How do you make cucumbers and vinegar?

I've never had this before and I want to try it out!

English cucumbers are the best IMO. Just slice them to your desired thickness, sprinkle with a little dill weed, sea salt and a few splashes of your fave vinegar. That's what I do. You can, of course, add any other herbs and such that you like. Experiment! I did this last P2.
This P2 I used fresh lemon juice instead of vinegar--just because! Still delicious!

I put thinly sliced cukes in a bowl with white vingar, a sliced thin onion, a little olive oil, a little water to break up the twang from the vinegar, salt and pepper. Let sit in the fridge for a few hrs to absord the flavors.

I slice mine up, and add apple cider vinegar. I tend to retain water so I don't salt them.

Thanks for the responses. I was just kind of wondering how much vinegar and water to use. I guess the amount of vinegar and water doesn't matter that much.

Is it better to make sure the liquid is covering the cucumbers?

Since I don't do HCG I guess I shouldn't answer but I am. Yes cover the cukes and make the liquid to taste. Add more vinegar if it's not strong enough.

I've never had the english cucumbers. I'll have to try those out next time! I bought that coconut vinegar you told me about. I'm going to try it out with the cucs Lemon juice sounds good to try too, yum!

This can be done with a lot less vinegar if you put them in a zip-lock type baggie. Put in the cukes and whatever else then squeeze the air out and seal. The liquid covers better with less

I usually make mine a little sweet and sour by mixing coconut aminos(or soy sauce), vinegar and a smidge of sweetener. Refreshing that way

Cukes with vinegar and spices are one of my summer favorites. My Mom used to use ice cubes with the vinegar to make the dish cooler on a hot day. I love it best with acv, himalayan salt and pepper. Himalayan salt does not make most people retain water so it's the choice for me.

I hope you like them! BTW, I never covered mine--didn't want to dilute the vinegar but also didn't want to waste all my coconut vinegar, I shook up the bowl from time to time if I made them ahead of time but if not, I just used them immediately after adding the vinegar/lemon. Fresh and crisp and clean tasting!

What I like about the english cukes is the skin is thin and no peeling needed. The skin is nutrient dense (compared to the flesh) so it's always a good option to eat it

Bumping this because I forgot one of my favorite ways to make a different "thai-ish" cucumber salad (I'm guessing on HCG it would be ok except leave the onion out?).

Thinly slice 1 medium cucumber (about 1 cup of slices)
thinly slice 1/4 of a red onion
toss with 2T vinegar, 2T water, 1 drop ez-sweetz(or a packet of sweetener), 1/2tsp liquid from a jar of pickled jalapenos, 2-3T chopped cilantro and salt and pepper to taste. Put it all in a ziplock bag and refrigerate an hour, turning bag every 15 minutes to make sure they're evenly soaked.
I actually drizzle the leftover liquid on a cold salmon fillet and make a meal out of the cucumber and salmon in the summer, it's very refreshing on a hot day!

I was gonna say that!

You can salt the cucumbers for 15 min before hand and then rinse them off to remove the leaked water and salt and then vinegar them. I like to add a bit of ginger, a drop of EZ-sweetz, and braggs amino to the pickling liquid. i also use rice vinegar for a lighter less pungeunt zang. i've never tried coconut vinegar.
