I made almond flour and crackers last night

The almond flour was a bit of work, but I didn't mind. I used up all the almonds and didn't leave flour left over, so I'm not tempted to bake more goodies.

I made the almond thins to have with buffalo chicken dip. I haven't made the dip this round yet, but I will soon. Yum! And I'm trying in moderation, but it seems I'm not sensitive to almonds, so that's good. Now, I'm looking at a recipe for lemon meringue with coconut flour. Thank goodness I hate cooking/baking, so that likely won't happen

Almond Thins

1 cup almond flour
1 packet of Splenda
1 egg white
pinch of salt, garlic powder, & onion powder

Preheat oven 325. Mix ingredients well. Place mixture onto a well greased piece of tin foil. Spray a piece of wax paper with cooking spray and lay over top of mixture. Use a rolling pin to roll out to a cracker thickness. Gently remove wax paper. Sprinkle more salt on top if desired and press lightly into dough. Score with knife or pizza cutter into squares. Lay tin foil on rack in oven. Bake until golden brown about 10 minutes. Makes around 50 crackers.

Carb count is about 13 for the whole batch. You can also vary the flavor-use ranch powder, ground bacon bits, season salt...

How do they taste? When I was on P3 I found all the recipes for chips, pizza crust, doritos, etc. but I never tried them, as I didn't know if I'd like them.

Well, I heard it was expensive and I didn't want to go all around town through Whole Foods, Trader Joes, etc etc.... so I just made it at home in the blender with raw unblanched almonds. I then sifted the powder

Bob's Red Mill Almond Flour is at most grocery stores and is not that expensive. Almonds aren't cheap so bear that in mind when comparing the price. If you make your own, be careful and keep a watch on it. It can turn from flour to butter if you leave your food processor running and walk away. Of course...I love almond butter...but it's hard to make crackers with

I find mine in Kroger (I buy it on clearance when I see it there in the clearance bin), but I know that I have seen it in my Publix and Walmart too. The brand is "Bob's Red Mill". And of course, my little mom and pop health food store does have it too. HTH!!!

Thanks, Dawn. We have no Kroger or Publix here, but, we do have a Walmart. I may run over there later if I get hungry and need to get out of the house. I can pick up some of the Almond Flour and some greek yogurt!

Im dying to try these! Did ur processor work the almonds down to an actual flour, or did u have to sift? ( i dont have a sifter)....i can never find the almond flour in the stores.

There was some powder, but I definitely still have to sift. I was using a blender, not a food processor. So maybe your food processor will get it down to a powder.

I have a tiny sifter - you can find one anywhere for a couple of dollars. Even the regular grocery store.

Yep Ive bought almond meal/flour at Walmart- about $7 a bag (expensive IMO). I tried making cookies with it last year when I was doing low carb, and they.were.awful!!! I think these crackers sound great though, may have to give it another go. Also, I know there is an almond pancake recipe around here and that sounded worth trying.

Thank you for posting this! I just made the crackers. So easy and a nice treat. I used salt, garlic powder and dill. I was thinking I might try mincing some sun dried tomatoes in there too. Yum...

I bought my almond flour from Trader Joes and it was very inexpensive.

That is cheap!! My bag of almond flour was $12+ and it is just a pound. You are lucky!!!!

My cookies that I make with the almond flour are sooooo good!!! What recipe do you use??

I have some almond flour that I bought online thru Honeyville, it was around $25 for 5 pounds and I just keep it in the freezer. If you buy the blanched almond flour it is finer and less mealy (is that a word? LOL) and turns out better baked products, but it depends what you use it for. For some things the Bob's flour/meal is just fine. I have a couple almond flour cookbooks. I can't use it too much, at this point, nuts make me gain a bit.

These sound really good. I got my flour from Netrition. It hasn't come yet. Hickory salt would be good. Like smoked almonds.

I always wanted to try the four ingredient peanut butter cookies, but with almond butter. I'm afraid I'd eat too many, though.

Cup of nut butter, cup of sugar equivalent (I'd cut back on this and I'd mix 2 or more products, like truvia and erythritol), tsp vanilla, 1 egg. 350 degrees, 6 or 7 minutes.

Then I'd dip them in cocoa crack.

You are not kidding emel I love almond butter too much to make those too!! But I have made this--just subbed almond butter for the peanut butter--and it is perfect for P3 IF you can practice restraint!! But it would be perfect for loading. Too dangerous any other time to have around. I ate the entire thing in one day for one of my loads I highly suggest this recipe:

I wonder if you could use coconut oil for the butter. I am allergic to dairy and my other option would be crisco which I hate to use. Anyone have any other ideas for substitutions for the butter?

I will second and third this recipe. I make it every week and have a hard time restricting myself to one per day. I also have to take the "leftover" nut butter and freeze it. Otherwise it's...spoon...jar...no nut butter leftovers!
