I WISH I liked to cook!!

I'm having a really hard time maintaining the 30 pound loss in winter.

I reached goal June of '11, and kept within a few pounds up until a month ago. Work is SO busy - and I HATE to cook! I keep telling myself to prepare veggies in advance. Not a habitual procrastinator, I seem to be having a REALLY hard time making something up in advance, and then I end up making a peanut butter sandwich, or eating cheese and crackers! (RRR)

I live in a very rural area where I can't just go pick something up.

I went thru one period of two weeks where making a big soup was on my list EVERY SINGLE DAY and I never did it! (I really don't like cooking).

Other than, "Listen Red, just put on your big-girl pants and DO it and stop whining," does anyone have any suggestions?

Ideas/recipes that are way way quick and brainless, but filling and yummy - low carb, but got some good protein, fat, and veggies? I love my crock pot - just can't have chemicals/MSG like the stuff in lipton onion soup mix.

Lately, I seem to just want beer and nachos!

I rely on Linda's low carb recipe site. There are quite a few casserole dishes from there that I have incorporated into regular weekly meals in my home and tweaked to my liking.

My favorite is sooooo easy, and the meats can be interchangeable, as can the cheese.

6 eggs
1 cup heavy cream
2 cups shredded cheese of your choice
1 cup diced meat of your choice (ham, bacon, sausage, roast beef, etc)
1/2 cup diced veggies of your choice (mushrooms, green peppers, broccoli, tomatoes, etc)
Spices of your choice

Bake at 350 for 35-45 mins, check often to make sure top is not too brown, I like to take the dish out and wiggle it so the eggs disburse a little better and cook thoroughly.

Oh, thank you.

Typical of my 'all or nothing' thinking - I keep making this into some big ordeal. For people who cook all the time, or like cooking, making a pot of soup is no big deal. For me, planning a party for a hundred people is no big deal, making a soup is!

I will do this! And....better, I will report back when I do, in order to be accountable.

Two meals for the work of one:

put 2 Tbl butter in a pyrex dish into a 350 degree oven til it melts.
Shake garlic powder, onion powder, thyme or oregano, salt and pepper into the butter. Swish thighs around in butter to coat. Bake for 20-25 min. Turn and drain the grease off, add a couple servings of frozen, thawed green beans and cauliflower and bake about 15 more min til done.

Remove the skin and bones from the leftover chicken and plop it and the leftover veggies into a storage container with 1/2 cup each of chopped onion, celery, and carrot and a cup of cabbage and a cup of thin zucchini half moons. The next morning, put it in a crockpot with a can of tomatoes, a can of broth, bay leaf, shake of cayenne or paprika or pepper flakes, and a little thyme or oregano. Add a can of mushrooms. Cook on low for 6-8 hours.

Red, will you cook once a week? I am busybusy during the week but on Sundays (in maintenance), I spend the morning prepping food for the week. I almost always bake a pound of bacon then cook a huge batch of chicken thighs in the grease. That way I have chicken on hand if I need a cd and stuff to heat up for dinner if I don't feel like cooking. I will also hard boil eggs and cook sausage links or turkey patties so I have quick snacks and grab and go lunches. I usually throw the bacon in the oven when I am on the treadclimber, stick the chicken in before I shower, and boil the eggs while I am drinking my coffee.

I will also second the crockpot meals and the breakfast cassaroles. In the crockpot, I usually stick a chicken, then dump in a beer and a jar of salsa and cook all day. It's not nachos but it's kinda close...

Easy Crockpot round steak

1/2 onion sliced very thin
10 oz frozen french style green beans
1 1/2 lb round steak
oregano, minced garlic, 2 beef bouillon cubes dissolved in 1/2 cup water, oregano, salt and pepper
can of mushrooms
can of tomatoes

Layer ingredients with onions on bottom, then beans, then steak, then shrooms, then seasonings, then dump the can of tomatoes over it. You can also put canned limas, frozen cauliflower, or very very thinly sliced sweet potatoes or regular potatoes on top of the onions if you want.

Cook on low 6 hours.

Ok, emel, that last one, I KNOW I can do.

Went to get the ingredients for Lilac's recipe - but all the heavy cream had Carageenan, (which always contains MSG...and I'll be throwing up tomorrow because of my allergy if I use that).

Bought 2 packages of chicken thighs and baked them up.
(Oh!! I remember baked chicken thighs! How easily I forget!) Also got the veggies to make the rest of that dish...I think it's soup..tomorrow. Had to get chicken stock, though, because that's the only organic stock the little market had.

I love the **No ADDED MSG** on the label. No. You don't ADD it, but you use ingredients that always CONTAIN MSG!! (like yeast extract, or hydrolyzed anything...)

Anyway...sorry....that turned into a vent!

Do you have Trader Joes near you? Their Organic HWC has NO Carageenan. It's worth looking for!!
