Glorious rogue (for Simeon) lunch!
My doc's plan allows for a few more veggie choices as well as mixing veggies in a single meal. My lunch today is a one yolk, three white egg scramble with 3 and 1/2 ounces of mixed minced veggies. I did red and yellow pepper, a little real onion, a tiny bit of tomato, one mushroom cap and a couple of spears of asparagus. The spicy Mrs Dash and black pepper are what I used to season this. It is beautiful! Then I sliced an apple and nuked with stevia and cinnamon for my fruit. It made the most lovely and HUGE plate of food I've seen in several weeks

I've been in a comfort food mood for a couple of days. Been really cold (even though it is horribly hot outside). My warm apples and mashed cauliflower really make me feel better for some weird reason. I'm hoping that when I'm done losing the weight I can keep in touch with how satisfying something like that can be. Really...it is such a delight to eat well. Food tastes much better to me when I am not consuming a load of carbs.
