Can I get a quick lesson on chicken thighs? As a kid I remember hating them because they seemed to have a lot of veins or something else I thought was icky but I haven't tried again in oh...30 years so maybe I might like them! Seems like people here really look forward to them. I figure I should at least try in P3 and see if I'm missing out

When you make them are you cooking thighs and drumsticks or just thighs? How do you prepare them - skin on? off? seasoning? cook time? I know I could find recipes online but I'm hoping someone has a simple favorite way to prep them that I can copy from here!

They don't have veins as far as I can tell! I cook just the thighs because they have more meat and less bone. Skin ON baby! The best part!

1 package chicken thighs (usually 6-8 thighs), skin on baby!
Salt, pepper, poultry seasoning, Italian seasoning, garlic powder, paprika, chili powder, other spices

Pre-heat oven to 375. Line a cookie sheet or jellyroll pan with aluminum foil. Use non-stick foil or spray with Pam. Place thighs skin side down on pan. Season heavily with salt, pepper, and whatever other spices you like. Turn over (skin side up) and season the top with more spices. Place in pre-heated oven and roast for 40 minutes or until skin is darkish brown and crispy. I like lots of seasonings but my absolute favorite is still salt, pepper, garlic powder and a little Italian seasoning. Just made a bacth last night--YUM! Still love them.

I top my thighs with real butter. None of that Pam stuff LOL!!! Real butter in P3 won't hurt you, you know LOL.

The Pam is to keep them from sticking, not to add fat, silly! I find them fatty enough on their own but I DO confess to wiping up the butter from my veggies with the chicken meat!

Whew!! Good Shelby LOL. I love taking a pat of butter and sliding it under the skin and the meat so it gets all juicy. Yum!! I have a Pampered Chef stone that I use that nothing sticks to so I don't need to use Pam on my baked meats. I don't think about sticking anymore because of that!!

I agree. It's all in the mindset. If you think "Oh don't tell me about that because I can't have it", you're doing yourself a disservice.

But looking forward to things in the next phase helps me through, too.

My Coconut Flour Dutch Babies Pancakes:

In a microwave-safe soup bowl:

melt butter or coconut oil to coat the bowl

beat 2 eggs, a little bit of milk/cream/1/2-1/2, coconut milk or water
1 1/2 tbls coconut flour
1/8 tsp salt
1/8 tsp baking power or baking soda
a little stevia sweetner
shake some cinnamon on it
some vanilla flavoring that doesn't have sugar in it! Check your labels!

mix well, cover with paper plate, nuke 60-90 seconds depending on your micro
cover in butter and SF syrup or mix fruit, sour cream, whip cream no sugar

YUMMY.

I made pizza yesterday.

crust:
8 oz cream cheese
2 eggs
1/2 cup parm cheese
minced garlic
onion powder

Mix well and pour into sprayed (or buttered) 9x9 baking dish. (I used a 10" round cake pan.) Bake on 350 for about 30 minutes or until golden brown. Let it set for a minute or two, then add your toppings. Put back in oven under the broiler until cheese melts.

Mariah, I kept thinking, this is gonna be nasty, this is gonna be yucky. NOT SO!! I topped mine with cheese and pepperoni. I ate 1/4th of the pizza with a big salad. Was great.

savoury vs sweet

Lol, I have been kind of amused and interested reading this thread and noticing that peoples favourite P3 meals revolve around savoury not sweet.

I know that if it was me dreaming up my favourite P3 meal - it would be something sweet; ie, some low carb chocolate delight with whipped cream!

To me, that is a dessert! But when I think of a meal it should have some protein in it. I love dessert , probably more than the next person I have a lot of favorites in the dessert category.

So last night I did this...

2 extra large eggs
1/2 scoop protein powder
1/2t vanilla
15 drops stevia

Whisk together and pour into a pan with melted butter (about 1/2T). Cook on high for about 3 minutes and "lift" the edges and let any batter that is still liquid, seep around until the mixture is "set". Reduce heat to low. Top with 2oz marscapone cheese and let that melt a bit. Top with berries or stewed apples/natural apple sauce. Fold top over to make a German pancake of sorts. Pour a little HWC over the top or top with more marscapone or whipped cream.

Decadent!!!!

My favorite and a very simple P3 dessert was a pint of HWC, with 3-4 tablespoons of unsweetened cocoa powder whipped to make a chocolate whipped cream or mousse. Simple and chocolately and yummy.

When I was low-carbing to the max I would whip HWC with stevia and vanilla essence, freeze it,
then hack it off in chunks,
melt coconut oil with cocoa powder and stevia,
and pour the coconut oil chocolate mix over the frozen icecream chunks.
The frozen cream caused the coconut oil mix to set hard like a yummy chocolate
topping=
vanilla icecream with chocolate topping!

In my blender, I whirred up some frozen strawberries, HWC, cocoa powder, sweetener and some cream cheese. Froze it. Yum! Almost like a fudgesicle with strawberries blended in.

What a timely thread! I'll be starting my first P3 this Sunday. I'm nervous, but I think I'll get over it in time. Once I get some "favorite P3 recipes," I'll be sure and contribute them! Can't wait to try some of these things. It won't be long now!

Not really a meal but a yummy anyway...

Spiced Roasted Nuts

2 pounds of nuts (almonds, pecans, walnuts)
3 egg whites
1 t water
3 T cinnamon
1 t cloves
1 t ginger
1 t allspice
1 1/2 c sugar free sweetener (Splenda, erythritol, xylitol--I used 3/4c Splenda and 3/4c erythritol)

Pre-heat oven to 300. Put nuts in a large bowl. Whisk egg whites and water until foamy (does not need to form peaks--just until it gets a little foamy). Pour whites over nuts and stir to combine. Add sweetener and stir to coat. Add spices and stir. Taste test and adjust spices as desired. Pour onto a foil-lined jellyroll pan (cookie sheet with sides), distributing evenly. Sprinkle with sea salt. Bake at 300 for 1 hour, turning nuts occasionally. When nuts start to get sticky and dark brown, remove from oven and cool completely before serving (nuts will crisp up and the coating will harden out of the oven).
