
pinch salt
1/4 cup almond flour or almond meal

Throw all these things in the bowl, whisk well and microwave for 2 minutes!
For an extra special treat as soon as this cake comes out of the microwave pour sugar free mini choc chips on top and drizzle heavy cream over the chips and once everything cools down you will have a moist yellow cake with chocolate frosting!

Couple of more I might try...

P3 Waffles
2 eggs, beaten until fluffy
1/4 cup Ricotta Cheese
4-6 drops stevia
1/2 tsp. Baking Powder
1/4 tsp. Cinnamon
1/8 tsp. Nutmeg
Add all ingredients to beaten eggs and mix until well blended. Spray waffle maker with MCT or other cooking spray. Pour into waffle maker and cook as usual. I have also done this like pancakes. Just as yummy! Top with toppings of choice: butter, strawberries, blueberries, no-sugar added syrup.

I don't have stevia drops - WHAT ELSE CAN I USE?


Southwestern Chicken Salad
¾ c mayo
¼ c chopped fresh cilantro
3 tbsp fresh lime juice
2 tsp chili powder
1 tsp minced garlic
½ tsp ground cumin
4 c chopped grilled chicken
¾ c diced poblano pepper
Salt to taste
LC tortillas warmed
Toppings: diced mango, diced avocado, diced tomatoes, shredded Monterey Jack cheese

Whisk together first 6 ingredients in a large bowl. Stir in chicken, poblano pepper, and salt. Serve in warm tortillas with desired toppings.

OMgoodness, I can't wait to EAT! I STS this morning (185.5), but I think it's the night time cold meds. When I'm off this, I think I will be okay. I would love love love to see the 170's, I have six more VLCD days! I don't plan to EVER do this long again. Next time I will be obedient and PERFECTLY on protocol on my first 23 days!

I want food, I'm so hungry!

So you know those crazy women who buy up whatever is left of something in the grocery store? Well that was me today at Whole Foods. I literally bought all 7 small containers of full fat Voskos yogurt
I LOVE this yogurt, I think it puts FAGE to shame. Also Fage cut out the fat in half whereas Voskos still has 20 grams of fat and tastes like decadent heaven.
I also bought two Hass avocados, and raspberries, ooo and Spanish Almonds which are fried in sunflower oil and salted. Soooo having GY for breakfast tomorrow yay!

Just had to share, I have become THAT woman at the store...Sigh'

Todays menu:

scrambled eggs in coconut oil
tuna salad, with romaine
macadamia nuts
almonds
wine
roasted pork and avocados
cheese (snack)
