Need help w/recipe, please

Okay... I have a recipe that my family loves, and my husband wants me to make soon. I think I can make it P3-edible.

I plan to use SF ketchup and SF brown sugar (Ideal has a brown sugar sub). But... the meat is supposed to be dredged in flour and then browned before putting it in the crockpot. Would it be okay to dredge it in coconut flour? That's the best thing I can think of, and I would love to know the thoughts of some of you more experienced/better cooks.

I could always just not dredge in flour, but I thought the coconut flour might be a better option. Ideas/thoughts ladies?

Hi Debby, I would think almond flour, coconut flour or even soy flour would be better than "regular" flour.

I would use almond flour. I have read that using pureed FiberOne cereal is a good substitute for breading, but I don't know how many carbs it has or if it would sub well for flour in this case.

Ditto on the almond flour......but be careful as it does tend to burn/brown a lot quicker than normal flour.

I use equal parts shredded (not grated) parmesan (big bags at costco, freeze in baggies) and almond meal for breading. No one in three years has ever known I didn't use flour, nor done anything but rave about how good it is. If you dredge before crockpotting, brown the coating first on the stove.

In my experience coconut flour makes it gritty and taste funny, especially in a saucy dish like in the crockpot. The family says NO to that.

I have both coconut flour and almond flour to use for dredging, but I wonder if they will give my beef stew a funky flavor...
