Vegetarians - how do you reach 500cal?

Hi guys

I am going for another round but its been a while since I did one.. I didnt track super carefully last time and I dont want to eat melba this time as it made me..a CARB monster..lol

Anyway I roughly put into ****** today what I have planned for my first VLC day..and it only came up to 312cal.. boo... would you add in extra protein? I want to have this all planned and each days food packed in tubs before I get to it!!!

Here it is below...this is after some tinkering lol

Protein
Quorn sausages x2 -96cals
Cottage cheese 1oog - 88cal

Fruit and veg
Medium satsuma x2 - 50cal
Cucumber 1/2 - 22.5cal
Whole tin tomato 1/2 - 56cal

Drinks
Herbal tea 0 cal
Sparkling water 0 cal

Thanks in advance for the help guys

Not vegetarian, but I noticed my highest calorie item will be large apple at 117 cal. I notice your plan does not include breadsticks or melba...is that because there is starch in the sausages?

Having a large apple instead of one of the satsumas will make your tally go to 404. Also adding 2 melbas gets you to 444. The highest calorie vegetables are cabbage and asparagus. If you're doing the juice of one lemon, add 16 cal to your total.
