question on buying, storing and cooking fish
I'll be starting my VLCD on Monday 2/14. I'm reading and preparing and really excited!
I don't plan to have much beef and will stick with mostly chicken and fish and shrimp. (not repeating the same protein source in a day) My questions are about the fish... (and I apologize in advance because they're super basic) Do you buy fresh or frozen fish? If you buy fresh fish, I figure you have more than a 3.5 ounces. Do you immediately freeze the portion you don't eat? Can it stay in the fridge a day or two uncooked? I assume you only freeze fish when it's raw and not a cooked meal, right? What's the deal with cooking and reheating fish? Is it safe? Like can you cook 2 meals, eat one and put the other portion in the fridge and reheat it the next day? I appreciate the help. I know this is really basic but I hardly ever cook fish. (obviously ) |

I buy the frozen fish that I can find on buy one get one free deals. They are perfectly portioned into 4 oz filets, that when thawed out I figure is so close to the 3.5 oz I don't sweat an extra 0.2 oz or so!! I cook it all at once, of course once thawed and then have my portions that are heat and eat for 4 servings. I store in tupperware in the fridge and eat 1 portion a day. I do this on all my rounds (I am on round #6 right now) and have not gotten sick yet. Enjoy!!!

Best way to keep most seafood 1-3 days is to put it in airtight container and then put the container into a bowl of ice in the refrigerator. Glass/pyrex is better than plastic. I use a small and a medium bowl from my pyrex mixing bowl set, and a saucer for a lid. Crab legs are best kept frozen.
Thaw filets or shrimp by running cool water over it. Only takes a few minutes. Poaching is easy for small servings. I use lemon wedges and sea salt in water. You can microwave filets. I cover it and nuke for 60-90 seconds, then stop microwave and nuke for about a minute more. I put lemon juice on it before I nuke it, and I use stoneware instead of plastic to cover (I put it in a Fiestaware bowl and put a saucer over it).
