not hcg question; garden veggie question

ok. this year is my first garden in the north. we have carrots, beans (yellow and green), peas, beets, and tomatoes (lettuce etc.). im afraid the lettuce will just have to be eaten but the others, i cannot eat on p2 and i don't want any waste.

i want to freeze some for the winter but was thinking it would be nice to do some canning or something other than just blanch and freeze.

does anyone on these boards have any good recipes or suggestions? we have a very hard time finding good quality produce here (im way north in canada) and i would like to have something in the freezer, at least so my husband does not get scurvy

i am searching the net and am sure i can find something, but i am well aware that its often better to obtain tried and true recipes from individuals who have experience with these things.

My dad canned. I didn't really like the stuff except for two things. He made an unbelievable corn/bean salad and some truly amazing pickles out of green tomatoes (really...they look weird but YUM..). I don't know if my mom will still have those recipes but I will ask her!

You should ask on a larger board though - LCF is a big message board and lots of people might have input. Not that the hcg board doesn't rock - it does

There's a recipe board, etc though - so look around.

privatediva-the corn bean salad and tomato pickles sound YUM! if you can locate the recipes and don't mind sharing, i would love that.

thank you for the link, i will check it out today. mine allows tomatoes but no carrots. and i LOVE fresh garden carrots. what does yours include for fruit??
