Spiced Roasted Nuts

2 pounds of nuts (almonds, pecans, walnuts)
3 egg whites
1 t water
3 T cinnamon
1 t cloves
1 t ginger
1 t allspice
1 1/2 c sugar free sweetener (Splenda, erythritol, xylitol--I used 3/4c Splenda and 3/4c erythritol)

Pre-heat oven to 300. Put nuts in a large bowl. Whisk egg whites and water until foamy (does not need to form peaks--just until it gets a little foamy). Pour whites over nuts and stir to combine. Add sweetener and stir to coat. Add spices and stir. Taste test and adjust spices as desired. Pour onto a foil-lined jellyroll pan (cookie sheet with sides), distributing evenly. Sprinkle with sea salt. Bake at 300 for 1 hour, turning nuts occasionally. When nuts start to get sticky and dark brown, remove from oven and cool completely before serving (nuts will crisp up and the coating will harden out of the oven).

Thanks for all the great recipes. This Friday I am going to try one of them. Now for my sob story. My 40-year-old daughter and I are in this together and have been since January 2010. Well at the end of our 5th round she had a TOM and couldn't take her Hcg for three days. Since we are so close to the end of our 43-day round, she decided to start P3. What?! Without me? Oh I whined like a baby! She had to laugh when I told her I wouldn't cook for her. I told her that if she can't make pancakes for the kids until she can eat them, then I won't cook for her until I can eat too! So, of course I am hiding out in my room until Friday! lol
