WooHoo! Hit the mother lode! My local health food store was clearancing out their Z Sweet - I got 100 count boxes of the little packets of Z Sweet for $2.50 each and I got the canister's for $2.99 each! Screaming deal.

It made up for me not being able to get my nuts

OK...I have my first attempt at a *cake* in the oven right now. It is chocolate and made with coconut flour. Fingers crossed it turns out well!! Will update later! Not frosting it until tomorrow AM for a party tomorrow night. I will also be making coconut macaroons to take to a friend's house on Sunday. I am using a Martha Steward recipe and simply substituting the sugar with xylitol.

Mmmm!! Can't wait for results (and pics!!)

So, what's everyone's Christmas meal looking like?

We do Christmas Eve at my house and our tradition is vegetable soup. I can't eat it because of the corn and potatoes but, I think I'm going to make a bunch of appetizers. Probably some dips with Parmesan or almond crackers, crab stuffed mushrooms - any other ideas?

We're having standing rib roast and ham on Christmas day at Mom's house. I won't eat the ham because of the sugar. I think I'm going to bring Pumpkin Risotto:
Creamy Pumpkin "Risotto"

4 cups cauliflower, chopped into "rice"
1/4 cup chicken broth
1 cup diced onion
1 cup thinly sliced mushrooms
1/2 cup canned pumpkin
1/2 cup unsweetened unflavored almond milk (I think I'll use half and half)
1 tsp chopped garlic
1/4 tsp Celtic sea salt
1/8 tsp black pepper, or more to taste
2 wedges The Laughing Cow Creamy Swiss cheese (I'll probably use cream cheese or would another cheese be better? - maybe I'll just up the Parmesan cheese since 4 tsp isn't very much)
4 tsp Parmesan cheese
OPTIONAL: pumpkin seeds

Place cauliflower in a food processor, and blend until small pieces of rice. In a nonstick pan, combine all ingredients except cheese wedges and Parmesan. Stir until well mixed. Bring to a soft boil. Once boiling, reduce heat to medium low and cover. Simmer for about 5 minutes, until veggies are tender. Add cheese wedges and Parmesan, and stir until evenly distributed. Season to taste with additional salt and pepper and top with pumpkin seeds if desired. Enjoy! Makes 4 servings (1 1/4 cup per serving).

Wild,
Christmas Eve we are having filet kabobs, salmon, lobster. I am going to attempt to make some low carb crackers and hummus dip. Plus a bottle of wine.

Christmas morning, I am trying the coconut/almond meal pancakes with sf syrup. Then for dinner we are smoking a prime rib. I will make a side dish of broccoli and cauliflower gratin. The rest of the sides others are making, stuff I cannot have.

For dessert, I am making Linda Sues brownies. They freeze well and I will enjoy those!

I am not over baking as I ate too much for Thanksgiving and it took a week to lose that - lol

I wrap up P2 on Christmas Eve.

Here is a pic of the cake. I just finished frosting it and pouring the ganache on top. Will try and get a pic of it when it is sliced. Sure hope it tastes good! I don't normally bring stuff I have never made before.

It is in this thread....on one of the earlier pages. I think these would work as great cupcakes as well with some cream cheese frosting....altho the choco-peanut butter combo was delish!

Oh, that looks DIVINE! I just stated P3 yesterday (FINALLY!!), so am still testing sensitivities for the next week, but I think this may be one of the 1st things I make!

Netrition sent me my coconut flour so we are going to make coconut shrimp next week.

Shrimp rolled in egg, coconut flour, unsweetened coconut shavings and fried in coconut oil!
If those babies don't taste like coconut, I don't know what will! LOL

that is a very hard product too find! But...I found it at an Indian market. And I fridge it after use so it seems to stay fresh.

Otherwise, I would say order on line.

Great ideas ladies! I will be heading to those places today! I am making an appetizer dinner for some friends this weekend -- jalapeno poppers, wings, fried mozzarella, meatballs and coconut shrimp -- and all I need is the coconut flakes! You all are wonderful!
