Thinking about making this tomorrow (minus the tortilla and corn. I don't like corn in my soup)
Crockpot Cheesy Chicken Tortilla Soup INGREDIENTS o 4 cups chicken broth o 1 lb. skinless, boneless chicken breasts o 1 tablespoon lemon pepper o 1 onion, chopped o 1 tablespoon garlic, chopped o 2 tablespoons vegetable oil o ¼ cup flour (SUB something else like Guar Gum or Xanthem Gum) o 1 tablespoon chili powder o 1 tablespoon cumin o ½ teaspoon hot sauce o 2 tablespoon Worcestershire sauce o 2 (10 ounce) cans diced tomatoes with green chilies, untrained - I like ROTEL Brand o 1 lb. (16 oz.) Velveeta Cheese, any favor, cut into cubes - I like to use the MEXICAN MILD or PEPPER JACK o 1 (15 ounce) can black or chili beans (optional) o 1 (15 ounce) can whole kernel corn, drained (optional) o shredded Cheddar cheese (optional) o sour cream (optional) DIRECTIONS Place the chicken, lemon pepper & chicken broth in slow cooker. Make sure chicken in cover by chicken broth in not add more broth until chicken is covered - you don’t want your chicken to dry out. Cover and cook on low heat for 5 hours. Remove chicken breasts from the broth (leave broth in slow cooker) and allow chicken to cool long enough to be handled. While chicken is cooling in a sauce pan add oil, garlic and onion saute over low heat until onion is soft then add flour stir together and remove from heat and set aside. Shred chicken and add to onion/garlic/flour mixture toss together and add back into the broth in the slow cooker also add the chili powder, cumin, hot sauce, Worcestershire sauce, beans, corn, Velveeta cheese and diced tomatoes in the slow cooker and continue cooking for 2 hours, stirring occasionally. Serve topped with shredded Cheddar cheese, a dollop of sour cream |

^^^ YUM!!! That soup looks delicious. I also don't like tortillas in my soup, though I like them in every other mexi-dish
I think I'm going to add the homemade tomato basil bisque I made a few days ago to my menu today. Broil some havarti on top... mmmm! |

Yum! I'm a huge fan of tomato soup (always!!) - and haven't made tomato bisque this round. I'm shocked at myself. And it's so easy.

I had yogurt with strawberries, plus two slices of bacon, for breakfast
Lunch was a big bowl of the chile chicken stew I made last night, with sour cream and some shredded cheddar. (The soup is nothing fancy--I just stew a whole chicken low and slow, with onions and celery and seasonings. Then I pull the meat off the chicken, add it back into the stock, and add a couple of cans of hot Rotel. Really, really good, though.) Dinner was a NY strip with butter, creamed spinach on the side, followed by strawberries with cream. I ate a few more calories today--back up to a little over 2000. Yesterday I ate 1800 and was up this morning. I seem to be doing better with more, strangely enough. Guess I'll see what happens in the a.m. If I go up any at all, I'll have to do a steak day tomorrow. (Not that I'll mind. I love steak!)

Well, today was a GYCD day so I had:
coffee/hnh GY GY GY w/ strawberries GY little GY ![]() Tomorrow: coffee/hnh & prob GY or Cottage Cheese cowboy burger protein shake after lifting(hopefully) fajitas - steak and chicken, onions, peppers cheese and SC. (I'll skip the tortilla) SF choc square I really hope I'm back into my window tomorrow . How can a weekend of slightly indulgent eating kill a whole week? I've gotta' workout tomorrow too, so I'll be happy to eat again. I guess I can do another CD on Friday if needed. Wonder if just eating clean (homemade) P3 will get me back in my window. I'm supposed to be in P4 (like you millenia). I usually add corn (or corn based items like chips) beans and frozen yogurt in P4. That's my hope for the weekend. Doing it more slowly at home will likely yield better results .

