Okay, ladies. What does your holiday menu look like? I just finished up my shopping, so I've got the goods. I will be on P2, so I will be having only the first two items on the list.

I am on P3 but I do not plan on too much eating. We did our big dinner the other night.
I am making Heathers dip ( should have made it yesterday! duh!) and I made lc crackers. Sugar free cranberry prime rib some wine dark chocolate 85% - a bite I found out MIL went and bought some type of ham and turkey loaf - egads. I probably wont be eating it...just shuffle it on the plate! I am also bringing Dotties greenbean. So there is that. Tomorrow will be my lightest day I think. Merry Christmas all! |

Yesterday at dinner, I ended up just eating Dotties greenbeans, sf cranberry and Heathers dip. lol...I was not digging the smoked turkey for reason. It tasted commercial.

Well, I am going to bump this up. I have the chocolate coconut cake in the freezer that I am thawing out and wanted to get the frosting recipe. I hope I can frost it before I leave for work tomorrow afternoon. I hope it turns out as well as Peggy's did. Too bad I didn't bump this up sooner. It could have helped with some menus for Easter.

I did the cake using half xylitol and half agave. It was delish. Why not try the cake using just the xylitol? It sweetens like sugar. You could make it like I did with a different type of frosting since this one has peanut butter in it and is not P3 friendly. You could also just frost it with whipped cream. YUM!

MMM that cake looks sooo good! I read that it is P4 friendly so guess I'll have to wait til closer to Christmas as I'll be in P3 at Thanksgiving. Going on a trip to TX with my Mom to visit my Aunt. I'm taking the recipes for the sausage mushroom stuffing and going to find out what other sides she'll have.
I want to make a list for Trader Joe's/Kroger. What are the top 10 things you really need for making a cake or those fudgy peanut chocolate bar things? I see people using different things like xylitol, brown sugar sub, agave nectar. I def am getting the almond flour and maybe coconut flour. Can you guys weigh in on what your top baking staples are and which ones you like better than the other or works best in recipes?

Oh yeah! A keeper. I have all the ingredients. best to make it a day before so the flavors can marry
juice of one lemon 1 brick cream cheese 1 1/4 sour cream 3 stalks sliced green onion (depend on how much you want we like alot) 14 oz bag of med cooked shrimp cut into chunks Mix it all together and fridge overnight for it to (in my husbands words) perculate but it's awesome! I had a little on a pork rind tonight but back in the day we'd have it on ritz. I can honestly say i don't miss the ritz. It makes a pretty big batch, I set it for 12 on fat secret but really it's a dip so who knows really.
