Need awesome P2 salad dressing recipe please!
I am just about to harvest my lettuce and need a knock-out dressing to really bring out the flavor of sweet lettuce. It can be sweet, spicy, savory, whatever!
Any ideas? I think I'll be eating lettuce for my veggie for a week or two now that it's ready. TIA! ![]() |

Here are some that I like...
Salad dressings: Start with... 2T broth (beef, chicken or veggie) 2T apple cider or red wine vinegar 1/4t salt 1/4t pepper For Italian add... 1t Italian seasoning 1/4t garlic powder 1/4t onion powder For honey mustard add... 1T mustard (yellow or brown but check ingredients for sugar) 5 drops plain stevia or 1/2 packet Splenda or Sweet 'n Low For a creamier dressing use... 2T Walden Farms Caesar, Ranch or Blue Cheese dressing in place of one T of broth and one T vinegar For a different taste use... 2T orange juice, lemon juice or lime juice in place of the vinegar Switch up spices. I like... 1t curry or 1t shallot pepper or 1t dill or 1t sage Not sure I'd call any of them "awesome" but then I'm a blue cheese girl! ![]() |

Thanks, Shelbyla!
This lettuce is so beautiful I may use it as a wrap to hold some shredded chicken or shrimp something-or-other too! My strawberry patches are ripening up as well and I have had those 2x a day since Sunday. |

I don't have any salad dressing recommendations, but kudos to you for growing some veggies and fruit! Food just taste better from your own garden!

Man...I so envy people with the cooking gene. My whole time on P2, I just squeezed a lemon on the veggies and added some spices if I was fortunate enough to be home.
I didn't grow up around cooking. Then I left at 17. All my adult life I've been working long hours/parenting and food preparation, while healthy, has always been very minimal. Hey, I'm Irish and Scottish. I don't know what a garlic press is, but I know how to drink! (kidding...) |

I know its not a 'recipe' per se but my local grocery store carries a fresh salsa that is just finely chopped tomatoes, onions & peppers. For those going 'rogue' (i.e. mixing veggies) its great to use on a salad esp. a taco salad.
I have also did some experimentation with the powdered ranch dressing but haven't found a combo I like. |

Walden Farms Chipotle Ranch! I love spicy and it is AWESOME! The Asian sesame one is pretty good too! They sell WF in my Publix, but they are hidden in the produce section in a little corner. Some of the WF dressings are "meh" but these 2 are pretty decent! (I have 3 kids ~2 of em are little~so i dont get a lot of kitchen time alone to make my own).

And here is another one:
"honey" mustard salad dressing I don't know if this has been done. I did a search and did not see one so here it is 2 T of sugar free spicy mustard 3 T of white balsamic vinegar (the dark kind makes this look pretty yucky) 1/2 packet of stevia Beat it up and pour on salad or use for vegie dip. YUM YUM!!!! |

Balsamic is supposed to be saved for P4 because it is higher in sugar than the other vinegars -- for now, I'd sub in white wine vinegar for that recipe (I use tons of ACV, rice vinegar, and red wine vinegar in P2!)

I think I found a good one to try! And I can use my garden strawberries to go along with my garden lettuce.
From the HCG Diet Gourmet Cookbook: Strawberry vinaigrette Ingredients Strawberries 1 tablespoon apple cider vinegar 1 tablespoon lemon juice Stevia to taste Dash of salt Dash of cayenne (optional) Fresh ground black pepper to taste Stevia to taste Directions Combine all ingredients in food processor. Puree until smooth. Pour over fresh green salad. Garnish with sliced strawberries and freshly ground black pepper. Variations: use as a marinade or sauce for chicken. Makes 1 serving (1 fruit) |

Nice seeing this old thread up
I make my own mustard one: squirt of dijon mustard squirt of yellow mustard splash of ACV splash of water splenda (to taste, I like it a bit sweet). I adjust it to the right thickness and taste. You can Dr it up more, but I don't usually feel like messing w. it. Just had it tonight w. my chicken cut up over lettuce. Not bad! |

I have also just used some freshly zested orange peel, fresh cilantro, and a squeeze of fresh orange juice. Add a tiny bit of water and yummy on salads.
I have also thrown all this into the mini processor along with a tiny bit of fresh garlic, minced onion and a small serrano pepper and used it to marinate beef or chicken before I grilled it. |
