Coconut oil-Cocoa Candy
360 grams coconut oil 180 grams cocoa 80 drops EZsweet 48 each walnuts, English Mix oil, cocoa, and EZsweet together. Put 10g (approx) in each gem-muffin cup, then place walnut half/pieces in each cup and cover with chocolate mixture. Freeze for approximately 15 minutes, then knock out candy and store in refrigerator. it's not fudgy, but it is a nice candy - just be sure to hold a piece in paper toweling as you eat it, it melts really fast. I make this when I'm trying to increase my coconut oil consumption ... |

I add unsweetened coconut, no nuts. I also use powdered Erythritol as I find any other sweetener used with cocoa tends to produce a bitter taste. Sometimes I add a bit of natural peanut butter and some chopped up La Nouba marshmallows. Kind of like a rocky road confection.
