P2 foods you now crave

Not sure how to explain this, but during P2, spinach and I fell in love. One wouldn't expect that. I would have thought that after P2, I would feel much like I did after giving birth, when all I wanted to do was BURN those preggo clothes!! But No! I find that now I have a strong craving for spinach.

Now I eat it as creamed spinach instead of in salads or sauteed like in P2 - but I still buy 3 huge cartons of it at a time.

What's up with that?

Did anything like that happen to you?

Im a big fan of canned tomatoes now! I never even thought to buy them before p2. Now i add them to stuff i make in p3!

I absolutely love my chicken "noodle" soup...LOL. I will probably continue to live on it in maintenance. It's my chicken serving with chicken broth and shredded cabbage. Had it for lunch today....yum!

Me too, but I already ate it before P2, just called it crack slaw at that time -- pretty much the same thing and I love it. Red, come to the dark side! Just try it once, just a taste, no one gets addicted their first time, really!

Oh, and please do 'splain this creamed spinach thing to me. I am also still craving spinach, in fact, I pretty much eat all of my P2 foods still (P2 warped my brain, y'all!). How does one go about making such a thing? Just make spinach and, uh, add cream to it? Or is there a super secret to it, like creamed cheese or creme fraiche or cream of wheat or cream of tartar (what is that stuff, anyway?) that I need to know about?

I just heard the Scotch-Irish part of my brain say: "Wow Red, that girl would be fun to drink with!" But I digress.....

During P2, aside from using it on salad, I would buy 3 cartons at a time, and cook up at least 2 at a time. I'd saute it in chicken broth with some garlic salt and minced onion.

Now I have two favorites. Here's the first recipe - (and because it cooks down, I can eat almost the entire portion in one sitting):

1 PCKG FRESH BABY SPINACH (16oz)
3oz cream cheese
1/2 cup shredded cheddar
1/2 stick butter
1 teaspoon heavy cream

(I made my own adjustments to this; I don't think I used that much butter at all; and it seemed to make a lot of the 'cream' )

Melt butter in pan, add cream cheese and stir until very soft. Add spinach and stir together until wilted and coated. Add heavy cream and cheddar cheese, stir until melted. You can serve like this or bake at 325 for about 20 min.

I haven't baked it at all - just made it in a huge frying pan. LOVE this stuff!!

Second favorite:

Toasted sesame oil. Add the container of spinach. Sprinkle on garlic salt and minced onion. Sautee it up and flavor it to your taste. DELICIOUS!

When I get ready to lose my cabbage virginity, I'll ask for a recipe. But I'm not seeing that happen until my next P2 round. :-)

Am I to understand that I'm not the only one here without the cooking gene?
(My sister, by the way, FOR FUN, when she gets a day off, will spend the ENTIRE day in the kitchen, cooking and sewing.

I make fun, but I really admire the skill of knowing how to cook, and putting delicious flavors together, and being able to "wing it" and from very few items create a delicious meal. The last month, I have done more experimenting and inventing than I have in the last decade!

The other night, I made some sea scallops sauteed in garlic butter to DIE FOR!!!! ME!!!! I am Red. Hear my culinary victory roar as I hold my spatula high !!

Red, you don't give yourself enough credit. That spinach recipe sounds delish and MUCH simpler than any I've read online. I am definitely going to try it. Rock on, kitchen warrior goddess!

(Have I mentioned my sea scallops were to DIE for? Me!!!! It's like the Anti-Red!) I'm skinny, (er), AND I can wield a spatula now! (But don't tell anyone I still have to look up words like braise.....hahahahaha)

Previous to this the only thing I ever used a garlic press for was to squish play dough. Sad. But true.

Well...
Now I know why I have craved spinach so much. I got more blood test results back today, and I have "acute babesiosis" - which leads to anemia. I'll bet my body knew I needed iron!

No - just got that result in today. Need to go to doc again tomorrow. Get another test. I know I play - but right now am in SO much pain. Don't want to take a pill because tomorrow the blood test includes liver function - don't want to slobber it up with my liver trying to handle vicodin on top of everything else.

This will pass......just like all the other BM moments in my life.......it'll pass.......

I miss my strawberry slushy I made everynight on p2, I am not eating any fruit on p3, will add some this weekend when i start p4, I love creamed spinach, better yet, spinach and artichoke dip YUM.. Going to make a huge caesar salad with anchovie dressing for dinner. Red you are so funny and a pleasure to come on here and read your phrases. I am positive it brightens most of our days, I know it does mine. CHIN UP

Why no fruit, Mary? I am eating fruit on P3 -- just avoiding all foods with added sugars and starches, but I'm 99% sure we're allowed fruit. Well, I've been eating it all along, even if it's not allowed.

Spinach artichoke dip sounds delish! What do you eat with it?

Are you sure it's the spinach you crave and not the cream cheese, cheddar, butter & heavy cream?
