Not on P3 yet, but I'm planning smoky mountain chicken with sauteed cabbage and grilled onions sometime this weekend.

Slice onions between 1/4 and 1/2 inch thick. Leave in full slices. Place on a skewer, drizzle with olive oil, sprinkle with salt and pepper and grill.

Shred cabbage coarsely with a knife and cook in bacon fat.

Grill chicken breasts until done. Top with some deli sliced ham, provolone cheese and bacon pieces and warm until the cheese melts. Then add some SF BBQ sauce.

Yum! Yum!

I could eat this everyday (and sometimes do!):

I buy the thick cut bacon at the store and brown and crisp 3 or 4 slices. I take out the bacon and crumble. In the bacon fat, I cook some chopped onions. When caramelized, I add a pound of ground beef and cook until done. Then I had 2 bags of shredded broccoli, cover and let cook until the broccoli is to my liking (I like it on the softer side).

Season and eat. It's SO good.

Oh, and if you're going to crumble the bacon anyway, it's much easier to scramble the bacon. Just cut it (with scissors is easiest) into 1/4 to 1/2 inch pieces and scramble in your pan. Easy!!

This is great because it can be put on anything. Literally anything!!

Alfredo sauce

1 stick butter
1 cup heavy whipping cream
3/4 cup parmesan cheese (the kind in the green can is best, not freshly shredded cheese)
1 garlic clove
cream cheese, just used to thicken up the sauce--you can add a little (2 oz or a lot like 6 oz)


Warm up the stick of butter on the stovetop and add in the cream. When heated and butter melted add in the parmesan and cream cheese. You can use a whisk to incorporate it all together.

Top chicken, shrimp, scallops, scrambled eggs with this yummy sauce!!!!

Also copying this one...sounds AWESOME!

As for me, I never got enough roasted chicken thighs last P3. Made them every week and had them on salads and right out of the oven with broccoli and butter.

On the cream sauces, please discover the joys of marscapone cheese... Almost 100% fat and the yummiest thing ever...

Forgot to say that I love it SPICY so I add a TON of red chili flakes. I used to put in hot peppers, but the cooking process usually mellows the heat.

I can't pick just one. Here's a list of my favorites.

-Big fat ribeye or strip steak, salad with real ranch or blue cheese, and broccoli or asparagus or grilled veggies
-chicken thighs with green beans and smashed cauliflower
-pork ribs, sf slaw, and either fried apples or broiled zucchini planks with garlic.
-cheesy omelet with bacon and a bloody mary or some tomatoes or melon
-all the cottage cheese I want, either on salad or with some fruit.

and cocoa crack for dessert.

Good ranch?

Anyone have a good ranch recipe? I had always used the Hidden Valley Ranch mix (packet + 1 cup buttermilk+ 1 cup mayo) - but on my last round noticed it had modified food starch - and I was having a terrible time stabilizing, so I thought it might be the ranch. I love ranch!

I have not tried these so I don't know if they are good or not. Here ya go:

Ranch Dressing 1

3/4 cup mayonnaise
1/2 cup buttermilk
2 tablespoons powdered cultured buttermilk blend*
2 tablespoons finely chopped fresh parsley
2 tablespoons finely chopped celery leaves
1 1/2 teaspoons fresh lemon juice
1 1/2 teaspoons Dijon mustard
3/4 teaspoon onion powder
1/4 teaspoon dried dillweed

Whisk first 3 ingredients in large bowl. Mix in remaining ingredients. Cover and chill at least 1 hour to blend flavors. (Dressing can be prepared 5 days ahead. Keep refrigerated.)

Ranch Dressing 2

1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup buttermilk
1 tablespoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried dill weed
1 tablespoon dried chives
1 tablespoon dried parsley
2 tablespoons grated Parmesan cheese
1 dash hot pepper sauce
1 tablespoon Worcestershire sauce
1 teaspoon ground white pepper


Combine the mayonnaise, sour cream, buttermilk, garlic powder, oregano, dill weed, chives, parsley, parmesan cheese, hot sauce, Worcestershire sauce, pepper and refrigerate for at least 1/2 an hour. If the dressing is too thick, add a little extra buttermilk to thin.

I love fried eggs, and fried eggs on top of things like burgers or enchiladas. Of course I can't have the enchiladas until P4.

I made a mexican casserole (for lack of a better description) last night for supper.

Browned ground beef
crumbled bacon
cheese

Mixed together and put in pie plate.

Then I mixed 4 eggs and 3/4 cup heavy whipping cream and 1/2 cup of salsa. Poured over the meat mixture and baked til browned.

Yum!

My husband made amazing stuff poblano peppers on P3 last time. Yummmm!

I also made fried chicken with almond flour. Expensive, but it gives the chicken an almost smokey flavor.
