What P2 Food/Dish Can I Bring to a Cookout?

My brother is having a cookout on Sunday, and I want to bring something in addition to burgers. He is having pulled pork, baked beans, cole slaw, and corn bread. My mother is bringing zucchini brownies & cucumber salad (which has sugar). So the only thing I'll be able to eat is the burger I am bringing.

Is there anything else besides cut veggies & salad that I can bring?

You can make your own sugar free cucumber salad and bring it in a small container for yourself. Fruit salad?

I would do that with the cucumbers, but it would upset my mother if I not only don't eat hers but then bring my own. I am not supposed to mix fruit now either.

I was looking for something I could bring *and* eat.

I really wish I had stopped taking my drops today so I could move into P3 on Sunday

Are you super strict? I can fix you up with a great sweet/sour coleslaw recipe with no sugar but you need to use both cabbage and onion for it to be yummy (and celery and pepper is better) I mix veggies though

If someone is making coleslaw...it will likely be the mayonaisse-y green kind...so if you make this really colorful, it will be a completely different dish and it is YUMMY...so people might want to share. It's a SF version of Everlasting Slaw (it keeps really well in the frig...like for at least a week)

Everlasting Slaw:

Large head of cabbage, shredded fine (I like to use 1/2 green and 1/2 red...coz it's pretty!)

1 medium thinly sliced onion (red is pretty...oh...use red!! )

1 green pepper, 1 orange pepper

I cup chopped celery

Put everything but the celery in a big bowl and stir up 1 heaping TBLSP of coarse salt. Let that sit for at least 10 minutes and then transfer it to a colander, cover with plastic wrap and a pot lid or plate that fit the colander diameter and stick a couple of cans of food on it to squeeze the fluid out of the veggies. Or you can just squeeze it out by hand. Add celery.

Dressing:

1 Cup vinegar
1/2 water
1/2-3/4 cup granulated stevia or splenda
1 Tblsp dry mustard

Mix in a saucepan and bring to a boil for a couple of minutes. Take off the heat and add 1 tsp of celery seed.

Pour it (still warm) over the drained veggie mixture, cover and refrigerate.

I made this last week and had it by itself a couple of times, and then I cut up my cold chicken and my orange and tossed it in there one day...boy...that was a REALLY GOOD IDEA!!!! My skinny family loved it too!

Ooh I love shrimp cocktail, but I discovered recently that I have an intolerance to shrimp, scallops, lobster, mussels

Good suggestion for anyone else who may need ideas...

I think I *am* going to make some SF cucumber salad and eat it at home though ....and I can't wait to have fruit salad again too

Well, I do have a recipe that is somewhat similar to Diva's and I did make while on p2.

Coleslaw/Apple Salad

1/2 head cabbage
1 apple diced
2 Tablespoons lemon juice
1 Tablespoon apple cider vinegar
1/4 teaspoon garlic powder
Dash of mustard powder
Dash of cinnamon
Salt and pepper to taste
Stevia to taste

Directions: Slice cabbage in very thin strips. Toss with lemon juice and spices. Allow to marinade for 30 minutes or overnight. Add apples and 1/8 teaspoon of cinnamon (I use more) to make an apple slaw. Makes 1-2 servings (1 vegetable, 1 fruit)
