Ground chicken recipe
What's a good way to use ground chicken breast? I just bought some today but have never used it before. Any ideas?

Way too much time on my hands!

I like it with cooked cabbage. I make it a little spicy with crushed red pepper flakes and some chipotle.
I make my own breakfast sausage with it by adding black pepper, sage or poultry seasoning, a little salt, and some crushed pepper. It's really good this way cooked up and then sliced into an egg white omelet with tomatoes. I make it into fingers to cook it, so it looks like sausage links. I can get 3 links to a serving. (this isn't protocol for P2 because it mixes proteins) Or cook it in crumbles and make a soup with it. I like it in chicken broth with onion and spinach, tastes sort of like wedding soup. Really, anything you like with ground beef can work with ground chicken. Since it is so lean, a good way to cook it for chili, etc is to simmer it in broth instead of trying to brown it like you do ground beef. Just get your broth to a good boil and drop the crumbled ground chicken in. Only takes a couple minutes. |
