lunch time

I know you all are gonna get sick of me. today is my first vlc day, so lots of questions here. I am so used to eating my salad for lunch, but now i know we cannot mix veggies. so i cannot have lettuce and cucumbers right? for anyone that eats salads, are you able to mix anything. i already know the no dressing part, but should i just have plain lettuce with grilled chicken? or cucumbers with the chicken plain? so confused

I don't like just plain lettuce so I typically just brought sliced cucumbers for my lunch at work. Sometimes I cook extra veggies, especially asparagas, and bring it to work for lunch. By the end of R1, I was sick of cucumbers.

I also don't like plain lettuce. I give up having a salad on P2 at all. I had so many cucumbers on my rounds that I am getting a bit tired of them and don't bother with them on P3 or P4 LOL. But they are so easy.

No, you are not supposed to mix veggies if you are following strict protocol. The most "rogue" I ever got was mixing spinach greens and lettuce greens! I am fine with having just lettuce and meat for my lunch but I typically make simple salads anyway. I would usually have either spinach or baby greens with chicken or ground beef (fish or shrimp was too light for my lunch--I ended up getting hungry later in the day). I also used a dressing made up of chicken broth, ACV, S&P, and any spices that I was in the mood for that day. Here are some "recipes"... HTH

Salad dressings:

Start with...
2T broth (beef, chicken or veggie)
2T apple cider or red wine vinegar
1/4t salt
1/4t pepper

For Italian add...
1t Italian seasoning
1/4t garlic powder
1/4t onion powder

For honey mustard add...
1T mustard (yellow or brown but check ingredients for sugar)
5 drops plain stevia or 1/2 packet Splenda or Sweet 'n Low

For a creamier dressing use...
2T Walden Farms Caesar, Ranch or Blue Cheese dressing in place of one T of broth and one T vinegar

For a different taste use...
2T orange juice, lemon juice or lime juice in place of the vinegar

Switch up spices. I like...
1t curry or
1t shallot pepper or
1t dill or
1t sage
1t cumin or 1/2t cumin + 1/2t chili powder

i had salad all the time, well lettuce lol
i mixed red wine vinegar w/dijon mustard salt and pepper. i crushed my grissini and made it croutons, worked for me