You are a girl after my own heart! Corn and beans is exactly what I want to add in P4. I can take or leave wheat and sugar, but having normal Mexican food again will be a joy!

Let me just write down what I had yesterday. It was odd. What did you all have?
B: coffee with 1.5 eggs and cheese. Turkey bacon. L: Chipotle shredded beef and chicken with a small amount of sprinkled cheese on top Snack: Fage 2% Post gym snack: Strawberries, blueberries and raspberries with a small amount of frozen yogurt Dinner: About 10 almonds and a low carb cream cheese muffin. Glass of milk. I wasn’t hungry for dinner. I know that wasn’t my BMR calories for the day (especially since I am very active), but I wasn’t hungry and I’m not about to eat if I’m not hungry |

Verbqueen, I love strawberries and cream. Favorite dessert!! But I can only make it at home since you can't exactly ask for sliced strawberries and half and half while you're out. lol!

Millenia, I am developing an addiction problem to them, I think. All day, in the back of my mind, I'm thinking "tonight, yes tonight....strawberries and cream..mmmmm."
I may have to skip them today, just to prove to myself that I can! P.S. STILL right at the top of my window this morning, and that is worrisome to me, because it feels like a weight gain rather than a fluctuation. Can't correct today, but probably will tomorrow. |

I'm reading this thread, even though I shouldn't, because I'm still on the VLCD, but I can't wait for next week, (Friday, 9/9), when I can start to eat the things you guys are eating!! I just have to take it slow, however.

Millenia-yes, that is an unusual menu. But, I agree, I'm over "eating when I'm not hungry just to hit a number".
Ok, I'm going with a higher protein day (apparently heavy dairy) Day. I have had: coffee/cream cottage cheese cowboy burger LC yogurt protein shake (coconut milk/pwdr) 1/3 pumpkin muffin Not sure about dinner. Either fajitas here at home or possibly dinner out if dh can talk me into it .I haven't been overly hungry today. I'm supposed to eat 5 times a day on this NROL plan, but find that hard. I did make myself eat bfast today (cottage cheese earlier than usual). I just made the MOST delicious muffins today!! I don't usually do much LC baking, I try to eat whole foods. But dd (11) is LCing likes to have "treats" on hand. These are yummy, and have a good level of protein in them! And they'er gluten free for dd(8) Here's the recipe. 3/4 cup almond flour 2 scoops vanilla protein powder (I used MRM LC Whey) 1 tb baking powder 2/3 cup Splenda (I added a fe tbs of xylitol too) 1 TB pumpkin pie spice 1/8tsp salt 1 cup canned pumpkin 1/4 cup heavy cream 3 large eggs 3 TB coconut oil (or softened butter) 1 cup unsweetened coconut 1/2 cup pecans (optional-I skipped this) preheat oven to 375deg., oil 12 muffin tins or use liners. mix all dry ingredients (except cocnut) in small bowl. Mix all liquid ingredients in larger bowl, with hand mixer. Add dry ingredients and mix for 1 minute. Add coconut and nuts last. Bake 15-20 minutes. Makes 12 muffins, these stay moist, so don't undercook. Delicious!! 170 cals, 7g protein, 5g net carbs and yummy!! __________________ Have a good day all! |

Count me in on OD'ing on half and half. I have to give up coffee during P2 because I just can't have it black or with just a tablespoon of milk. The color of coffee with just a tablespoon of milk makes my stomach turn!

My first P3 day and was I nervous! :blush: Who knew adding food could be so scary?
B: 3 eggs & 2 crumbled turkey sausage patties scrambled in 1 tbsp butter L: 2 Aidell's organic chicken, feta, & spinach sausage links; 1/2 vidalia onion, fried with sausage (mmmmmm) D: 7.5 oz chicken breast & 150 g zucchini pan-fried in 1 tbsp coconut oil. Then I put 2 tbsp blue cheese dressing on the chicken. Ohhhhh I almost licked the plate it was so good!! Tomorrow will be interesting!! |
